1 cup water, or more as needed
3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
5 whole cloves
2 slices ham steak

Steps:

Preheat oven to 375 degrees F (190 degrees C).
Mix water, brown sugar, Worcestershire sauce, and cloves in a baking dish. Arrange ham steaks in baking dish, coating with sugar mixture. Add more water as needed to cover ham.
Bake in preheated oven until ham is tender, 35 to 45 minutes.

1/4 cup packed brown sugar
1-1/2 teaspoons all-purpose flour
1/2 teaspoon ground mustard
2 tablespoons ginger ale
1 tablespoon cider vinegar
2 boneless fully cooked ham slices (1/2 to 3/4 pound and 1/2 inch thick)

Steps:

In a skillet, combine the brown sugar, flour, mustard, ginger ale and vinegar. Bring to a boil over low heat; cook and stir for 2 minutes or until sugar is dissolved and sauce is thickened. Add ham slices and heat through.

An old-fashioned way of cooking ham. From the Laura Secord Canadian cookbook, which says this recipe comes from PEI.

Ingredients

2 slices cooked ham (1 inch thick)
1 teaspoon dry mustard
3 tablespoons brown sugar
2 cups milk
6 whole cloves
2 bay leaves

Steps:

Trim the excess fat off the ham and put in a shallow baking dish.
Combine the mustard and sugar and spread over the ham.
Cover with the milk and add in the spices.
Put a lid on the dish or cover the top with foil and bake for 30 minutes in a 300 F oven.
Bake 30 minutes longer uncovered.
Remove from liquid and serve.

I just found this recipe among my Mother's handwritten recipe cards circa 1976. As I remember, we enjoyed it often. I think it came from a Pa. Dutch cookbook we had. That book might have been a gift from my Pa. Dutch mother-in-law. We never used the pineapple, though.

1 slice ham, 3/4-inch to 1-inch thick
4 tablespoons brown sugar
1 teaspoon dry mustard
milk
pineapple slice (optional)

Steps:

Rub ham slice with dry mustard.
Place ham in large skillet or glass baking dish.
Cover with brown sugar.
Add enough milk to barely cover the ham.
Bake 1 hour to 1-1/4 hours at 325. Milk should be almost all absorbed.
You can add pineapple slices 1/2 hour before done. We preferred not to use the pineapple.

We used to get as a Christmas present from James Beard a whole genuine Southern ham, and it sustained us throughout the winter months. But it's not so easy for the person living alone to cope with that much ham. My solution is to buy about a 1-pound slice of ham and bake it. I can enjoy it in this old family recipe, which gets rid of the usual watery, over salted taste that most of our commercial hams have today and gives the meat a wonderful ﬂavor. You can have a few good slices of it the ﬁrst night for dinner, and the leftovers are there to be used in all kinds of ways.

Ingredients

1 slice ham, about 1 pound*
About 1 tablespoon Dijon mustard
Milk (up to 1 cup)
3 or 4 fresh sage leaves, if available, or 3 dried, or a sprinkling of dried rosemary
2-3 teaspoons dark-brown sugar

Steps:

Put the ham in a shallow baking dish that will just accommodate the slice, and smear the mustard on top. Pour milk all around, enough to almost cover the surface, lay the sage leaves on top, and sprinkle the sugar over it. Bake in a preheated 350° oven for 1 hour, occasionally opening the oven and spooning some of the curdling milk over the top.
Your ﬁrst portion of this will taste particularly good with a purée of parsnips (or another root vegetable) mixed with potatoes alongside.

1 1/2 pounds thick-sliced good-quality baked ham such as Virginia
1/2 cup heavy cream
1 firm-ripe Camembert, chilled, rind discarded and cheese coarsely chopped
1 large egg yolk
Accompaniments:
Broccolini or green beans

Steps:

Preheat oven to 350°F with rack in middle.
Overlap ham slices on a baking sheet and cover with foil. Bake until just heated through, 8 to 10 minutes.
Bring cream to a simmer, then whisk in cheese until smooth. (If necessary, purée in a blender, then reheat.) Whisk in yolk and cook, whisking, 1 minute.
Serve ham with sauce.
