Ham and Cheese Puff Tart image

Envelop the makings of a ham and cheese sandwich in puff pastry to create a pretty tart elegant enough for a dinner party, but practical for lunch too.

1 1/2 tablespoons all-purpose flour, plus more for rolling
2 sheets frozen puff pastry, thawed
1 tablespoon unsalted butter
1 cup whole milk
Coarse salt and ground pepper
Ground nutmeg
6 ounces thinly sliced deli ham
1 cup grated Gruyere cheese
1 large egg, lightly beaten

Steps:

  • On a floured work surface, roll each sheet puff pastry to a 10-by-13-inch rectangle. Transfer to 2 parchment-lined baking sheets and refrigerate. In a small saucepan, melt butter over medium. Add flour; cook, stirring, until golden, 1 minute. Whisking constantly, add milk and simmer. Stir until thickened, 5 minutes. Season with salt, pepper, and pinch of nutmeg. Pour sauce into a bowl and let cool 30 minutes.
  • Preheat oven to 400 degrees, with rack in lower third. Arrange ham evenly on 1 pastry sheet, leaving a 3/4-inch border; top with cheese and sauce. Brush pastry border with egg; top with second pastry sheet. Fold bottom edges over top and press to seal. Brush top with egg and cut vents in tart. Bake until browned and puffed, 30 minutes. Serve warm or at room temperature.

EASY HAM, CHEESE, EGG QUICHE



Easy Ham, Cheese, Egg Quiche image

Delicious prepared with either real ham or turkey ham, this simple quiche has become a favorite in our house. I remember eating it periodically at church potlucks as a child. Butter and cheddar add to the flavor, as does using Omega 3 eggs (Saunders or Eggland's Best). I also use Bisquick for the biscuit mix but do recommend you make your own biscuit mix for health reasons. I use unsalted butter and skim milk. You may use a round 10" cake pan instead of a pie plate. We tend to get 4 large servings out of this, but one could get 6-8. Enjoy!

1/2 cup prepared biscuit mix

1 cup cubed fully cooked ham
1 (8 ounce) package refrigerated crescent rolls
4 large eggs eggs
½ cup milk
½ teaspoon salt
¼ teaspoon pepper
1 cup shredded Swiss cheese
1 tablespoon minced chives

Steps:

  • In a skillet, saute onion in butter until tender. Remove from the heat; stir in ham and set aside. Unroll crescent roll dough into one long rectangle. Press onto the bottom and 1 in. up the sides of a greased 13-in. x 9-in. x 2-in. baking dish; seal seams and perforations. Spread with reserved ham mixture. In a bowl, beat eggs, milk, salt and pepper; stir in cheese. Pour over ham. Sprinkle with chives. Bake at 375 degrees F for 23-28 minutes or until a knife inserted in center comes out clean. Refrigerate leftovers.

2 tablespoons sugar
2 teaspoons baking powder
2 -3 teaspoons fresh ground black pepper
1 teaspoon salt
1 1/2 cups butter, cut into small pieces
4 ounces smoked gouda cheese, shredded (1 cup)
2 egg yolks, lightly beaten
1/2-3/4 cup ice water
4 granny smith apples, cored, halved, and cut into 1/4-inch slices
1/4 cup butter, melted
2 tablespoons apple jelly, melted
2 tablespoons lemon juice
3 tablespoons dijon-style mustard
12 slices smoked ham
1 egg
1 tablespoon water

Steps:

  • FOR THE PASTRY: In a food processor combine flour, sugar, baking powder, pepper, and the 1 teaspoon salt; cover and pulse with a few on/off turns to combine. Add the 1 1/2 cups butter; cover and pulse with several on/off turns until the largest pieces of butter are no bigger than a small pea (about eight 1-second pulses). Add cheese; cover and pulse with a few on/off turns to work it inches Add egg yolks; cover and pulse with a few on/off turns to combine.
  • Transfer the mixture to a very large bowl. Gradually add 1/2 cup of the ice water, stirring with a fork until combined. Squeeze a small handful of the dough together (it should easily hold together without crumbling apart). If necessary, add enough of the remaining 1/4 cup ice water, 1 tablespoon at a time, until dough holds together, stirring between additions. Gather mixture into a ball, kneading gently until it holds together. Transfer to a cutting board; cut into six equal portions. Place each dough portion on a sheet of plastic wrap; fold the plastic wrap tightly over the ball. Pat each plastic-wrapped dough ball into a 4-inch disk. Chill for 1 hour to 2 days.
  • FOR THE TARTS: place apple slices in a large bowl. Add the 1/4 cup melted butter, the apple jelly, and lemon juice; toss to combine. Line two extra-large baking sheets with parchment paper; set aside.
  • On a well-floured surface, roll a pastry disk to a 9- to 10-inch circle, about 1/4-inch thick. Spread 1 1/2 teaspoons of the mustard over dough circle. Overlap two slices of the ham in the center of the dough circle; arrange one-sixth of the apple mixture over the ham, making sure to leave a 3-inch border uncovered. Fold dough edges over apple slices, loosely pleating the dough and leaving apple slices uncovered in the center. Using a spatula, carefully transfer the tart to a prepared baking sheet. Repeat with the remaining dough disks, mustard, ham, and apple mixture, placing three tarts on each baking sheet. Cover and chill for 1 hour.
  • Arrange one oven rack in the upper-middle position and another oven rack in the lower-middle position of the oven. Preheat oven to 375°F.
  • In a small bowl beat together egg, the 1 tablespoon water, and the pinch salt. Using a pastry brush, brush the egg mixture over the edges of each tart. Bake in the preheated oven for 35 to 40 minutes or until the dough is golden and the apples are tender. Cool slightly on wire racks. Serve warm.

1 medium onion, chopped
1/2 cup chopped green pepper
1/4 cup butter, cubed
6 large eggs, lightly beaten
1/4 cup 2% milk
1/4 teaspoon pepper
1 cup cubed fully cooked ham
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
10 flour tortillas (8 inches), warmed
1-1/2 cups shredded cheddar cheese

Steps:

  • In a large skillet, saute the mushrooms, onion and green pepper in butter until tender. Meanwhile, in a large bowl, whisk together the eggs, milk and pepper; add the ham. Pour into skillet. Cook and stir over medium heat until eggs are completely set., In a greased 13x9-in. baking dish, spread half of the soup. Place 3 tablespoons egg mixture down the center of each tortilla; sprinkle each with 1 tablespoon cheese. Roll up and place seam side down over soup., Spread remaining soup over tortillas. Sprinkle with remaining cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

1/4 teaspoon paprika

Steps:

  • In a small bowl, beat the cream cheese, onion dip, milk, mustard and orange zest until blended.
