If you've only experienced store-bought apple butter, this homemade version will blow you away. The recipe, from Kaley Laird, the executive pastry chef at Asheville, North Carolina's James Beard Award-nominated restaurant Benne on Eagle, requires just five ingredients (including apples) and requires little effort beyond occasional stirring and getting out your blender. But you'll be rewarded with a not-too-sweet, deeply flavored spread that you can enjoy on your morning biscuit or toast, swirl into a bowl of oatmeal, or use as a topping for Laird's decadent Parsnip-Buttermilk Tart. Like most apple butter recipes, this one contains apples, brown sugar, and cinnamon. But Laird's secret ingredient is ¼ cup of bourbon, which cooks down along with the apples and adds a subtle kick and depth of flavor. If you'd rather skip the alcohol, substitute 2 tablespoons of vanilla extract. Once the apples have cooked down, the mixture is processed until completely smooth in a blender. If you prefer apple butter that has a little more texture, you can leave it on the chunkier side. The recipe makes 4 cups of apple butter, and it can be stored in an airtight container in the refrigerator for up to a month-although we're pretty sure it won't last that long.

6 medium-size (about 3 lb. total) Honeycrisp apples, unpeeled, cored, and diced (about 10 cups)

  • Stir together all ingredients and 1 ½ cups water in a large saucepan or Dutch oven. Bring to a simmer over medium-high, stirring occasionally. Reduce heat to low. Cook, stirring occasionally, until apples break down and become very soft, 1 hour, 45 minutes to 2 hours. Remove from heat; cool 10 minutes.
  • Transfer mixture to a blender. Secure lid on blender, and remove center piece to allow steam to escape. Place a clean towel over opening. Process until smooth, 1 minute. Store in an airtight container in refrigerator up to 1 month.

2kg Cooking apples
750ml Cold water
1kg Granulated sugar
2 Lemons, juiced
2 heaped tsp mixed spice

Steps:

  • Wash the apples, chop them roughly and put them in a large saucepan. Add the water and set over a medium heat. Bring it to the boil and cook, uncovered, until the apples have softened and collapsed. Using a potato masher in the pan, break the apples to a pulp and remove them from the heat.
  • Hang a sieve over a mixing bowl and spoon the pulp into the sieve, pushing it through with the back of a wooden spoon. Discard the pips and pith left behind once you have extracted the apple.
  • Wash and dry the saucepan then return the pulp to it, along with the sugar, lemon juice and mixed spice. Set over a medium-low heat and bring it to the boil, stirring until the sugar has dissolved. Reduce the heat to a minimum and allow the apple to thicken and reduce for about an hour, stirring occasionally. The mixture will be brown and coat the back of a spoon when its done.
  • While the apple butter is cooking, wash six or seven jam jars and lids in hot soapy water. Rinse them well and place them on a baking tray. Heat the oven to 100°C and slide the tray in for 30 minutes, or until the jars are completely dry. Once the apple butter is done, spoon it into the hot, clean jars and seal them tightly with the lids. Store in a cool, dark cupboard; the preserve should keep for a year.

6 pounds of apples, cored, peeled, and cut into 1'' chunks (I recommend a blend of Macintosh and Fuji for the best texture and flavor)
2 cups apple cider
¾ cup granulated sugar, estimated amount needed
¾ cup dark brown sugar, estimated amount needed
2 teaspoons ground cinnamon
1 teaspoon ground cloves
½ teaspoon ground allspice

Steps:

  • Place the apples and cider in a 5 qt Dutch oven or heavy-bottomed pot along with 4 cups of water. Bring to a boil over high heat. Reduce heat to medium and boil, stirring occasionally, until the apples have broken down, about 30 minutes.
  • Remove the pot from heat and use an immersion blender to carefully puree the apples in the pot (this step can be done one day ahead, simply cover and chill the puree overnight before proceeding).
  • Use a measuring cup to measure the amount of puree you have as you transfer the apple puree, cup by cup, into a 6-qt slow cooker. For each cup of puree that you have, add one tablespoon of white sugar and one tablespoon of brown sugar. Stir the sugar and the spices into the puree. Place the lid slightly ajar on the slow cooker and cook on LOW for 8-10 hours, stirring every 2 hours, until the puree is dark and thick enough to where a spoonful mounds up on a plate and liquid seeps out around the mound.
  • During the last 30 minutes of slow-cooking, fill your large canning pot with water and bring it to a boil. Once the desired thickness is reached, place the slow cooker on HIGH to bring the apple butter to a boil while you prepare for water bath canning.
  • Sterilize canning jars by placing them in a boiling water bath (I do this in my canning pot) for ten minutes. Keep them warm in the water until ready to use. Place the lids in a heatproof bowl and ladle a few spoonfuls of boiling water on top. Keep them warm in the bowl until ready to use. For more information on hot water bath canning, see this article.
  • Using a jar lifter, carefully remove the jars from the hot water canning bath and place them upright on a towel. Remove the lids from the bowl of water and pat them dry.
  • Ladle the hot apple butter into the sterilized jars, leaving ¼ inch of headspace at the top. Remove air bubbles with an offset spatula as needed. Use a damp paper towel or cloth to wipe the rims of the jars clean. Place the lid on top, followed by the jar ring, and adjust the ring until it is finger-tight (do not force it).
  • Return the jars to the water bath, being sure that each is covered by at least 1 inch of water. Bring the water to a boil and boil for a full 10 minutes. Use the jar lifter to carefully remove the jars from the water and transfer them to a towel. Do not disturb the jars for 12 hours.
  • After one hour of resting, make sure the jar lids have sealed by pressing down on the center of the lid. If the center can be pressed down, the lid has not sealed and the contents of the jar should be refrigerated immediately for use within 1-2 weeks.
  • Label the sealed jars and store in a dark, cool, dry place for up to 1 year.

  • Strain syrup into medium bowl. Add orange juice and lemon juice. Transfer to ice cream maker and process according to manufacturer's instructions. Transfer sorbet to container, cover, and freeze until firm, at least 6 hours and up to 3 days.

  • 1. Cut McIntosh apples into 1-inch (2.5 cm) pieces. Cut Granny Smith apples into smaller dice.

Steps:

  • Make the cake: Heat the oven to 375 degrees. Coat a loaf pan with nonstick cooking spray.
  • In a large bowl, whisk together the dry cake ingredients, including ground spices. In another bowl, whisk the oil, milk, eggs, rum, orange zest and juice until smooth.
  • Pour the wet ingredients into the dry. To prevent clumps, stir together starting from the center of the bowl, gradually drawing in the dry ingredients. Mix just until smooth. The batter will be thick. Pour into the prepared loaf pan.
  • Bake in the center of the oven for 1 hour, rotating after 30 minutes. When done, the cake will be just firm and dry on top and a tester inserted into the center will come out clean.
  • Meanwhile, make the glaze: In a measuring cup with a pouring spout, whisk together the confectioners' sugar and 2 tablespoons orange juice until smooth. The texture should be runny; add more orange juice if needed.
  • Let the cake cool in the pan on a wire rack for 10 minutes, then turn out. While it is still warm, drizzle the glaze over the top, making messy, Jackson Pollock-style zigzags by moving the cup back and forth over the cake. Let cool completely to set.
