Steps:
- Take a large pot and fill it just under halfway with water.
- Put it on the stove on high heat and throw your ham in.
- Once your water is at a rolling boil, throw in your beans.
- Make sure your beans are completely covered, adding water if necessary.
- Check back periodically, give your beans a stir and add water when needed.
- Cook for three hours, until beans are tender.

My Mom created this recipe and I really enjoyed it as a child. As an adult, my taste changed just a bit so I modified her recipe to 'kick it up' a bit. It is fabulous even though the ingredients list is quite short! This is a must make with leftover ham and everyone agrees it's absolutely delicious.

- Rinse beans in a large pot; discard shriveled beans and any small stones. Add 8 cups of cold water. Let stand overnight or at least 8 hours. Drain and rinse beans.
- Return beans to pot and add ham, onion, brown sugar, salt, pepper, cayenne and parsley and water to cover. Bring to a boil; reduce heat and simmer 1 1/2 to 2 hours, until beans are tender. Add more water if necessary during cooking time.

- Pick thru the beans, checking for small rocks, blemished beans, etc and remove.
- Prepare the beans by following product directions by either soaking the beans overnight, or using the quick soak directions. Set aside.
- In a large soup pot, heat the olive oil over medium high heat.
- Add the onion, carrots and celery to the pot, season with the black pepper & red pepper flakes & sauté until tender, 5-7 minutes.
- Add the bay leaf, ham bone, diced ham (if using) and beans to the pot & add enough water to cover the beans and simmer covered for 1 1/2 hours, stirring occasionally. Add water as needed and cook until the beans are tender.
- When the beans are tender, taste for seasoning. You may need to add a teaspoon or two of salt.
- You can also remove the hambone and pick the meat off it and add the meat back to the soup. Remove and discard the bay leaf.
- When you turn off the heat add in the lemon juice & parsley, mix well and serve!

- Place the beans into a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse before using.
- Combine the soaked beans, 4 cups of water, celery, onion, bay leaves, cumin, garlic powder, and parsley into a slow cooker.
- Melt the butter with the olive oil in a skillet over medium heat; cook and stir the leeks in the butter mixture until tender and the smaller pieces start to brown, 8 to 10 minutes. Transfer the leeks to the slow cooker. In the same pan, cook and stir the ham until the edges start to brown; stir into the soup. Place the bacon into the hot skillet, and pan-fry until the bacon is crisp, about 10 minutes. Cut the bacon into bite-size pieces and stir into the soup. Pour the chicken stock into the hot skillet, and stir to dissolve any brown flavor bits from the skillet; pour the chicken stock into the soup. Season with sea salt and pepper.
- Set the cooker to Low cook the soup until the beans are very tender, 6 to 8 hours. Roughly mash about half the beans with a potato masher to thicken the soup.

- Sort through dry beans removing any sticks, stones or other foreign items.
- Soak beans in water overnight.
- Drain beans, rinse under cold water and set aside.
- Place the cooked ham bone or ham hocks in a large sauce pan.
- Add the dry beans.
- Add enough water to cover the beans and bones by about three inches.
- Place over medium heat, bring to a low boil and let cook for one hour.
- Remove the bone, set aside and let cool.
- Add chopped onion.
- Add chopped celery.
- Add sugar.
- Add salt.
- Add Black Pepper and stir well.
- Remove any meat from the bone and discard the bone.
- Return the meat to the pot with the beans.
- Continue to cook the beans until they are soft and tender.
- Taste the beans and add additional salt and/or black pepper to taste.
- Mix flour and water, removing any large lumps as you stir.
- Stir the mixture in the beans and let cook for a few minutes longer to thicken.
- Serve warm and enjoy!

- Rinse the beans after sorting through them.
- Place the beans in a large bowl and cover them with water by two inches.
- Allow them to soak overnight.
- After draining the beans, place them in a pot with the water and chicken stock.
- Heat on the stove until they are boiling and then reduce the heat to a simmer.
- Meanwhile, cook the ham in a large skillet set over medium heat until brown and just barely crisp.
- Transfer to a plate lined with paper towels.
- Add half to two-thirds of the ham to the beans and reserve the rest for garnish.
- Wipe out the skillet and return it to medium heat. Add the onions, carrots, and celery to the skillet.
- Season the vegetables with salt and ground black pepper to taste, and cook for about 3 to 4 minutes, until they start to soften.
- Stir in garlic and tomato paste, and cook for a few more minutes.
- Next, add the vegetables to the beans.
- Give it a stir and add the bay leaf.
- Let the beans simmer on low (to medium-low) for about 1 1/2 hours until tender.
- If the liquid level drops too low, add a cup of broth.
- As soon as it's ready to serve, taste the soup and add more salt and pepper if needed.
- Add the tomatoes if using.
- Chop the reserved ham and stir into the soup. Serve garnished with a sprinkle of chopped parsley.
