GROUND BEEF KEBABS

Ground Beef Kebabs image

These Moroccan ground beef kebabs are as easy as 1-2-3. Combine the ingredients together, skewer them, and grill them to perfection. Minced beef kebabs cook fairly quickly, so these take barely 5 to 6 minutes on the grill. Serve them with flavored rice or pita bread and tahini. Don't forget to serve some homemade hummus and aromatic salads for that full Middle-Eastern experience.

Categories     Dinner     Lunch

Time 1h40m

Number Of Ingredients 15

1 lb Ground beef (25% fat or 75% lean)
1 cup Onion (finely chopped )
4 large Garlic cloves (finely minced)
3 inch Fresh Ginger (grated)
¼ tsp Turmeric powder
1 tsp Cumin powder
1 tsp Cinnamon powder
1 tsp Paprika (or cayenne pepper )
2 tbsp Lemon juice
1 tbsp Olive oil
1 cup Parsley, cilantro, mint (chopped I used all three but any two works too)
½ tsp Kosher salt
½ tsp Black pepper
10 bamboo Skewers (soaked in water for 30 minutes )
¼ cup Cooking oil (for grilling )

Steps:

  • Combine - In a large mixing bowl, combine all the ingredients. Pro tip - We combine all the ingredients before processing to prevent overprocessing.
  • Process - Transfer the mixture to the food processor and pulse no more than 8 to 10 times. Pro tip - processing in the food processor makes the mixture slightly stick by distributing the fat. This helps the meat and marinade hold together.
  • Marinate - Transfer the meat back to the bow and leave to marinate for 15 minutes on the counter or up to overnight in the fridge. Pro tip - Alternatively, you can thread the meat on the skewers and leave in the fridge until ready to grill.
  • Thread/shape kababs - shaping these can be tricky so pay attention.- Take about 1/3 cup amount of beef mixture and make a ball then shape it into a long sausage. - Thread the skewer through the sausage. - Now using your fingers press them around the meat as if you are making a fist pressing the meat to the skewer. - Be gentle not to break the sausage but firm enough so it adheres to the skewersPro tip - dipping your hands in water will make the meat less sticky. Gloves do not help much.
  • Hot grill - Heat a grill or cast-iron skillet on medium-high heat. Brush the grill with cooking oil. Pro tip - The grill must be very hot but not smoking hot otherwise the meat will stick to the grill.
  • Grill - Place the skewers on the grill and let cook for 4 to 5 minutes on each side. Brush them with oil to keep them moist. The char marks can be controlled by raising and lowing the heat under the grill.Pro tip - do not try to move the kebabs for the first 3 minutes as they will be stuck to the grill. otherwise, you will break them. After 3 minutes they should release on their own.
  • Serve immediately with rice or pita topped with tahini sauce or yogurt sauce and a side salad.

GROUND BEEF KEBABS RECIPE

Ground Beef Kebabs Recipe image

This recipe for easy ground beef kebabs has become my go-to when having people over. They are the perfect side because they pair well with pulao and biryani, but can also be enjoyed with any gravy dish and chapati.

Provided by Maryam Jillani

Categories     Side Dish

Time 30m

Number Of Ingredients 13

½ medium-sized yellow onion (roughly chopped)
1 tablespoon cilantro (roughly chopped)
2 Thai bird's eye chilies (roughly chopped)
1 pound (~ 450 grams) ground beef (drained)
½ teaspoon garam masala powder
1 teaspoon salt or to taste
1 teaspoon red chili powder (preferably Kashmiri)
½ teaspoon black pepper
½ teaspoon cumin powder
Juice of 1 lime
1 teaspoon crushed garlic
1 teaspoon crushed ginger
2 tablespoon olive oil

Steps:

