1 cup soy sauce
3/4 cup rice wine vinegar
1 1/4 cups water
4 tablespoons dark brown sugar
2 medium scallions, minced
4 teaspoons minced garlic cloves
2 tablespoons toasted sesame oil
2 teaspoons hot red pepper flakes

Steps:

  • 1. In a saucepan, heat 2 Tablespoons of toasted sesame oil to medium-high heat. Add scallion, garlic and red pepper flakes. Lower heat to medium and continue stirring about 3 - 5 minutes or until garlic starts browning.
  • 2. Increase heat to high and stir in Soy Sauce, Vinegar and water and bring to a boil.
  • 3. Add dark brown sugar and stir until sugar is dissolved.
  • 4. Lower heat to low and cook for 10 minutes, stirring often.
  • 5. Makes about 3 cups. (Sauce can be refrigerated in air-tight container for several days).

Number Of Ingredients 17

1/2 cup soy sauce
1 teaspoon rice vinegar
1/2 teaspoon toasted sesame oil
2 teaspoons sugar
1 whole scallion, trimmed and sliced
1 hot green chili, thinly sliced
2 tablespoons water
1/2 pound ground turkey, chicken, or pork (if using poultry, add 1 teaspoon peanut oil to the mixture)
1 cup finely chopped bok choy
1/2 teaspoon minced peeled fresh ginger
1 small garlic clove, minced
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1/2 teaspoon coarse salt
1 large egg white
36 dumpling wrappers
Peanut oil, for frying

Steps:

  • In a small bowl, combine all ingredients for the dipping sauce. Set aside.
  • In a medium bowl, mix together the turkey, bok choy, ginger, garlic, soy sauce, sesame oil, and salt. Stir in the egg white.
  • Working with 6 at a time, lay down the dumpling wrappers on a work surface. Spoon 1 teaspoon of filling onto each one. Lightly wet the edge of each wrapper with water. Fold the dough over and pinch around the edges. This is easiest done by picking up each dumpling and pinching around the edges with thumb and forefinger. Place on a baking sheet and cover with plastic wrap to keep the dumplings from drying out. Repeat until all filling is used.
  • To cook the dumplings, heat a large skillet and swirl some oil around to coat the pan. Add a single layer of pot stickers. Cook for 2 to 3 minutes (2 minutes longer if frozen), until they begin to turn golden on the underside. Don't move them. Add 1/4 cup of water to the pan and cover immediately. Cook for 5 minutes, or until the meat is cooked through and the dumplings release from the pan. Serve immediately with the dipping sauce.

This is a delicious recipe I got from my mamasan when I lived in Okinawa. Everyone raves over them. Store extra dipping sauce in the refrigerator up to 1 week and use to dip chicken or other meats or vegetables.

1 teaspoon sesame oil
1 teaspoon red curry paste
2 cups finely shredded cabbage
¼ cup shredded carrot
1 ½ tablespoons minced garlic
¾ pound lean ground pork
1 small egg
¼ cup chopped green onions
3 water chestnuts, chopped
2 teaspoons minced fresh ginger root
1 tablespoon soy sauce
1 tablespoon fish sauce
2 teaspoons sesame oil
½ teaspoon brown sugar
¾ cup seasoned rice vinegar
½ cup low-sodium soy sauce
⅓ cup thinly sliced green onions
1 teaspoon sesame oil
1 clove garlic, minced
½ teaspoon chili paste ( such as Sambal Oelek®)
1 (16 ounce) package round gyoza wrappers
2 tablespoons vegetable oil
½ cup chicken broth

Steps:

  • Heat 1 teaspoon sesame oil in a skillet over medium heat; add curry paste. Cook until aromatic, about 30 seconds. Add cabbage, carrot, and 1 1/2 tablespoons garlic; cook and stir until cabbage is wilted and moisture has evaporated, about 3 minutes. Remove from heat; allow to cool.
  • Mix pork, egg, 1/4 cup green onions, water chestnuts, ginger, soy sauce, fish sauce, 2 teaspoons sesame oil, and brown sugar together in a bowl. Stir in cabbage mixture.
  • Whisk together rice vinegar, low-sodium soy sauce, 1/3 cup green onions, 1 teaspoon sesame oil, 1 clove garlic, and chili paste. Let dipping sauce flavors meld for at least 15 minutes before serving.
  • Separate and place gyoza wrappers onto your work surface. Spoon about 2 teaspoons of the filling onto the center of each wrapper. Use your finger or a pastry brush to lightly moisten edges of wrappers with water. Fold one side of the wrapper over the filling onto the opposite side to form a crescent-shaped gyoza. Press edges together to seal.
  • Heat 1 tablespoon vegetable oil in a large skillet over medium heat. Cook half the gyoza until lightly browned, about 1 minute per side. Pour 1/4 cup broth into skillet; reduce heat and cover. Steam until broth evaporates and gyoza are translucent, about 5 minutes. Repeat with remaining oil, gyoza, and broth.

