CREAMY HAM & MUSHROOM PASTA BAKE



Creamy ham & mushroom pasta bake image

Use up the leftovers in your fridge with this hearty family supper dish

500g bag farfalle
50g butter, plus a little extra
200g small mushroom, halved
bunch spring onions, finely sliced
50g plain flour
500ml milk
140g thickly cut ham, chopped
140g mature cheddar, grated

Steps:

  • Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
  • Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
  • Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

This is one of our favorite pasta dishes. I use honey ham from the deli and it really gives the dish good flavor. For reheating leftovers, add a little extra cream and simmer over medium low heat on stove.

1 (8 ounce) package linguine pasta
1 tablespoon butter
1 onion, finely chopped
3 cloves garlic, minced
1 cup sliced fresh mushrooms
1 ½ cups whipping cream
¼ pound cooked ham, julienned
1 teaspoon fresh basil leaves, chopped
freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguine pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • Melt butter in a saute pan over medium heat. Cook and stir onion, garlic, and mushrooms in butter until tender. Reduce heat, and slowly stir in cream. Continue cooking until sauce has thickened, add ham and basil, and simmer for 10 more minutes.
  • In a large bowl, toss linguine with cream sauce, and season with freshly ground black pepper.

8 ounces uncooked linguine, broken in half
2 cups cubed fully cooked ham
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
2-1/2 cups shredded Swiss cheese, divided
1 cup sour cream
1 medium onion, chopped
1/2 cup finely chopped green pepper
2 tablespoons butter, melted

Steps:

  • Cook linguine according to package directions; drain. Meanwhile, in a large bowl, combine the ham, soup, 2 cups cheese, sour cream, onion, green pepper and butter. Add the pasta; toss to coat., Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 35 minutes. Uncover; sprinkle with remaining cheese. Bake until cheese is melted, 15-20 minutes longer.

1 (8 ounce) package linguine
1/2 cup onion, chopped
1 garlic clove, minced
1/4 cup butter, melted
1 tablespoon all-purpose flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
1 (10 ounce) package frozen English peas, thawed
1 (4 ounce) package ham, sliced, cut into thin strips
1/2 cup swiss cheese, shredded (2 oz, I usually use another oz!)

Steps:

  • Cook the linguine according to package directions. Drain well, and set aside.
  • Saute onion in butter in a large skillet until tender. Add the garlic and cook about 30 seconds, until the garlic is fragrant. Add flour, and stir until blended. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until mixture is slightly thickened and bubbly. Stir in salt and pepper.
  • Add peas; cook over medium heat 2 to 3 minutes or until tender. Add ham; cook until thoroughly heated.
  • Remove from heat; add cheese, stirring until the cheese melts.
  • Place linguine and sauce in a large serving bowl, and toss gently to combine. Serve immediately.

1 cup broccoli floret
1/2 cup cauliflower floret
3 tablespoons butter or 3 tablespoons margarine
6 ounces spinach linguine (or a mix of the two) or 6 ounces plain linguine (or a mix of the two)
1 cup mushroom, sliced
2 tablespoons flour
1 tablespoon parsley, snipped
1/2 teaspoon dried basil
1 1/4 cups milk
6 ounces deli ham, sliced into bite-sized strips
1/2 cup cheddar cheese, shredded (2 ounces)

Steps:

  • In a Dutch oven or large saucepan, sauté carrots, broccoli, and cauliflower in 1 tbsp butter for 2-3 minutes.
  • Add pasta and boiling salted water, and boil until pasta is tender, but still firm, and vegetables are tender-crisp (10-15 minutes), stirring occasionally.
  • Drain; keep warm.
  • Melt remaining 2 tbsp butter and sauté mushrooms in until tender.
  • Blend in flour and seasonings, stirring continuously until flour is light golden brown.
  • Add milk, and cook, stirring continuously until thick and bubbly.
  • Add ham and cheese; continue to stir until cheese melts.
  • Pour sauce over pasta and vegetables, and toss to coat.

85g wafer-thin smoked ham, shredded
small pack basil
25g grated parmesan

Steps:

  • Heat the oil in a large saucepan. Stir in the leeks, 2 tbsp water and some seasoning, cover, then cook for 5 mins over a medium heat until softened. Add the mushrooms and garlic, then cook for 3 mins more. Meanwhile, cook the spaghetti according to pack instructions, then drain, reserving a little of the cooking liquid.
  • Stir the soft cheese into the leek and mushroom mixture, adding enough of the reserved pasta liquid to give a sauce-like consistency. Add the ham, basil leaves and Parmesan, then toss in the spaghetti.

Steps:
