2 eggs (organic)
1/4 cup grated cheese (I used Romano)
1 (10 ounce) package frozen peas
1 cup dry breadcrumbs
4 green onions (chopped)
2 tablespoons tamari soy sauce
2 teaspoons Dijon mustard
1/4 teaspoon sea salt
2 garlic cloves (pressed)
16 ounces seitan (ground)

Steps:

  • Beat the eggs.
  • Grind the Seitan up in a food processor until if resembles hamburger.
  • Mix the cheese, bread crumbs, green onion, tamari, mustard, sea salt and cloves together.
  • Add to the eggs and then add the egg mixture to the ground Seitan. Add the peas.
  • Mix well and saute the whole mixture in a non-stick saute pan until the Seitan is lightly browned. You just want to make sure the eggs are cooked.
  • If you want, you can use ground chicken in this.
  • Use on top of your favourite grain.

I just love seitan and there's only two other recipes for it on this site!! I thought I better add one of my recipes for others like me who love seitan and can't find any recipes for it. I use a lot of garlic, but it's not overwhelming at all. It had a very Asian smell and flavor to it which was not my initial intention, but it works great with noodles, stir fry's, over rice or with a side of mashed potatoes and green beans. Enjoy!

¼ cup olive oil
½ cup chopped onion
5 cloves garlic, finely minced
¼ cup chopped green bell pepper
2 (8 ounce) packages chicken style seitan
½ teaspoon ground black pepper
salt to taste
1 tablespoon cornstarch
2 tablespoons cold water

Steps:

  • Heat olive oil in a skillet over medium-low heat. Add onions and garlic, and cook, stirring until lightly browned. Increase the heat to medium, and add the green pepper and seitan to the pan, stirring to coat the seitan evenly. Season with salt and pepper. Reduce heat to low, cover, and simmer for 35 minutes in order for the seitan to absorb the flavors. Dissolve cornstarch in cold water, and stir into the skillet. Cook, stirring until thickened, and serve immediately.

  • Stir-fry to coat the puffs with hot liquid to soften. Add the light soy sauce, white pepper, and sesame oil. Stir to mix everything well for a minute until the puffs are half-deflated.
  • Now stir in the pea tips and cook until the seitan puffs are completely wilted. While the pea tips cook down, salt to taste. There’s no need to cover the wok at any point. There should still be some standing sauce.
  • Once all the pea tips are wilted, serve. The entire cooking time should be no more than 3-5 minutes if you properly preheat your wok.
