BACON, ONION AND CHEESE STUFFED BURGER
Steps:
- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
HAMBURGER AND ONION STUFFED BREAD
Steps:
- Preheat the oven to 200°F.
- Crisp the bread in the low oven, split lengthwise, then cut in half again to make 4 bread boats and hollow out the bread. Switch the broiler on.
- Heat a nonstick skillet over medium-high heat. Add the EVOO. Add the meat, season liberally with salt and pepper, and brown and crumble it, 3 minutes. Add the onions and cook for 10 minutes more, stirring frequently. Add the Worcestershire and remove from the heat.
- Spread a little Dijon or spicy brown mustard across the bottoms of the breads. Fill with the meat and onions and top the filled breads with the cheese. Melt the cheese under the broiler and garnish with the chives or parsley.
HAMBURGER STUFFED FRENCH BREAD
This is a big hit with everyone in my family! My brother beggs me to come over and make it for him often. It is very filling and the leftovers heat up well wrapped in tin foil and heated in the oven.

- Cut loaf of bread in half, lenghtwise and hollow it out, (save the crumbs).
- Brown hamburger and drain.
- Mix all ingredients except cheese slices in a LARGE frying pan.
- Simmer for 5 minutes.
- Stir in bread crumbs and fill shell with mixture.
- Cut cheese slices in half to make triangles and put on top.
- Bake for 5-8 minutes at 350 degrees to melt cheese.
ONION STUFFED HAMBURGERS
Hamburger pattie surrounding a slab of uncooked onion. Oh, by the way, the onion will cook inside the burger, mellowing the flavor of the onion and keeping the burger moist. Each pattie is about 1/4 pound of meat surrounding a 2 inch diameter 1/4 inch thick slab of onion. Even my kids love these.

- Cut tops off onions and peel them. Scoop out centers to within 1/4 in. of edge; set shells aside. - In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
- Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
- Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

- In a large mixing bowl, mix together the ground beef, salt, black pepper, barbeque sauce and garlic powder using your hands. Taking a small handful at a time (approximately 1/4 pound), shape into 12 patties. Lay patties out on a cookie sheet and cover with plastic wrap; place patties in the refrigerator.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown, about 5 minutes. Remove bacon from skillet with a slotted spoon and drain on paper towels. Turn the heat down to medium and pan fry the onions in the remaining bacon drippings until soft and translucent and just beginning to brown. Mix together onions and bacon in a small bowl.
- Prepare a grill or large skillet for medium heat.
- As the grill heats, pull beef patties out of the refrigerator; top 6 of the patties with 1- 1/2 tablespoons of the bacon and onion mixture each, and sprinkle with shredded cheese. Top each with one of the remaining patties and press the edges together to seal.
- Grill or pan fry the stuffed and sealed patties until cooked through, 2 to 3 minutes per side. Serve on hamburger buns with condiments of your choice.

Using Colorado beef and an Idaho potato makes this hearty sandwich a real Western meal! If you have a leftover baked potato from dinner, this is a perfect way to use it.

- In a large skillet, cook the beef and onion over medium heat until meat is no longer pink; drain. Add the potato, soup, mushrooms, parsley, garlic powder, pepper and hot pepper sauce; cover and simmer for 10 minutes., Meanwhile, cut the loaf of bread in half lengthwise. - Heat oil in a pot over medium heat to 350°F (180°C).
- In a bowl, mix together the ground beef, salt, pepper, and onion powder.
- Peel and slice the onion into 1-centimeter (½ inch) rings. Detach the rings from each other.
- Take a spoonful of the beef mixture and press it into the bottom of a ring.
- Push a cheddar square into the center of the beef.
- Seal the top with another spoonful of the beef, pressing it flat.
- Repeat with the rest of the rings.
- Place the flour, eggs, and bread crumbs into three separate bowls.
- Dip a ring into the flour, shaking off excess, then into the egg, the bread crumbs, then back to the eggs, and one last time into the breadcrumbs.
