- Cut each slice of ham in 3, and roll each piece on itself to form a little square.

- Stir the relish, mustard, chives and honey together in a small bowl.
- Cut the apple off its core and thinly slice into half-moons. Toss the apples with the lemon juice to keep them from browning.

- Soak 8 wooden skewers in water for 30 minutes.
- Heat grill to high. Sprinkle 2 or 3 tablespoons cheese down the center of each slice of ham. Fold in sides to almost fully enclose cheese, then press down, and roll up ham lengthwise.
- Carefully thread 1 pickle slice, and 1 ham bundle, making sure ham is secure, then another pickle slice onto each skewer. Lightly brush pickles and ham with oil, and grill, flipping, until cheese melts and grill marks appear, about 2 minutes per side.

QUICK AND EASY PICKLE, HAM & CREAM CHEESE ROLL-UPS
I first tried this recipe when a cousin brought it with her to a family dinner. I now take it with me to potlucks and always get rave reviews. They are very tasty and simple to make. There will be no leftovers when you make them, they have a funny way of disappearing fast. This is one of my favorite recipes to make.

- Spread thin layer of cream cheese on slice of meat.
- Wrap one pickle with cheese covered meat slice.
- Keep spreading the cheese on ham slices and wrapping the pickle spears up in them.
- Place in a plastic container or decorative serving platter and chill for at least 1 hour, then slice rolls into wheels and stick toothpicks in them for serving.
