This gem is handwritten in the back of a 1948 cookbook I have entitled Recipes and Menus for Fifty by Frances Lowe Smith, revised by Florence P. Stoddard.

2 cups salad oil
2 cups chopped onions
2 cups chopped green peppers
2 garlic cloves, minced
8 lbs ground beef
6 quarts canned tomatoes
1 quart tomato paste or 6 (6 ounce) cans tomato paste
3 1/2 tablespoons salt
3 tablespoons sugar
1/8 teaspoon cayenne pepper
10 (8 ounce) packages thin spaghetti
grated parmesan cheese

Steps:

  • Put salad oil, onion, green pepper, and garlic in a good-sized pan. Cook over very slow heat about 5 minutes. Then add your meat and cook, this time over medium heat, stirring frequently, until meat is well browned. Now add your canned tomatoes, tomato paste, salt, sugar, and cayenne. Stir until well mixed. Let the sauce simmer, uncovered, over very slow fire about two hours.
  • Cook spaghetti according to the directions on package, rinsing in hot water when done. Drain thoroughly. Cover a good serving of spaghetti with meat sauce (about 3/4 of a cup). Sprinkle with cheese.

3 cn Tomato Puree -- (29 oz)
2 tb Sugar
10 Eggs
5 lb Cooked Speghetti, Drained --
2 tb Salt
1/4 c Instant Minced Onions
1 tb Dried Oregano
1/4 tb Garlic Powder -- --or--
1 1/2 tb Pepper
1/2 c Instant minced onion
3 tb Dried Basil -- --or--
1 tb Garlic Powder -- --or--
6 lb Ground beef
1 1/4 c Fine Dry Bread Crumbs
3 qt Water
2 tb Dried Oregano
1 Clove Garlic -- minced

Steps:

  • Spaghetti: 1. In a twelve quart stock pot combine puree,paste,spices, water, onion, bring to boil and simmer for 1 hr. 2. Add meatballs and simmer additonal 30 min. 3. Serve meatballs & sauce on speghetti to approx. 24 people. Sauce can be made ahead--it freezes well. Easy to double or triple. Meatballs: 1. Preheat oven to 350. Grease or spray 3 13 x 9 in baking pans. 2. Combine all ingredients in lg bowl. Mix well w/hands. 3. Scoop up mixture in 1 1/2 ounce ice cream scoop dipped into cold water & shape into balls. 4. Arrange balls 1/2 in apart in a single layer in the baking pans. Bake for 18 minutes or until browned & firm. Finish cooking in sauces. Makes 48 meatballs Recipe By : Rita Stockwell

1 pound ground beef
1 onion, chopped
4 cloves garlic, minced
1 small green bell pepper, diced
1 (28 ounce) can diced tomatoes
1 (16 ounce) can tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon salt
½ teaspoon black pepper

Steps:

  • Combine ground beef, onion, garlic, and green pepper in a large saucepan. Cook and stir until meat is brown and vegetables are tender. Drain grease.
  • Stir diced tomatoes, tomato sauce, and tomato paste into the pan. Season with oregano, basil, salt, and pepper. Simmer spaghetti sauce for 1 hour, stirring occasionally.

4 cups finely chopped onions
8 garlic cloves minced
9 cans tomatoes - (1 lb 13 oz ea)
9 cans tomato paste - (12 oz ea)
3 cups wine vinegar
2 teaspoons dried thyme
2 teaspoons dried basil
2 teaspoons dried oregano
5 teaspoons salt
1 cup sugar
3 tablespoons Worcestershire sauce
1 cup chopped parsley
4 teaspoons freshly-ground black pepper
4 pounds ground beef
4 pounds ground pork
4 pounds ground veal

Steps:

  • In large, heavy kettle, fry bacon, onions and garlic until golden brown. Add tomatoes, tomato paste, vinegar, thyme, basil, oregano, salt, sugar, Worcestershire sauce, parsley and pepper. Cover and simmer 30 minutes. Mix ground beef, pork and veal together and saute in large skillet, in two or more batches, if necessary. Drain off excess fat. Add meat to tomato mixture. Simmer about 30 minutes or longer. Adjust salt and pepper to taste. This recipe yields 50 servings.
