GROWN-UP SACK LUNCHES: STRAWBERRY CHOCOLATE BRUSCHETTA



Grown-Up Sack Lunches: Strawberry Chocolate Bruschetta image

2 cups diced strawberries
1/2 cup vanilla flavored vodka
1/4 cup sugar
2 tablespoons finely chopped mint leaves
1 loaf baguette, sliced in 1/3-inch slices
1/4 cup chocolate spread (recommend: Nutella)

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the strawberries, vanilla flavored vodka, sugar, and mint in a medium bowl and let macerate for at least 30 minutes. Arrange the baguette slices on a baking sheet and lightly toast in the oven for 5 minutes. You want your bread still slightly chewy.
  • Spread some chocolate spread on each piece of toast and top with 2 tablespoons of the strawberry mixture. Arrange on a serving platter and serve.

2 to 3 tablespoons unsalted butter
10 strawberries, sliced
3 to 5 teaspoons sugar

Steps:

  • Heat a grill pan over medium-high heat. Grill the bread until golden brown, about 2 minutes per side. Spread the butter over the toasts. Arrange the sliced strawberries over the toasts. Sprinkle the strawberries with the sugar. Broil until the sugar begins to caramelize, about 2 minutes.
