Ingredients

18 slices, 1/4-inch thick, English or seedless cucumber, about 1/2 a whole cucumber
2 or 3 pinches salt
6 ounces herb cheese (recommended: Boursin)
1/4 pound smoked Norwegian salmon
Black pepper

Steps:

Set cucumber slices on paper towels to drain and dry. Season lightly with salt. Spread each slice of cucumber with a little cheese. Arrange cucumbers on a serving plate. Top each snacker with a small piece of salmon. Crack a little black pepper over the snackers and serve or chill.

Ingredients

1 pound thin asparagus spears
Salt
1 loaf chewy, crusty farmhouse style white bread, cut into 3/4-inch slices
1/2 stick butter, softened
2 tablespoons Dijon or grain mustard
1 1/4 pounds boiled, baked or smoked ham, order thick slices at deli counter
Freshly ground black pepper
1 pound fontina, shredded or sliced

Steps:

Holding 1 spear at each end snap off the tough stem of asparagus. Use this spear as a guide line to trim the bundle with a sharp knife. Simmer asparagus in salted boiling water 3 minutes. Drain and run under cold water. Cut asparagus to fit the size of the toasts.
Toast 8 thick slices of farmhouse style bread under a preheated broiler 6 inches from heat. Combine softened butter and mustard. Spread the toasted bread with mustard butter. Cut sliced ham into smaller pieces to process. Grind the ham in your food processor. Spread the toast with ground ham. Arrange steamed asparagus spears on top of the layer of ham. Top each toast with a few grinds of black pepper and a mound of fontina cheese. Return toasts to hot oven under broiler and cook toasts until cheese melts and lightly browns at edges. Arrange ham and asparagus toast on a platter and serve.

1 (8 ounce) package cream cheese, softened
1 (5/8 ounce) package good seasons Italian salad dressing mix
1 dash Tabasco sauce
1 (16 ounce) package rye cocktail bread
1 seedless European cucumber, unpeeled
dried dill (to garnish) or fresh dill (to garnish)

Steps:

I wash and score the cucumber with a fork along the entire lenth of the cucumber, all the way around, to make a design Slice thinly and set aside.
Combine cream cheese, Good Seasonings Italian mix and Tabasco sauce.
Spread cream cheese mixture, generously on each slice of cocktail bread, place slice of cucumber and sprinkle the top with dill.

Steps:

Slice cucumber into large 1-inch (2 ½ cm) thick slices.
Hollow out center of cucumber, leaving about ½ inch (1 cm) of cucumber inside.
Roll deli meat strips into a small roll.
Stuff cucumber pieces with deli meat, cheese, and carrots until center is filled.
Refrigerate in tightly sealed container.
Enjoy!
