Citrus-Glazed Pork with Farro image

We baked our pork tenderloin with warm spices, like ground cumin and paprika, and oranges so it can absorb additional flavors while it cooks in the oven. This pairs perfectly with the hearty nuttiness of farro and gets rounded out by the sweet-tart pop of pomegranate seeds.

2 tablespoons extra-virgin olive oil
1 red onion, chopped
1 cup farro
Kosher salt and freshly ground pepper
6 ounces Brussels sprouts, trimmed and thinly sliced
Juice of 1 lime
2 oranges, halved (1 1/2 juiced, 1/2 cut into 4 wedges)
2 tablespoons honey
1 1-pound pork tenderloin
2 teaspoons ground cumin
2 teaspoons paprika
Pomegranate seeds, for topping

Steps:

  • Preheat the oven to 375 degrees F. Heat 1 tablespoon olive oil in a large saucepan over medium-high heat. Add the red onion; cook, stirring, until golden, 5 minutes. Add the farro, 2 1/2 cups water, 1/2 teaspoon salt, and pepper to taste and bring to a boil. Reduce the heat to medium; simmer until the farro is just tender, 25 minutes. Stir in the Brussels sprouts and cook until tender, 5 minutes. Season with salt and pepper.
  • Mix the lime and orange juices with the honey. Season the pork with the cumin, paprika, 1/2 teaspoon salt and 1/4 teaspoon pepper. Heat the remaining 1 tablespoon olive oil in a large nonstick ovenproof skillet over medium-high heat. Add the pork and oranges; cook, turning the pork, until browned, 5 minutes. Flip the orange wedges; add the juice mixture.
  • Transfer the skillet to the oven; bake until a thermometer inserted into the pork registers 145 degrees F, about 15 minutes. Let rest 5 minutes, then slice and drizzle with the pan juices. Serve with the oranges and farro; top with pomegranate seeds.

For a family meal I have used pork chops successfully. Also, the pork can be cooked ahead, and the sauce put together at serving time.

1/4 cup flour
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon pepper
1/4 teaspoon allspice
1 lb pork tenderloin, sliced into 12 rounds and slightly flattened
2 tablespoons cooking oil
1/4 cup chicken stock
1/2 cup sour cream
2 tablespoons orange juice
1 tablespoon orange rind, grated
1/4 teaspoon salt
1/2 teaspoon Worcestershire sauce
1 tablespoon orange liqueur

Steps:

  • Combine flour, salt, pepper, paprika and allspice.
  • Coat rounds of tenderloin.
  • Heat oil in a heavy skillet and brown pork well.
  • Add stock, cover and simmer for 30 minutes.
  • Combine remaining ingredients in a small pan.
  • Heat, but do not boil.
  • Serve drained pork over white, or, better yet, wild rice.
  • Pour sauce over all and serve.
  • Garnish with parsley and orange slices.

2 large garlic cloves
1 small orange, zested and juiced
1 tablespoon extra virgin olive oil, plus more for browning
1 teaspoon dried basil
salt and pepper
1 pork tenderloin, about 12 to 16 ounces
10 -15 black kalamata olives, pitted
1/2 cup dry white wine
water

Steps:

  • Preheat oven to 450 degrees.
  • In a blender or food processor, mince together the zest, a few tablespoons of orange juice (save the rest for basting), the olive oil, basil, and a light sprinking of salt and pepper.
  • Make about 8 deep slits in the meat and stuff them with the minced mixture.
  • Lightly film a 12-inch skillet (with an ovenproof handle) with olive oil. Bring to a medium-high heat and sear the pork on all sides (it doesn't have to actually brown).
  • Add the olives, remaining orange juice, and the wine to the pan, and slip it into the preheated oven. Roast for 20 minutes, or until an instant-read thermometer inserted in the center reads 150 degrees, basting the tenderloin several times with the pan juices. If the pan juices start to brown too much, add 1/2 cup water to prevent burning.
  • Carefully remove the pan from the oven, making sure not to grab the hot handle with a bare hand. Let the meat rest for 5 to 10 minutes, then slice it into 1/2-inch-thick rounds, swiping it through the pan juices as it is cut. Serve it moistened with the pan juices, piling the olives on the slices.

Steps:

  • Heat 1 Tbsp. oil in a large ovenproof skillet over medium-high. Sear pork, turning occasionally, until golden brown on all sides, 10-12 minutes. Salt and freshly ground black pepper to taste
1 tablespoon vegetable oil
1/2 cup finely chopped onions
2 cups orange sections with membrane removed
1/4 cup port wine
1/4 cup red wine, like burgundy
1/2 cup fresh or canned chicken broth
2 teaspoons tomato paste
1 tablespoon julienne orange zests
1 tablespoon butter

Steps:

  • Trim each tenderloin to remove excess fat. Cut each tenderloin into 4 equal rounds.
  • With a mallet or meat pounder, pound each pork round to about 1/4 inch thick. Sprinkle with salt and pepper.
  • In a skillet large enough to hold the pieces of pork in one layer, heat the oil over medium high heat. Saute pork for about 2 minutes on each side. Do not overcook. Remove from the pan and keep warm on a platter.
  • In the same skillet, add the onions and cook until wilted. Drain the fat and add the port and wine. Bring to a boil. Stir and scrape to dissolve the brown particles that cling to the bottom of the pan. Add the chicken broth and the tomato paste. Stir to blend; reduce by half.
  • Add the orange sections and zests, bring to a simmer and swirl in the butter. Add any juices that may have accumulated around the pork slices. Blend well. Pour the sauce over the pork and serve hot.
