BASIC REDUCTION SAUCE
Here is the basic recipe for a reduction sauce, the easiest, most malleable sauce a cook can make. It's followed by a variation for those who want a thicker, more traditional gravy, and a few ideas for jazzing it up. The basic recipe can be doubled or tripled, something to consider for larger feasts.

- Remove the roast and pour off all but 1 or 2 tablespoons of the cooking fat (if there are nonfatty juices in the skillet or roasting pan, leave them there). Place the roasting pan over high heat. (Use two burners if the pan is large.) Add the shallot and cook, stirring, until it softens, about 1 minute.
- Add the liquid and cook, stirring and scraping to loosen the brown bits at the bottom of the pan. Allow the liquid to boil for about 5 minutes, or until about a third of it evaporates. (This is a good time to carve the meat; the boiling liquid needs only occasional stirring.)
- Turn the heat to medium-low and add the butter or oil, a little at a time, stirring well after each addition. Taste and season if necessary with salt and pepper, then serve with the meat.

HP GUINNESS SAUCE
A lost classic... From 2011 to 2013 I fell in love with HP Guinness Sauce only to discover it's no longer made. As my reserve is almost gone, I set out to reverse engineer it and this is the result. It's very close to the original by my palette, is excellent on nearly all meats and as a dipping sauce for anything fried!

- Dissolve the cornstarch in the cold water.
- Add all ingredients to a large pot.
- Bring to boil.
- Simmer, stirring often for 2-1/2 hours on medium heat.
- Bottle in sterilized glass bottles or jars while still very hot.
- Refrigerate after opening.

- To Prepare Pub Mustard:Combine mustard, brown sugar, salt and turmeric in blender or food processor and mix well.
- With the machine running, add beer in a slow, steady stream and blend until mixture is smooth and creamy, stopping frequently to scrape down the sides of the work bowl.
- Transfer to jars with tight-fitting lids.
- Store in cool, dark place.
- Combine barbecue sauce ingredients, cover and simmer for 45 to 60 minutes.
- Allow to cool slightly, taste and adjust spices to taste.
- Store refrigerated in tightly covered container.

- In a medium saucepan, whisk together Guinness and brown sugar over medium heat. Once it begins to bubble, reduce heat to low and simmer, stirring occasionally, until reduced by half. It will take about 60 minutes. Remove from heat and allow to cool to room temperature. It will thicken further as it cools.
- Serve with equal parts olive oil. Place remaining in an airtight container (minus the olive oil) and store in refrigerator.
