HAM HOCK SOUP



Ham hock soup image

The comfort bowl you need when the temperature starts to dip.

Number Of Ingredients 14

1 tbsp coconut oil, duck fat or tallow or other fat
2 onions, cut into thin wedges
3 litres (12 cups) chicken stock, preferably homemade or salt-reduced, or water
1 large smoked ham hock (1kg-1.2kg)
2 each carrots and celery stalks, thinly sliced
1 turnip (150gm), peeled, cut into 1cm dice
3 garlic cloves, thinly sliced
1 tsp ground turmeric
½ tsp ground cumin
300 gm pumpkin, such as butternut, peeled, cut into 2cm dice
2 zucchini (330gm), cut into 1cm dice
4 silverbeet leaves (about ½ bunch), stalks removed, coarsely torn
Juice of 1 lemon, or to taste
To serve: chilli flakes

Steps:

  • Heat oil or fat in a large saucepan over medium heat. Add onion and stir occasionally until tender (3-5 minutes). Add stock or water, ham hock, carrot, celery, turnip, garlic and spices, and bring to the boil. Reduce heat to low, cover and simmer, adding more water as necessary to keep ham hock just covered, until meat is very tender (about 2 hours). Add pumpkin and cook for 10 minutes, then add zucchini, and simmer uncovered until vegetables are tender and meat is falling from the bone (15-20 minutes).
  • Remove ham hock from soup and, when cool enough to handle, shred or coarsely chop meat (discard skin and fat), add to soup, bring to a simmer, then add silverbeet and simmer uncovered until just wilted (2-4 minutes).
  • Serve soup warm, seasoned to taste with lemon juice, a generous grind of cracked pepper and chilli flakes.

1/4 cup olive oil
1 large onion, finely diced
2 celery stalks, finely diced
2 carrots, finely diced
One 1-pound bag split peas, rinsed and picked through
1 1/2 pound smoked ham hock
2 quarts chicken stock, water, or combination
Salt and freshly ground black pepper

Steps:

  • In a large saucepan, saute onion, celery and carrots over medium-high heat. Add peas and ham hock and cover with stock by a couple inches. Bring to a simmer and cook about 1 hour until soup is thick and peas have almost disintegrated but not quite. Season, to taste, with salt and pepper. Remove ham hock and let cool. Pull meat from ham hock bone and shred. Garnish with ham and pepper.

1 pound dried navy beans
12 cups water, divided
2 ½ pounds smoked ham hocks
1 (32 ounce) carton low-sodium chicken broth (such as Swanson® Natural Goodness®)
1 cup chopped onion
¼ cup chopped fresh Italian parsley
1 teaspoon garlic powder
1 teaspoon dried basil
½ teaspoon ground black pepper
½ teaspoon dried oregano
¼ teaspoon ground nutmeg
3 bay leaves
2 ½ cups thinly sliced carrots
1 cup chopped celery
¾ cup mashed potato flakes

Steps:

  • Rinse and sort the navy beans. Place in a Dutch oven with 8 cups water. Bring to a boil for 2 minutes and remove from heat. Let stand, covered, until beans are softened, about 5 hours.
  • Drain the navy beans and discard the soaking liquid. Rinse beans and return to the Dutch oven. Add ham hocks, chicken broth, 4 cups water, onion, parsley, garlic powder, basil, black pepper, oregano, nutmeg, and bay leaves. Bring soup to a boil; reduce heat and simmer until beans are tender, about 1 1/2 hours.
  • Mix carrots, celery, and potato flakes into the soup until well combined. Cover and simmer until vegetables are tender, about 30 minutes more.
  • Take ham hocks from the pot and place on a cutting board until cool enough to handle. Remove meat from the bones and cut into bite-sized pieces. Return meat to the pot and warm through over medium heat, about 3 minutes.

I recently found this recipe on the Food TV website and have not tried it yet. It is one of Emeril's recipes.

2 tablespoons olive oil
2 cups onions, diced small
1 cup celery, diced small
1 cup carrot, diced small
salt
fresh ground black pepper
2 tablespoons garlic, chopped
2 bay leaves
6 sprigs fresh thyme
2 quarts chicken stock
3 -4 ham hocks
1 lb orange lentils
2 tablespoons parsley, chopped

Steps:

  • In a large saucepan, over medium heat, add the oil. When the oil is hot, add the onions, celery and carrots. Season with salt and pepper. Saute for 4 minutes. Add the garlic, bay leaves and thyme. Saute for 1 minute. Add the ham hocks and stock. Bring the liquid to a boil, reduce heat to medium low and cook, covered for about an hour, or until ham hocks are tender. Add the lentils and continue to cook 25 to 30 minutes or until lentils are tender. Remove from heat and stir in the parsley. Reseason with salt and pepper if needed. Remove ham hocks and remove the meat. Add the ham back into the soup. Serve with a hearty crusty bread.

2 pounds smoked ham hocks
4 medium carrots, sliced
1 cup thinly sliced celery
1 medium onion, chopped
8 cups water
2-1/2 cups diced unpeeled red potatoes
1 cup each frozen corn, peas and cut green beans
1 can (11-1/2 ounces) condensed bean and bacon soup, undiluted
1/4 teaspoon pepper

Steps:

  • Place ham hocks, carrots, celery, onion and water in a Dutch oven or soup kettle; bring to a boil. Reduce heat; cover and simmer for 2-1/2 hours or until meat starts to all off the bones. , Add potatoes and vegetables; bring to a boil oil. Reduce heat; cover and simmer for 1 hour. Remove hocks; allow to cool. Remove meat from bones and cut into bite-size pieces; discard bones. Return meat to kettle. Stir in bean and bacon soup and pepper; heat through.

Freshly ground black pepper

1 pound orange lentils
2 tablespoons chopped parsley

Steps:

  • In a large saucepan, over medium heat, add the oil. When the oil is hot, add the onions, celery, and carrots. Season with salt and pepper. Saute for 4 minutes. Add the garlic, bay leaves and thyme. Saute for 1 minute. Add the ham hocks and stock. Bring the liquid to a boil, reduce the heat to medium-low and cook about 1 hour, or until the hocks are tender. Add the lentils and continue cook for 25 to 30 minutes or until the lentils are tender. Remove from the heat and stir in the parsley. Reseason with salt and pepper if needed. Remove the ham hocks and remove the meat. Add the ham back into the soup. Ladle the soup into individual serving bowls and serve with crusty bread.

1 lb white beans, rinsed
2 quarts water, plus additional
2 -3 lbs ham hocks or 2 -3 lbs ham shanks
2 teaspoons italian seasoning
1 cup diced onion
1 cup chopped celery (optional)
1 cup chopped carrot, peeled (optional)
2 -3 garlic cloves
1/4 teaspoon salt, to taste
1/4 teaspoon pepper, to taste
1/2 teaspoon hot sauce, to taste (optional)

Steps:

  • Fill large pot with water and as it starts to boil, add dry beans and onion. Cook on medium-low till beans are soft, about 2 hrs., adding water as needed to keep beans covered.
  • In another pan fill with water and add the ham and seasonings. Cook till meat falls off the bone.
  • When beans are soft, remove the bones from the ham pot and add pot contents to the beans, including the water and the seasonings in the pan.
  • Add the carrots and celery-cook on low till veggies are tender.
  • Season with salt and pepper to taste. Add hot sauce at serving.
