HAM FRIED RICE
Easy Ham Fried Rice made with leftover rice and thrown together in less than 20 minutes!

Steps:
- Leftover cooked and cooled rice works best, and could be made earlier in the day and refrigerated until cold. Use wet fingers to separate the rice grains.
- Heat 1 Tablespoon of oil in a wok or frying pan. Beat the eggs in a small bowl and add to the pan when the oil is hot.
- Stir gently with a wooden spoon just until cooked. Transfer to a bowl and set aside.
- Add another tablespoon of oil to the pan. Add peas, carrots and ham and saute for several minutes. Remove to the bowl with the eggs.
- Add another tablespoon of oil to the pan over medium high heat. When the oil is hot, add the rice and toss every 30 seconds until it's lightly browned, about 5 minutes.
- Add the chicken stock, soy sauce and green onion and toss to combine. Return eggs and veggies to the pan.
- Add more soy sauce, to taste, if desired. Serve immediately.

Steps:
- In med saucean bring butter and water to a boil over high heat.
- Stir in rice.
- Reduce heat to med low and partially cover the pan, simmering until most of the liquid is absorbed, about 5 minutes.
- Stir the rice with a fork.
- Reduce heat to low and cover and continue cooking until tender, about 15 minutes.
- In a large skillet heat 1 TBS oil over med high, coating the pan.
- In a small bowl beat eggs.
- Add the eggs to the skillet and fry until set, turning once.
- Transfer to plate and cut into 1/2 inch by 2 inch strips, then set aside.
- In the same skillet heat another TBS oil.
- Add ham and cook until lightly browned.
- Transfer ham to eggs and set aside.
- In same skillet, add final TBS oil.
- Add onion and stir fry for 1 minute.
- Stir in peas, cover and cook til tender 2-3 minutes.
- Gently stir in the rice, eggs, ham, soy sauce and sesame oil.
- Cook til heated through.
- Serve immediately.

- Heat the vegetable oil in a skillet over medium-high heat. Cook the green onions in the oil for 1 minute. Add the ham, eggs, and the peas and carrot blend to the oil. Cook and stir until the egg is completely cooked. Add the rice and bean sprouts to the egg mixture and stir continually until the rice is heated completely through. - In a large nonstick skillet, heat 1 tablespoon oil over medium-low heat; swirl to coat pan. In a small bowl, lightly beat together eggs, 2 teaspoons water, and 1/4 teaspoon salt. Pour into pan; cook, pulling in egg from edge of pan, until set, about 2 minutes. Transfer to a plate; when cool enough to handle, cut into strips.
- In pan, heat remaining tablespoon oil over mediumheat. Add scallions and garlic; cook until fragrant, about 1 minute. Add ham and rice; season with salt. Cook, stirring often, until very hot, about 5 minutes.

HAM FRIED RICE IN BROTH

- 1. Mince smoked ham. Slice bamboo shoots. Beat eggs. 2. Break up and loosen the cold cooked rice so that the individual grains separate and the rice is no longer lumpy. (This is most easily done if you wet your hands first.)3. Heat oil. Add eggs, but do not stir. When eggs begin to set, add rice and stir-fry to heat through. 4. Add stock and half the minced ham. - In a large skillet over medium-high heat, heat 1 tablespoon of oil. Pour eggs into skillet. Add eggs set, lift edges, letting uncooked portion flow underneath. Remove eggs to a plate; set aside. - Heat 2 tablespoons of sesame oil in a large, high-walled skillet over medium heat. Add the Sam's Choice® Premium Spiral-Cut Ham and fry until warmed through and browned, about 3-4 minutes. Transfer the ham to a medium bowl and set aside.
- Add another 2 tablespoons of sesame oil to the pan, then add the beaten eggs. Cook, stirring, for 1-2 minutes, until the eggs are soft-scrambled. Add to the bowl with the ham and set aside.
- Add the remaining 2 tablespoons of sesame oil to the pan, then add all but 2 tablespoons of the green onions, the snap peas, and the carrot. And cook for 4-5 minutes, until the vegetables are just tender. Remove the pan from the heat.
- Add the rice, ham, and egg to the pan with the vegetables and stir to combine. Add the soy sauce and stir to evenly distribute.

FRIED RICE WITH HAM
An authentic Chinese fried rice that uses leftover ham. Shrimp or other ingredients can also be added. It can be prepared with or without soy sauce.

Steps:
- The rice should be smoothed out to get rid of any lumps.
- Day old, cold rice works best.
- If using eggs (recommended), lightly beat them with a pinch of salt.
- Heat a little oil in your wok, pour eggs in and tilt the wok back and forth to spread evenly.
- Lift the edges to let the uncooked portion come in contact with the hot pan so it cooks evenly.
- After the eggs set up a little, lightly scramble them so you have medium small pieces.
- Remove eggs to a bowl.
- Wipe out wok.
- If adding raw shrimp, heat a little more oil and stir fry them to just cook.
- Remove to a bowl.
- Wipe out wok again.
- Heat a little more oil.
- Add the onions& stir fry until they start to darken.
- Stir in the rice, breaking up any lumps you missed.
- Drizzle a little dry sherry down the sides of the wok.
- (The surface of the wok should be slick with oil. If too dry looking, drizzle a little more oil down the sides of the wok).
- If you want the rice to look brown, drizzle in a little light soy sauce.
- Stir in all of the other ingredients and season to taste with salt and white pepper.
- Continue to stir and cook until heated through.
