1 1/2 lbs. lean ground beef ((I use 85/15))
1 small onion (chopped (or half a large onion))
2 cloves garlic (finely minced)
1 teaspoon salt
1/2 teaspoon black pepper
16 ounces sliced white button or baby bella mushrooms
4 ounces cream cheese, (cubed)
2 cups beef broth
1/2 cup milk
3 Tablespoons all-purpose flour
1/2 cup sour cream
Salt & Pepper (to taste)

Steps:

  • Add the ground beef, onion, and minced garlic to a large skillet set over medium-high heat on the stove and season with the salt and pepper. Cook, stirring occasionally, until the meat is almost browned but still slightly pink and the onions have begun to soften, about 5 minutes. Drain any excess grease from the pan.
  • Add the sliced mushrooms to the ground beef and onions and continue cooking for another 5 minutes or so, until the mushrooms are softened and brown and the meat is fully cooked.
  • Add the cream cheese to the cooked meat and mushrooms and let it sit for 1-2 minutes to melt somewhat before stirring it into the meat mixture. While the cream cheese melts, combine the beef broth and milk in a separate bowl and whisk in the flour until no lumps remain.
  • After stirring in the melted cream cheese, pour the beef broth/milk/flour slurry into the pan with the meat and mushrooms and cook for 3-4 minutes, stirring occasionally, until slightly thickened and bubbling.
  • Remove from the heat and stir in the sour cream. Season with additional salt and pepper, to taste.
  • Serve over hot buttered egg noodles, sprinkled with freshly chopped parsley, if desired.

1 package (8 oz) sliced baby portabella mushrooms
1 cup chopped onions
2 cloves garlic, finely chopped

1 1/2 cups Progresso™ beef-flavored broth (from 32-oz carton)
1 tablespoon Worcestershire sauce
3/4 teaspoon salt
1/4 teaspoon pepper

6 cups cooked egg noodles
Chopped Italian (flat-leaf) parsley, if desired

Steps:

  • In 10-inch nonstick skillet, melt butter over medium heat. Cook mushrooms, onions and garlic in butter 5 to 7 minutes, stirring occasionally, until tender. Remove from skillet to small bowl; set aside.
  • Increase heat to medium-high. In same skillet, cook beef 5 to 7 minutes, stirring frequently, until no longer pink; drain. Stir in 1 cup of the beef broth, the Worcestershire sauce, salt and pepper; heat to boiling. Beat flour and remaining 1/2 cup beef broth with whisk until incorporated; stir into beef mixture. Add mushroom mixture; return to boiling, and stir constantly about 1 minute or until mixture thickens. Remove from heat; stir in sour cream.
  • Serve with cooked egg noodles. Garnish with parsley.

Steps:

  • Add olive to a large pan over medium heat. Once the oil begins to shimmer, add the mushrooms and cook until tender, 5 to 6 minutes. Transfer the mushrooms to a plate.
  • In the same pan, add the butter. Add the onion, ground beef, and garlic powder. Stir until the meat is browned, breaking it up as you stir.
  • Drain any excess fat and return the pan to the stove.
  • Add the flour and paprika. Stir until thick, about 1 to 2 minutes.
  • Add the sherry, and stir, scraping up any brown bits from the bottom of the pan.
  • Add the beef broth and bring the mixture to a boil.
  • Add the egg noodles, salt, and pepper. Reduce the heat to simmer. Cover the pan with a lid.
  • Stir often, until the noodles are tender, about 8 to 10 minutes.
  • Return the mushrooms to the pan and stir to combine.
  • Add the sour cream and stir. Top with chopped parsley.

I loved it when Mom used to make this for us! I have no idea if she originally made it for Dad, who had been in the army, or if she just liked it because it tasted good and was a budget stretcher. A traditional favorite, good ol' SOS. Note: the title of this recipe specifies that it is made ground beef, rather than chipped beef; "authentic" SOS is generally made with chipped beef, however many folks also refer to the ground beef version by the same name.

1 lb lean ground beef
1/4 cup chopped onion
1/4 cup flour
1 teaspoon beef bouillon powder
3/4 teaspoon salt, to taste

1/4 teaspoon onion powder (optional) or 1/4 teaspoon granulated onion (optional)

  • Note: when I'm needing to avoid bread or noodles, I'll sometimes make a bunch of sauteed mushrooms and eat this over them, or sometimes with tofu. Delicious!

1 lb lean ground beef
1/2 medium onion (diced)
1 lb mushrooms (sliced)

1 Tbsp Worcestershire sauce

Steps:

  • Preheat a heavy, deep pan over medium-high heat with olive oil. Add ground beef and stir to break down beef into tiny pieces. Add onions and pressed garlic. Saute until the onion is translucent and golden brown.

My mother used to make this when I was growing up. Not sure if this is her exact recipe, but it's darn close. Quick, easy and pretty yummy to boot. I replaced all the full fat ingredients for lower fat options to try to reduce waist line expansion, however this is still not considered "diet" by any means. I serve over whole wheat egg noodles with a side of steamed grean beans or brussle sprouts. Enjoy!

1 lb 98% lean ground beef
4 fresh garlic cloves (pressed or minced)
1 medium onion (chopped)
2 (10 3/4 ounce) cans 98% fat-free cream of mushroom soup
1 (8 ounce) container light sour cream
1 tablespoon Worcestershire sauce
seasoning salt (to taste)
tony chachere's light seasoning (to taste)
pam olive oil flavored cooking spray (couple of sprays)

Steps:

  • Saute chopped onions and garlic in a dutch oven (mine is cast iron) with a little olive oil spray or Pam until the garlic begins to brown. Be careful because the garlic can burn easily.
  • Add ground beef and brown thoroughly.
  • Drain any remaining oil from beef/onion blend after browning.
  • Season with Seasoning Salt and Tony's to your preference and add in 1 Tb of Worscestershire Sauce.
  • Add both cans of cream of mushroom soup, stir and let simmer on low heat partially covered for about 15 minutes. The mixture will be thick, however condensation from the top of the lid can be mixed in or you can make it thinner by adding a little water or even milk if you prefer a thinner consistancy.
  • After simmering, turn up heat slightly and stir in the light sour cream. Let cook for an additional 5-10 minutes stirring periodically.
  • Serve hot over whole wheat egg noodles.
