Ham Cake-ettes image

Easter ham turns into a perfect combo of pancakes and croquettes for a nice way to use up some of the leftovers. Serve with a honey mustard sauce or any variety of chutneys. Applesauce is also a nice accompaniment.

1 cup finely chopped cooked ham
1 ½ cups cold mashed potatoes
3 green onions, finely chopped
1 egg
1 tablespoon Dijon mustard
½ teaspoon dried dill weed
½ teaspoon salt
½ teaspoon ground black pepper
1 ½ cups panko bread crumbs, divided
½ cup vegetable oil for frying, or as needed

Steps:

  • Mix ham, mashed potatoes, green onions, egg, Dijon mustard, dill weed, salt, black pepper, and 1/4 cup panko bread crumbs together in a bowl until thoroughly combined. If mixture is too moist to hold together, mix in an additional 1/4 cup of crumbs.
  • Place remaining panko crumbs into a shallow bowl.
  • Scoop about 1/3 cup of the mixture and form into a ball; slightly flatten into a patty. Press both sides of patty into the panko crumbs; tap off any loose crumbs. Repeat with remaining mixture.
  • Heat vegetable oil in a skillet over medium heat until very hot; pan-fry 2 or 3 patties at a time in the hot oil until golden brown on each side, 3 to 4 minutes per side.

3 cups chicken stock
1 cup quick-cooking grits
1/2 cup Southwestern-style egg substitute
5 ounces reduced-fat process cheese (Velveeta), cubed
1/4 cup 2% milk
2 tablespoons butter
1-1/4 cups cubed fully cooked ham
3 green onions, chopped
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 to 1/4 teaspoon crushed red pepper flakes
3/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350°. In a large saucepan, bring stock to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, about 5 minutes or until thickened, stirring occasionally. Remove from heat. In a small bowl, stir a small amount of hot grits into egg substitute; return all to pan, mixing well., Add process cheese, milk and butter; stir until cheese is melted. Stir in ham, green onions and seasonings. Transfer to a greased 11x7-in. baking dish. Sprinkle with cheddar cheese., Bake, uncovered, 35-40 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving.

1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cup buttermilk
3 large eggs, separated
4 tablespoons (about) butter, melted
1/3 cup crumbled Maytag blue cheese
1/3 cup finely chopped ham
Maple syrup

Steps:

  • Mix first 5 ingredients in large bowl to blend. Whisk buttermilk, egg yolks and 1 1/2 tablespoons melted butter in medium bowl to blend. Whisk into dry ingredients. Mix in cheese and ham. Beat egg whites in another bowl to stiff peaks. Fold whites into batter in 2 additions.
  • Heat 1 tablespoon melted butter in large nonstick skillet over medium heat. Working in batches, pour batter into skillet by 1/4 cupfuls. Cook until cakes are puffed and golden, adding more butter skillet for each batch if necessary, about 3 minutes per side. Transfer to plates. Serve with maple syrup.
