Steps:
- Bring a large pot of water to a boil.
- Saute the onion over medium heat until tender and season with salt. Add the garlic and cook for a minute longer.
- Add the beef, oregano, and cayenne. Season generously with salt and pepper. Brown the beef and stir to break it up into smaller pieces. Drain the fat from the pan and discard.
- Sprinkle the flour over the beef and stir until well mixed. Stir in the tomatoes and stock. Raise the heat to medium high and bring to a boil. Simmer over medium heat for 10 minutes.
- Wile the beef simmer, add the macaroni and 1 teaspoon salt to the boiling water. Cook a minute less than directed on the packaging and drain well.
- Stir the macaroni and half the cheese into the beef mixture. If it looks too thick add in a bit more stock.
- Divide among serving bowls and top with parsley and the remaining cheese.

This is a super helpful recipe I found in a "Company's Coming" cookbook. The whole family tucks into this dish with a salad on the side. I also like it because it follows the technique of Hamburger Helper (read: easy to do) without having to buy a box from the store.

Steps:
- Scramble-fry ground beef, onion and garlic in large non-stick frying pan 3-5 minutes.
- Add zucchini and mushrooms.
- Cook for 6-7 minutes, stirring occasionally, until beef is no longer pink.
- Drain.
- Add water, spaghetti sauce, basil, sugar and oregano.
- Heat until boiling.
- Add pasta.
- Reduce heat.
- Cover.
- Simmer for 30 minutes or until pasta is tender but firm and liquid is mostly absorbed.
- Add mozzarella cheese.
- Stir until melted.

- Place ground beef in a skillet over medium-high heat. Cook and crumble until evenly browned. Drain grease, and set aside.
- Meanwhile place potatoes in a saucepan with enough water to cover. bring to a boil, and cook for about 10 minutes, until just tender. Drain potatoes, and remove from the pan.
- Heat oil over medium heat using the pan that the potatoes were cooked in. Add the bell pepper and onion. Cook and stir for about 5 minutes, until tender. Mix in the ground beef and potatoes, cooking until heated through, about 5 minutes. Stir in cheese, and remove from heat. Serve immediately.
