- Vierte 1/4 taza del aderezo sobre la carne en un tazón de vidrio o plástico; revuelve para cubrir bien la carne. Ponla a marinar 30 min. en la nevera, revolviendo después de 15 min.
- Calienta 1 cucharada del aderezo en una olla pesada tipo "Dutch oven" o en una sartén grande y profunda a fuego medio-alto. Añade la mitad de la carne; cocínala 8 min. o hasta que esté dorada por todos lados, revolviendo de vez en cuando. Saca la carne de la sartén. Repite esto con 1 cucharada del aderezo y la carne restante.
- Cocina la cebolla con el aderezo restante en la misma sartén, revolviendo de 2 a 3 minutos o hasta que estén crujientes pero tiernas. Mezcla bien el caldo, la salsa para asar y la harina con un batidor de varillas. Añade esto a la sartén junto con la carne, el tomate, la yuca, la zanahoria y el palito de canela; revuelve. Deja que esto hierva; tapa la sartén. Cocina a fuego medio-bajo por 2 horas o hasta que la carne esté blanda. Desecha el palito de canela. Sirve el estofado coronado con la crema agria.

This easy guisado de res recipe is simple yet flavorful. It's a delicious and filling meal that pairs well with white rice and warm corn tortillas.

- Put the stew meat in a bowl and add the salt, pepper, cumin, onion powder, garlic powder, and chicken bouillon. Mix together well to make sure all the meat is coated. Set aside.
- Put the sauce ingredients in the blender and blend until smooth.
- Heat up the oil in a skillet over medium heat.
- Once the oil is hot add half of the meat. Let it cook on each side for a few minutes. Then transfer the meat to a plate.
- Add the other half of the meat to the skillet and cook on each side for a few minutes. Add the meat on the plate back to the skillet.
- Pour the sauce over the meat. Add the bay leaves and packet of Sazon with culantro and achiote. Stir. Bring to a boil then reduce heat to low. Cover and cook for 2 hours.
- After the two hours have passed add the potatoes and carrots.
- Continue cooking for 20-25 minutes or until the veggies are tender.
- Remove the skillet from heat and add the cilantro.
- Serve the stew with white rice and warm corn tortillas

In this recipe, chunks of lean beef are simmered with fresh tomatoes, bell pepper, onion, garlic, and Mexican seasonings to make a rich spicy gravy (guisada). Serve with warm tortillas and garnish with guacamole, sour cream, and/or cheddar cheese for awesome guisada tacos. If your gravy is too thin, whisk a 1/2 cup of the gravy with 1 tablespoon of flour and stir it back into the meat mixture; cook until the sauce thickens, about 10 minutes.

CARNE GUISADA CON PAPAS
Adapted from Adán Medrano, a Houston-based chef and writer, this steak-and-potato guisada, or stew, uses technique and time to draw out flavor from just a handful of ingredients. Beef and potatoes are centuries-old pantry essentials in South Texas, and this dish is served in homes and family-run restaurants all over the region. While many restaurants tend to cook the steak in large pieces, cutting the meat into small cubes allows the beef to soak up more flavor. The key is the Texas Mexican spice blend - black peppercorns, cumin and garlic - plus a little fresh Serrano. Serve with tortillas and an optional garnish of cilantro and chile.

- Use a mortar and pestle to mash the garlic, minced chile, peppercorns and cumin seeds into a smooth paste. Add 1/4 cup water and mash until the paste is incorporated into the water. Transfer the mixture to a measuring cup. (Alternately, blend the garlic, minced chile, peppercorns and cumin seeds in a blender with about 1/4 cup water, occasionally scraping down the sides of the blender until very well blended, about 5 minutes.)
- Heat 1 tablespoon oil in a Dutch oven or large pot over medium. Add half the steak and cook, stirring occasionally, until browned on all sides, about 8 minutes. Transfer the browned meat to a plate and repeat with the remaining oil and meat. Return the browned meat to the Dutch oven then add the onion and cook, stirring occasionally, until translucent, about 3 minutes.
- Sprinkle the flour and 1 teaspoon salt over the beef and stir to incorporate, then add the blended garlicky liquid and just enough water to barely cover the meat (about 2 cups). Increase the heat to medium-high and use a wooden spoon to scrape the bottom of the Dutch oven, releasing any browned bits.
- Bring the liquid to a boil, then immediately lower the heat so that it cooks at a low simmer. Cover the pot and cook until the meat is tender, 1 1/2 to 2 hours.
- Remove the lid and stir in the cubed potatoes. Let the guisada cook, stirring occasionally, until the potatoes are tender and the sauce has thickened slightly, about 15 minutes. Season to taste with salt. Divide among bowls and serve with hot tortillas, plus cilantro and sliced chile, if using.