  • Put the roughly chopped onions, cilantro, and chilies in a food processor and grind until finely chopped.
  • Place the ground beef in a large bowl. Add salt and ground spices (garam masala powder, red chili powder, black pepper, cumin powder) and mix well.
  • Add the onion-cilantro mixture, crushed ginger and garlic, lime juice and olive oil to the ground beef. Mix well.
  • Take fistfuls of the mixture, and begin to shape into little patties.
  • Grill Instructions: If you are using the grill, make sure you heat it up well. The time will depend on whether you are using a charcoal or gas grill. Once hot, place kebabs on the grill and cook each side for 4-6 minutes.
  • Oven Instructions: If you want to prepare them in the oven, pre-heat it to 450°F. Line a sheet pan with aluminum foil and grease it. Place kebabs on it and then insert the sheet pan into the center rack of the oven. Set it to broil on high heat for 10 - 15 minutes depending on how well done you like them to be (I set them for 12 minutes).

KABOB KOOBIDEH (PERSIAN GROUND MEAT KABOBS)

Kabob Koobideh (Persian Ground Meat Kabobs) image

Kabob koobideh is made with ground lamb or beef or a combination of the two. This is one of the most delicious kabob recipes I have ever found. The kabobs are usually grilled over hot coals or any BBQ.

Provided by Nick Perry

Categories     World Cuisine Recipes     Middle Eastern     Persian

Time 1h25m

Yield 8

Number Of Ingredients 12

2 onions, peeled
cheesecloth
1 pound ground lamb
1 pound ground beef
1 green onion, diced
2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon sumac powder
½ teaspoon ground turmeric
2 eggs
8 (10 inch) metal skewers

Steps:

  • Shave onions with a grater into a fine mesh strainer. Gently press pulp into the strainer to remove juices. Place pulp into the center of the cheesecloth and gently press until no further juice drips out.
  • Place lamb and beef in a pot. Add green onion and onion pulp; mix until thoroughly combined. Mix in baking powder, salt, pepper, sumac, and turmeric. Add eggs and mix thoroughly. Cover the pot and place in the refrigerator until flavors have melded, at least 30 minutes.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Mold meat mixture onto the skewers.
  • Cook on the preheated grill, rotating every minute, until nicely browned on all sides, and meat is no longer pink in the center, about 25 minutes.

TURKISH KEBABS

Turkish Kebabs image

This is my version of Turkish kebabs which I made 'off the cuff' after searching unsuccessfully for a recipe online. The original sandwiches are made from meat that is pressed into a loaf and grilled on a rotating spit. The meat is shaved off as it gets crispy and then put into a pita sandwich. My recipe calls for thin slices of meat to be marinated and then broiled to get the same effect without a huge rotating grill. Serve in a warmed pita with goat cheese, tzatziki sauce, lettuce, tomatoes, onions, and pepperoncinis.

Time P1DT50m

Yield 6

Number Of Ingredients 18

2 large onions, chopped
2 garlic cloves, crushed
½ cup olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
1 teaspoon ground black pepper
½ teaspoon ground turmeric
1 pinch curry powder
1 teaspoon salt
1 pound beef flank steak, thinly sliced
8 ounces sour cream
2 tablespoons olive oil
1 tablespoon lemon juice
½ teaspoon salt
½ teaspoon ground black pepper
1 tablespoon chopped fresh dill
1 clove garlic, crushed
6 pita bread rounds

Steps:

  • Place the chopped onions in a large ceramic bowl and crush with the bottom of a glass until juice is rendered and onions look translucent. Stir in 2 crushed garlic cloves, 1/2 cup olive oil, 2 tablespoons lemon juice, oregano, 1 teaspoon black pepper, turmeric, curry powder, and 1 teaspoon salt. Mix well; add the sliced beef and toss to coat. Cover the bowl with plastic wrap, and marinate in the refrigerator overnight.
  • Combine the sour cream, 2 tablespoons olive oil, 1 tablespoon lemon juice, 1/2 teaspoon salt, 1/2 teaspoon black pepper, dill, and 1 crushed clove of garlic. Mix well; cover the bowl with plastic wrap and refrigerate overnight.
  • Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  • Remove the meat from the marinade mixture, brushing off extra onions. Spread the slices on a baking sheet without overlapping, and salt to taste. Broil about 3 minutes per side or until browned and crispy, turning halfway through cooking.
  • Divide the cooked meat between the pita breads, and drizzle with tzatziki sauce to serve.

