Mertzie's Grilled Apples, Ham & Swiss Panini image

My obsession with my panini press continues! This is a nice little sandwich, especially for the fall. The dijon balances the sweet apples & cinnamon nicely. My friend just told me about using mayonnaise to coat the outer slices of bread for panini, and it is wonderful!

3 slices smoked ham, thinly sliced
1 slice swiss cheese
1 apple (any kind peeled & cut in large slices)
mayonnaise, dijon, cinnamon
2 slices crusty italian bread
fresh spinach (optional)

Steps:

  • 1. Ingredients listed above are for each sandwich. Heat the panini press. Toss the apple slices with cinnamon & grill these for a few on the panini press.
  • 2. Spread one side of each bread slice with mayonnaise. (This will be the outer side to cook. Makes a lovely crust).
  • 3. Spread inside of bread (one slice) with dijon. Lay slices of ham on top. Then, layer with Swiss, and grilled apples. Add some fresh spinach leaves, if you like. Put other slice of bread on top & grill on panini press until nice & golden. Enjoy!

This is a panini take-off on my other sandwich which is delicious--Recipe #219228. It grills so nicely and has wonderful flavor.

4 slices of rustic country bread
4 slices deli ham
4 slices provolone cheese (thin slices)
1/2 cup chopped apple (with skins on)
4 tablespoons mayonnaise
1/8 cup chopped walnuts
1/4 cup parmesan cheese
3 tablespoons soft butter

Steps:

  • Mix the ingredients for the Parmesan Butter and set aside.
  • Mix the mayonnaise, chopped fine apples, and walnuts.
  • Lay out the bread and put the Provolone cheese on top of each bread slice.
  • Add the apple mixture to each sandwich.
  • Place the ham on top of this.
  • Then top it with the other slice of bread.
  • Spread a thin layer of Parmesan Butter on the top bread and place on grill; then spread the other side and grill.

Number Of Ingredients 7

2 tablespoons unsalted butter, at room temperature
2 Granny Smith apples, peeled, cored and cut into 1/4-inch thick slices
1 tablespoon chopped fresh thyme leaves
8 (1/2-inch) thick slices country-style white bread
1/2 cup whole-grain mustard
2 cups (8 ounces) shredded Gruyere
8 slices (8-ounces) Black Forest ham

Steps:

  • In a 12-inch skillet, melt the butter over medium heat. Add the apple slices and thyme. Cook, stirring occasionally, until the apples are slightly soft, about 4 minutes. Cool for 5 minutes.
  • Preheat a panini press. Spread each bread slice with 1 tablespoon mustard. Arrange 1/4 cup of cheese on each of 4 bread slices and top with 2 slices of ham. Divide the apple mixture evenly on top of the ham. Add the remaining cheese and cover with the remaining 4 bread slices. Grill in the panini press until the cheese has melted and the tops are golden and crispy, about 5 to 6 minutes.