- In a frying pan large enough to put a single layer of meat add EVOO add olive oil and heat until hot. Add meat and brown.

- Cut up the meat. Cut up meat into small cubes, making sure to cut away as much of the fat as possible.
- Cook the meat. Pour a cup of water into the slow-cooker, along with the meat and the garlic cloves. Set it on high and let it cook for two hours.
- Marinate the meat. Put the meat to marinate with 2 cloves of garlic, the bay leaf, and the wine, for at least a couple of hours.
- Drain the meat. Drain the meat and keep the liquid. That is your beef broth.
- Mix the dry ingredients.Make a mixture with the flour and spices,
- Cut the meat.Chop the meat into cubes of bite-size.
- Sauté the meat. Sauté the meat in a saucepan with hot oil.
- Cut the vegetables. Dice the onion, the carrots, and potatoes in cubes (with everything and the skin) and the sliced mushrooms.
- Sauté the vegetables and the meat. Once the meat is cooked, take it out of the pan, and in the same pan, add oil again and then the vegetables. Sauté for 2 minutes. Then, add the marinade and the chopped garlic, stir a little and return the meat.
- Cook with beef broth. Scrape the bottom of the pan with a wooden spoon. Add the beef broth, Worcestershire sauce, salt, pepper, and rosemary, mix well and cover.
- Bake in the oven. Bake in the oven for approximately 3 hours at 150°C, checking constantly until the meat is tender.
- Serve. Serve it up on a big plate

- Cut the sliced flank steak into small pieces about the size of postage stamps.
- Set steak pieces to simmer in vegetable oil over medium-low heat while preparing vegetables.
- Dice the potatoes into small cubes and place them in a microwave safe bowl.
- Microwave the potatoes 2-3 minutes on high until almost done.
- Add the potatoes to the meat.
- Add 1 cup fresh cilantro to the meat.
- In a blender or food processor, add 1/2 large white onion, 3 cloves garlic, and coriander seeds. Add 1/4 to 1/2 cup water and puree.
- Add this mixture to the meat along with 2 cups of tomato puree.
- Add the small can of corn and mixed vegetables to the meat mixture. Add additional water to thin the broth to a soup-like consistency.
- Now prepare the jalapeno salsa to be served on the side.
- Place 5 jalapenos and 3 plum tomatoes on baking sheet.
- Preheat oven to broil and broil, turning, until blackened.
- Remove the blackened skins and using a mortar and pestle, grind the chiles and tomatoes together along with 2 cloves of garlic.
- Serve with rice and beans and enjoy!

Among the most recognizable dishes of my culture, carne guisada will cure what ails you. Beef is slowly braised with aromatic sofrito and tomatoes, producing a rich, delicious dish you're likely to eat too much of. For those who have lived in Puerto Rican enclaves such as New York, Philadelphia, Chicago or Orlando, Fla., this is a daily staple at cafeteria-style lunch counters, as it is on the island. You can also use this recipe to make pollo guisado, equally popular and common, simply by using chicken and adjusting the cooking time accordingly.

- Prepare the adobo: Combine the adobo ingredients in a small bowl, or blend in a large pilón or mortar and pestle.
- Prepare the guisado: Pat meat dry and put in a medium lidded bowl or a resealable bag. Evenly coat with the adobo and let marinate for at least 30 minutes at room temperature, or in the refrigerator overnight.
- Heat vegetable oil in a large lidded, heavy-bottomed pot over high. Working in batches as needed to prevent crowding, add beef, shaking loose any additional adobo beforehand. Cook for 3 to 5 minutes, flipping often to brown evenly. Transfer meat to a clean bowl and set aside.
- Lower heat to medium, add 1 tablespoon olive oil and pour in sofrito, adding olive oil as needed if the pan is too dry. Sauté for 5 to 7 minutes until liquid has evaporated.
- Add sazón and sauté for 1 minute. Add the broth (or water), tomatoes and their juices, and bay leaves, and scrape up any browned bits using a wooden spoon.
- Nestle meat into sauce and bring to a simmer. Reduce heat to low, then cover with a lid and simmer for 1 hour, stirring occasionally.
- Add carrot and celery, and cook, covered, for 1 more hour, adding more water or broth if needed. At this stage, check the tenderness of the meat. It should start to get close to falling apart when pressed with the back of a spoon.
- Add potatoes and cook, covered, for 30 minutes more, until meat and potatoes are cooked through and tender.
- Adjust salt to taste, and serve on a plate or in a shallow bowl over a mound of white rice.
