1 pound pork tenderloin
1 tablespoon dijon mustard
2 tablespoons olive oil (divided)
1 teaspoon soy sauce
2 teaspoons fresh rosemary (finely chopped)
2 teaspoons fresh parsley (finely chopped)
1 teaspoon fresh thyme leaves
½ teaspoon kosher salt
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 400° F. Line a baking sheet with foil.
  • Combine Dijon mustard, 1 tablespoon olive oil, and soy sauce in a small bowl. Brush over the pork.
  • Combine fresh herbs, salt, and pepper in a small bowl. Sprinkle over the pork (or roll the pork in the mixture).
  • Heat 1 tablespoon olive oil in a skillet over medium heat and brown pork, about 2 minutes per side.
  • Place pork on a baking sheet and roast 18-20 minutes or until a thermometer reads an internal temperature of 145° F.
  • Allow to rest for at least 5 minutes before slicing.

5 garlic cloves, minced
1 teaspoon salt
1 teaspoon each dried basil, thyme and rosemary, crushed
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1 boneless pork loin roast (3 to 4 pounds)
8 medium carrots, halved lengthwise
2 medium onions, quartered

Steps:

  • In a small bowl, mix oil, garlic and seasonings; rub over roast. Arrange carrots and onions on the bottom of a 13x9-in. baking pan. Place roast over vegetables, fat side up. Refrigerate, covered, 1 hour., Preheat oven to 475°. Roast the pork for 20 minutes., Reduce oven setting to 425°. Roast until a thermometer reads 145° and vegetables are tender, 30-40 minutes longer. 2 tablespoons butter, melted (or olive oil)
1 tablespoon honey
1/4 cup fresh dill, chopped
3 green onions, finely chopped
1 tablespoon grated lemon peel (from about 2 lemons)
1 boneless pork loin roast (about 4 lbs., strings removed if tied)

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl, whisk together mustard, butter and honey. In another bowl, combine dill, green onions and lemon peel.
  • Sprinkle pork all over with 2 teaspoons kosher salt and 1/2 teaspoons pepper. Brush generously with mustard mixture. Transfer half of herb mixture pressing to adhere.
  • Place pork on rack in small roasting pan. Roast 1 hour to 1hr. 10 minutes or until cooked through (when meat thermometer reaches 145 degrees F). Remove from oven. Let stand 15 minutes. To serve, sprinkle roast with reserved herb mixture before slicing.

1 teaspoon ground cinnamon
2 teaspoons ground cumin
1/4 teaspoon cayenne, or more, to taste
Kosher salt
1 1/2 pounds pork loin roast
4 tablespoons vegetable oil
1 sweet onion, roughly chopped
2 cloves garlic, smashed
2 tablespoons freshly grated ginger
1 bunch fresh cilantro leaves
1 lime, zested
2 tablespoons olive oil
1/4 cup plain bread crumbs
Kosher salt
1 1/2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small bowl, mix together the cinnamon, cumin, cayenne, and salt, to taste. Rub the mixture all over the outside of the pork. In a large saute pan, heat the oil over medium-high heat and brown the pork roast on all sides, just until golden. Remove the pork to a sheet tray, fat side up.
  • Meanwhile, make the herb crust: In a food processor, combine the onions, garlic, ginger, cilantro, and lime zest. In the same saute pan in which the pork was browned, add the olive oil and the onion mixture and cook until softened. Stir in the bread crumbs and cook another 1 to 2 minutes. Season with salt, to taste. Spread the mustard on top of the fatty layer of pork and then press the herb crust into it. Bake until the internal temperature reaches 160 degrees F on an instant-read thermometer, about 30 minutes. Remove to a cutting board and allow to rest, covered for 5 to 10 minutes. Slice the roast, arrange on a serving platter and serve.

800g loin of pork , skin and fat cut off
50g fresh breadcrumbs
50g jumbo oats
leaves from 3 sprigs thyme
1 tbsp olive oil or spray

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Brush the jam all over the pork loin. Mix together breadcrumbs, oats and thyme leaves, then press over the pork. 2 pork tenderloins (about 3/4 lb each)
1 cup soft bread crumbs (about 1 1/2 slices bread)
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh or 1/2 teaspoon dried thyme leaves
1 tablespoon olive or vegetable oil
1/2 teaspoon salt
1/2 teaspoon fennel seed
1/4 teaspoon coarsely ground pepper
2 cloves garlic, finely chopped

Steps:

  • Heat oven to 450°F. Spray shallow roasting pan and rack with cooking spray. Place pork tenderloins on rack in pan.
  • In small bowl, mix remaining ingredients. Spoon herb mixture evenly over pork. Insert ovenproof meat thermometer so tip is in the thickest part of pork. Cover pork loosely with foil.
  • Bake 20 minutes; remove foil. Bake uncovered 10 to 15 minutes longer or until thermometer reads 155°F. Cover pork loosely with foil and let stand 10 to 15 minutes or until thermometer reads 160°F. (Temperature will continue to rise about 5°F, and pork will be easier to carve.)

3 tablespoons olive oil
2 teaspoons minced garlic
2 teaspoons chopped fresh thyme

2 teaspoons finely grated lemon zest
1 ½ teaspoons chopped fresh rosemary
1 teaspoon sea salt

Steps:

  • Bring roast to room temperature by removing from the refrigerator 30 minutes before cooking.
