GUILT-FREE INSTANT POT CHOCOLATE PUDDING CAKE
Rich chocolate cake that you don't have to feel guilty about indulging in can be made easily in your Instant Pot! This recipe is gluten-free, sugar-free, and dairy-free, but is FULL of chocolate flavor!

- 1. Place a trivet inside the Instant Pot and pour in 2 cups of water. Measure the chocolate into a heatproof ramekin, and set on the trivet. Turn the IP on to sauté, and melt the chocolate over the simmering water. Remove ramekin from IP once the chocolate is melted.
- 2. Combine the applesauce, eggs, and vanilla in a small mixing bowl. Whisk until well blended. Add the dry ingredients (salt through cocoa powder) and slowly mix in until no dry streaks remain. Stir in melted chocolate.
- 3. Liberally grease a 6" cake pan with butter or coconut oil. Dust the bottom and sides of the cake pan with cocoa powder. Pour in the cake batter, and set the pan on the trivet above the hot water in the IP.
- 4. Cook on high pressure for 4 minutes. Quick release pressure when timer goes off. Remove the cake pan from IP and let cool 10 minutes before transferring to a serving plate. Dust with powdered sugar (optional).

- In a large bowl, combine the cake mix, water, yogurt, cocoa, egg whites and egg; beat on low for 30 seconds. Beat on medium for 2 minutes. , Pour into a 10-in. fluted tube pan coated with cooking spray. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar.

THE REAL NO-GUILT CHOCOLATE PUDDING
In my journey to applying the 90/10 (okay 80/20) rule to my food ethic - that is, 90 percent good for you and 10 percent ... not so much - I'm always on a quest to find dessert holy grails. - Preheat oven to 350 degrees F ( 175 degrees C).
- In ungreased 9 inch square pan, stir together flour, white sugar, cocoa, the baking powder, and salt. Mix in milk, oil, and vanilla with a fork until smooth.
- Spread batter evenly in pan (batter will be thick). Sprinkle with brown sugar and 1/4 cup cocoa. Pour boiling water over batter.
- Bake at 350 degrees F (175 degrees C) for 40 minutes. Let stand 15 minutes, then spoon into dessert dishes or cut into squares. Invert each square onto dessert plate and spoon sauce over each serving. Top with ice cream or whipped topping, if desired.

GUILT FREE CHOCOLATE PUDDING CAKE
This is a fudgey cake that will cure any chocolate craving without days of guilt or three hours at the gym. It's so very easy too. I've served this to guests and they begged for the recipe. Cooking time includes cooling time. Don't let the long list of ingredients scare you off. This is a very easy recipe that doesn't even require a mixer.

- Preheat oven to 350. Spray a 9 inch square pan with nonstick spray.
- Combine the flour, granulated sugar 1/3 cup of cocoa, baking powder, instant coffee powder, baking soda and salt in a large bowl.
- Make a well in the center and pour in milk, melted butter and vanilla.
- Stir just until blended. Pour the batter evenly into prepared pan.
- Mix brown sugar and the 1/4 cup cocoa in a small bowl. Sprinkle evenly over the batter.
- Gently pour the boiling water over the top in a zig zag pattern. DO NOT STIR.
- Bake until the top of the pudding is set. About 35 minutes.
- Cool on a rack at least 30 minutes before serving.
- Cut into squares and serve warm or at room temperature.

- Line a baking sheet with parchment paper and grease with nonstick cooking spray.
- Spread the chocolate hazelnut spread into an even rectangle, leaving ¼ inch (6 mm) between each cracker.
- Place 20 graham cracker halves on top of chocolate hazelnut mixture and freeze until solid, about 30 minutes.
- Cut between the graham cracker pieces with a knife. Lay a cutting board on top of the graham crackers and invert the baking sheet.
- Carefully peel the parchment paper from the chocolate hazelnut layer. Return to freezer until ready to build cake.
- In a large bowl, combine the instant pudding and milk, and whisk until fully incorporated. Allow to set for at least five minutes.
- In a medium bowl, combine the cream cheese, sugar, and vanilla, and mix until fully incorporated.
- Fold in the melted chocolate until fully incorporated.
- Add the cream cheese mixture to the pudding mixture and stir until fully combined.
- Add three quarters of the pudding mixture to the bottom of a 10-inch (25-cm) greased springform pan.
- Make a ring along the edge of the pan with the chocolate hazelnut graham crackers pressing them until they are even with the top of the pan.
- Leave a ¼ to ½-inch (2 to 6-cm) gap and make another ring using plain graham cracker pieces. Repeat, alternating between chocolate hazelnut and plain graham crackers, until you reach the center.
- Fill the pan with the remaining pudding mixture and spread evenly across the top.
- Freeze the cake for at least 4 hours.
- Release the chilled cake from the pan and frost with chocolate frosting.
- Garnish with raspberries, crushed graham crackers, and chocolate shavings.
- Enjoy!