4 lemons, zest reserved and juiced
4 limes, zest reserved and juiced
4 grapefruits, zest reserved and juiced
2 tablespoons chopped garlic
2 tablespoons chopped shallots
1/2 bunch fresh cilantro, leaves chopped
1/4 cup soy sauce
2 tablespoons sesame oil
2 tablespoons extra-virgin olive oil
1/2 cup brown sugar
Salt and freshly ground black pepper
1 (2 1/2 pound) brisket
4 cups peanut oil
2 yellow onions, medium dice
1/4 pound unsalted butter
1 1/2 pounds Anaheim chiles, roasted and chopped
2 tablespoons chopped garlic
1 bunch fresh cilantro leaves, chopped
Salt and freshly ground black pepper
3 packages gyoza dumpling wrappers
1 egg, beaten
Olive oil

Steps:

  • For the citrus dipping sauce: Place all ingredients in a large bowl and whisk until well combined. Season, to taste, with salt and pepper.
  • For the brisket pot stickers: In a large pot place the brisket piece and peanut oil and cook on low heat for approximately 7 hours until brisket begins to fall apart. Remove cooked brisket from the oil and allow to slightly cool. While brisket is cooling, saute the diced onion with the butter until translucent. Place the onions in a large bowl. Once the brisket has cooled, chop into a small dice and add to the onions. Add the chiles, garlic and cilantro and season the mixture with salt and pepper, to taste.
  • Fill each dumpling wrapper with a small amount of the brisket mixture. Seal the edges with the beaten egg.
  • Bring a medium size pot of water to boil. Place the pot stickers in the boiling water and cook for approximately 2 minutes. Once the pot stickers are cooked, transfer them to a paper towel-lined plate to drain before adding them carefully to the hot saute pan. At the same time, in a medium size saute pan, heat a little olive oil until slightly smoking. Working in batches, sear both sides of the pot stickers until golden brown. Remove from the pan and place on more paper towels to soak up excess oil. Repeat with remaining pot stickers. Serve immediately with a side of the citrus dipping sauce.

72 round wonton skins (approximately 3-inches in diameter)
2 to 3 liters canola oil, as needed for deep frying
1 tablespoon grape seed oil
3/4 pound ground pork
Salt and freshly ground black pepper
3 scallions, white and tender green parts only, sliced thinly on the bias
1 tablespoon peeled minced fresh ginger root
2 tablespoons soy sauce, plus more for serving, warmed
2 tablespoons water
2 tablespoons cornstarch

Steps:

  • Boil wonton skins in a large pot of water until al dente and drain well, Lay the wonton skins out on a waxed paper surface.
  • Heat the oil in a deep fryer to 375 degrees F or as instructed by the manufacturer for similar foods.
  • Heat the grape seed oil in a skillet over medium-high heat until it shimmers, add the pork and season with salt and pepper. Cook until it begins to brown, stirring often. Spoon off any excess fat from the pan and add the scallions, ginger, and soy sauce. Cook until flavors are well integrated. Remove from heat and let rest.
  • Create a slurry in a small bowl by gradually whisking 2 tablespoons water into the cornstarch.
  • Spoon 1 teaspoon of the cooked pork mixture onto each of the wontons. Fold each over to enclose and seal the edges shut with the cornstarch slurry.
  • Add the filled wontons to the basket of a deep fryer in batches to keep them from being overcrowded and possibly sticking together. Fry for 2 to 3 minutes until golden brown and drain on paper towels.
  • Serve warm with soy sauce.

  • In a small bowl, mix the first six ingredients. In a large bowl, combine the first nine pot sticker ingredients. Add chicken; mix lightly but thoroughly. Fold wrapper over filling; seal edges, pleating the front side several times to form a pleated pouch. Stand pot stickers on a work surface to flatten bottoms; curve slightly to form crescent shapes, if desired., In a large nonstick skillet, heat 1 tablespoon canola oil over medium-high heat. Arrange a third of the pot stickers in concentric circles in pan, flat side down; cook 1-2 minutes or until bottoms are golden brown. Carefully add 1/3 cup water (water may splatter); reduce heat to medium-low. Cook, covered, 4-5 minutes or until water is almost absorbed and filling is cooked through., Cook, uncovered, until bottoms are crisp and water is completely evaporated, about 1 minute.
