EASY BACON AND CHEESE QUICHE
This is an easy, delicious quiche that will take no time to prepare and your friends will ask for the recipe! I have made this for numerous office gatherings and everyone raves about it!

- Preheat oven to 400 degrees F (200 degrees C).
- Place unthawed pie crust on a baking sheet. In a medium bowl, mix the bacon, onions, and both cheeses. Pour this mixture into the crust.
- Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
- Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake for an additional 35 minutes, until top of quiche begins to turn brown.

MEAT LOVER'S QUICHE
This quiche with a homemade crust is packing bacon, ham, salami and Italian sausage.

- Pulse together the flour, sugar and salt in a food processor fitted with a metal blade. Add about a third of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers, it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly and take care not to overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
- Lightly flour a work surface, then roll the dough into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Press a piece of foil over the chilled crust, then fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
- Combine the bacon, sausage, salami, and ham with the Monterey Jack and sprinkle it in an even layer in the crust.
- Whisk together the half-and-half, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a bowl. Stir in the parsley.
- Pour the custard over the filling. Lower the oven temperature to 350 degrees F and bake until set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.

- Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. Place a sheet of parchment paper over dough and fill with pie weights or dried beans. Bake until edge is dry and light golden, about 20 minutes. Remove parchment and weights.
- Meanwhile, in a large skillet, melt butter over medium-high. Add onion, season with salt and pepper, and cook until light golden, 8 to 10 minutes. In a medium bowl, whisk together eggs and cream. Add onion, bacon, and cheese and season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Whisk to combine, pour into crust, and bake until center of quiche is just set, 40 to 45 minutes. Serve warm or at room temperature.

We love to have guests stay with us, and this is a great dish to serve for breakfast. - Fit 1 piecrust into a 9" deep dish pieplate according to package directions; trim dough around edges of pieplate.
- Place remaining piecrust on a lightly floured surface, cut desired shapes with a decorative 1" cookie cutter. Brush edge of piecrust in pieplate with beaten egg white; gently press dough shapes onto edge of piecrust. Pierce bottom and sides with a fork.
- Line piecrust with parchment paper or aluminum foil; fill piecrust with pie weights or dried beans.
- Bake at 400 for 10 minutes. Remove weights and parchment paper; bake 5 more minutes, and set aside. Reduce oven temperature to 350.
- Cook bacon in a large skillet over medium high heat until crisp. Remove bacon, and drain on paper towels, reserving 2 t. drippings in pan. Crumble bacon and set aside.
- Saute chopped onion and mushrooms in hot drippings 3 to 4 minutes or until tender.
- Stir together bacon, onion mixture, half and half, and next 4 ingredients in a large bowl. Combine cheese and flour; add to bacon mixture, stirring until blended. Pour mixture into crust.
- Bake at 350 for 45 to 50 minutes or until a wooden pick inserted in center comes out clean. Shield edges with aluminum foil to prevent excess browning, if necessary. Let stand 10 minutes before serving.

DEEP DISH HAM QUICHE
This is a fantastic dish for a Brunch, or for a quick lunch, so delicious. I have also made it with cooked bacon, and added chopped green peppers, very good!!

- Prepare pie crust as directed. Remove from oven and set aside to cool.
- In a large flat-bottomed fry pan, melt the olive oil and unsalted butter. Cook the onions over low-medium heat, until softened, about 15 minutes. Add cubed ham to pan and cook for 5 minutes more. Remove from heat.
- Preheat oven to 375.
- In a medium bowl, whisk togehter the egg, milk, cream, and parsley and season with salt and pepper.
- Spread the onion and ham mixture in the cooked and cooled pie crust. Pour the egg mixture over the top.
- Place on a baking sheet. Bake in a preheated oven for 50-55 minutes.