MOROCCAN GROUND BEEF KEBAB / SKEWERS

Moroccan Ground Beef Kebab / Skewers image

Ground beef kebabs can be bought from street vendors in Morocco. They are served with thick bread instead of utensils. Moroccans use the bread to break off a chunk of meat & then pop it into their mouth. (The times listed does not included 1 hour in the fridge.)

Provided by FDADELKARIM

Categories     One Dish Meal

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 11

2 lbs ground beef
1/2 medium onion, grated
2 garlic cloves, minced
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh cilantro, finely chopped
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2-1 teaspoon cayenne pepper
1/2 teaspoon ras el hanout spice mix, Ras El Hanout - Moroccan Spice Mix

Steps:

  • Combine the beef, onion, parsley, cilantro, & spices in a large bowl, refrigerate for 1 hour.
  • Wash your hands but don't dry them. Gently pack small amounts of the meat mixture around the skewers, forming a 4-inch long sausage shape on each skewer.
  • Grill over charcoal, turning the kebab time to time so not to burn. Cook throughly. Serve with Recipe #260654 or some other dense bread.

SPICED GROUND MEAT SKEWERS

Spiced Ground Meat Skewers image

These oniony, deeply spiced skewers, made with just about any kind of ground meat, are based on Adana kebabs, which are named for the Turkish city from where they're said to have originated. Adana kebabs are traditionally made from hand-minced lamb that's been larded with lamb tail fat, but the flavors of cumin, red chile flakes and sumac are just as delicious with regular ground lamb, or even ground beef or turkey. The trick to getting a pleasing, springy texture is to knead the meat and seasonings until the mixture feels sticky. Keep everything cold, and then wet your hands when you form the meat around the skewers. Cooking the kebabs over charcoal adds a compelling smokiness, but using the highest heat on your gas grill will also work well.

Provided by Melissa Clark

Categories     skewers and kebabs, main course

Time 2h30m

Yield 4 servings

Number Of Ingredients 11

1 pound cold ground meat, such as lamb, beef, turkey or a combination
2/3 cup finely minced or grated white onion
2 garlic cloves, finely grated, pressed or minced
2 tablespoons finely chopped fresh cilantro or parsley, plus more for garnish
1 1/4 teaspoons ground cumin
1 teaspoon ground sumac (see Tip), plus more for serving
1 teaspoon kosher salt (Diamond Crystal)
1 teaspoon Urfa or Aleppo pepper
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cinnamon (optional)
Flaky sea salt, for serving

Steps:

  • In a large mixing bowl, combine the meat, onion, garlic, cilantro, cumin, sumac, salt, Urfa pepper, black pepper, and cinnamon, if using.
  • With your hands, thoroughly knead and massage the meat to incorporate the ingredients, about 4 minutes. Breaking down the meat will create a sticky, cohesive mixture that results in a pleasing springy texture. You can also combine everything in an electric mixer with the paddle attachment, in which case it will take only about 2 minutes. Chill the mixture for at least 2 hours or up to overnight.
  • Wet your hands with cold water, then divide meat into 6 equal portions and mold each around a metal or soaked bamboo skewer (see Tip). Transfer skewers to a large plate or baking sheet. You can grill them right away at this point, or cover and refrigerate them while preparing the grill (up to 4 hours).
  • Heat the grill to high. When the grill is hot, lightly brush the grates with oil, and add the skewers. Cook, rotating them carefully every few minutes, until evenly browned and slightly charred in places, about 5 to 10 minutes. Transfer to a platter and let rest for a few minutes. Garnish with more herbs, sumac and flaky sea salt, and serve.

KOFTA - GROUND BEEF KABOBS

Kofta - Ground Beef Kabobs image

I am posting this for the ZWT 2006. The recipe calls for extra finely ground beef. Ask your butcher or the meat department to run the beef through the grinder one or two extra times. It makes a difference in the recipe - the meat will be smooth and soft. It is best to cook these on flat skewers, not round. They can be baked in the oven or on the grill. This is thanks to the About Web site.

GROUND MEAT KEBAB

Ground Meat Kebab image

In Morocco, men are masters of the fire, in charge of the brochettes, the small kebabs threaded on little wood or metal skewers, which are traditional street food. The ground meat kebabs are deliciously aromatic-full of fresh herbs and spices. The meat is usually pressed around skewers and cooked over dying embers, but it is easier simply to pat the meat into sausage or burger shapes and cook them under the broiler or on a griddle. There should be a good amount of fat (it melts away under the fierce heat), enough to keep the meat moist and soft. Otherwise, work 3 tablespoons extra virgin olive oil into the paste. Bite-size keftas can be served as appetizers at a party, but en famille burger-size ones, accompanied by a salad, represent a main dish.

Yield serves 4 to 6

Number Of Ingredients 10

2 pounds fatty ground lamb or beef
1 small onion, finely chopped or grated
Large handful of chopped flat-leaf parsley
Large handful of chopped coriander
Handful of chopped mint
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Good pinch of ground chili pepper
Salt

Steps:

  • Put all the ingredients together in a bowl. Mix well and work with your hands into a soft paste. Wash your hands and rub them with oil. Take lumps of paste the size of a tangerine and roll them into sausage shapes about 3/4 inch thick, then press them around flat wooden skewers. Alternatively, shape the meat into burgers.
  • Place the keftas on a heat-proof serving dish or on a piece of foil on a baking tray and cook under the preheated broiler for about 10 minutes, turning them over once, until browned on the outside but still pink inside.
  • Serve hot with good bread and a salad of cucumber, tomato, and red onion, dressed with lemon juice and olive oil.

GROUND MEAT KEBAB

Ground Meat Kebab image

The ground meat for this kebab-I usually buy shoulder of lamb-should have a good amount of fat so that it remains moist and juicy. Most of it will melt away in the heat of the grill. You will need skewers with a thick, wide blade to hold the meat and prevent it from rolling around. Alternatively, it is easier and equally good to shape the meat into burgers. Serve them with Arab flat breads or the very thin, Lebanese markouk (see page 245), and accompany them with a salad and a choice of mezze.

Yield serves 4

Number Of Ingredients 4

2 medium onions
1/2 to 2/3 cup chopped flat-leaf parsley
1 1/2 pounds lamb, taken from the shoulder with some fat
Salt and black pepper

Steps:

  • Grate or finely chop the onion in the food processor, drain, and turn it into a bowl. Add the chopped parsley to the onion. Cut the meat into chunks, then blend it in the food processor to a soft paste, adding salt and pepper. Mix the meat paste with the parsley and onion, and knead with your hand until well blended.
  • Divide the meat into 8 balls and wrap each one around a skewer, pressing it firmly so that it holds together in a long, flat, sausage shape. Alternatively, flatten the balls into burgers. Place the skewers, or burgers, on the oiled grill of a barbecue, over the embers of a charcoal fire or on a rack under the broiler, and cook for 5 to 8 minutes, turning them over once, until browned outside but still pink inside.
  • Using the recipe above, roll the meat into little balls the size of a large walnut. Sauté in batches in a little oil in a large frying pan, turning them until they are browned all over but still a little pink inside. You can do this in advance, if you wish, and heat them through, covered with foil, in the oven when you are ready to serve.
  • Open out a pita, toast it under the broiler, and break it into small pieces at the bottom of a serving dish. Just before serving, pour 4 cups plain whole-milk yogurt, which should be at room temperature, over the toast and drop the meatballs on top. Fry 3 tablespoons pine nuts very briefly in 1/4 stick (2 tablespoons) butter and sprinkle them over the dish with their butter.
