1 large sweet onion
3 cups buttermilk
2 cups minced fresh cilantro
1 cup minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon plus 2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup mayonnaise
1/2 cup plus 3 tablespoons olive oil, divided
1 beef flat iron steak or top sirloin steak (1-1/2 pounds)
1-1/2 cups all-purpose flour
3 tablespoons taco seasoning
Oil for deep-fat frying
12 slices Italian bread (1/2 inch thick)
Optional: Fresh arugula and sliced tomato

Steps:

  • Cut onion into 1/4-in. slices; separate into rings. Place in a large bowl or shallow dish. Add buttermilk; turn to coat. Refrigerate at least 4 hours or overnight., In a small bowl, combine cilantro, parsley, garlic, 1/2 teaspoon salt and pepper. Remove 2 tablespoons herb mixture; stir into mayonnaise. Refrigerate until serving. Stir 1/2 cup olive oil into remaining herb mixture. Reserve 2 tablespoons oil mixture for serving. Place remaining oil mixture in a large bowl or shallow dish. Add beef; turn to coat. Refrigerate at least 4 hours or overnight., Drain beef, discarding marinade. Grill beef, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness, 7-9 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain onion rings, discarding marinade. In a shallow dish, combine flour, taco seasoning and remaining 2 teaspoons salt. Roll onion rings in flour mixture. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels; keep warm., Remove steak to a cutting board; brush with reserved 2 tablespoons oil mixture. Brush bread with remaining 3 tablespoons olive oil. Grill bread over medium heat until toasted, 30-60 seconds on each side., Spread mayonnaise mixture over 1 side of each toast. Thinly slice steak. Top 6 slices of toast with steak, fried onions and, if desired, arugula and tomato slices. Top with remaining toast.

Tender and juicy steak sandwich with caramelized onions, creamy Brie cheese, and fig jam. An incredible flavor combination that's both easy and elegant!

2 beef strip steaks ((10 ounces each) about 1-inch thick each*)
Kosher salt
Ground black pepper
2 1/2 tablespoons extra virgin olive oil (divided)
2 large red onions (thinly sliced)
1 tablespoon Dijon mustard
2 tablespoons melted unsalted butter
8 mini-sized French rolls, (pretzel buns, or similar soft, but sturdy buns)
1 1/2 cups arugula
8 ounces Brie cheese (cut into thin slices)
1/2 cup fig jam

Steps:

  • Preheat the oven to 350 degrees F. Remove steak from the refrigerator and place on a plate. Season liberally with salt and pepper on both sides. Let come to room temperature while you caramelize the onions.
  • Prepare the Dijon onions: Heat 1 tablespoon olive oil in a large sautee pan over medium high. Add the sliced red onions and 1/4 teaspoon kosher salt. Cook until the onions begin to soften and brown, 5-8 minutes. Reduce heat to low and let cook, stirring occasionally, until the onions are very soft and caramelized, about 15 additional minutes. Remove from heat and stir in the Dijon to evenly coat. Remove the onions to a plate or bowl, then gently wipe the skillet clean with a paper towel.
  • Heat the remaining 1 1/2 tablespoons olive oil in the skillet over medium high. Once the oil is very hot and almost smoking, add the seasoned steaks. Do not crowd them-if your skillet is not large enough to easily accommodate both, cook them in batches. Sear the steaks for 1 minute on each side, then reduce the heat to low and cook the steak for about 6-8 minutes, turning once, until rare and a thermometer inserted in the center reaches 125 degrees F. Transfer to a plate and cover with foil. Let rest for 10 minutes, then slice into strips.
  • Spread the melted butter onto the bottom of a 9x13-inch baking dish, using just enough to coat the pan. Lay the bottom of the buns in a single layer in the baking dish, then top with the arugula, steak slices, Brie, and the caramelized onions. Spread the inside of the top buns with about 2 teaspoons jam, then lay the buns on top to complete the sandwiches. Brush the bun tops with the remaining melted butter, then cover the pan with foil. Bake for 15 minutes, just until the cheese has melted. Transfer to a serving plate and enjoy warm.

2 tablespoons Worcestershire sauce

Steps:

  • Slice onions into 1/2-inch thick rings. Heat 2 tablespoons olive oil in a large skillet over medium-high heat; cook onions until browned, tossing occasionally, 10 to 15 minutes. Season with salt and pepper; remove.
  • Heat remaining tablespoon oil in same skillet over high heat. Season steaks with salt and pepper. Cook 30 seconds on each side; remove. Add Worcestershire sauce and 2 tablespoons water to skillet, scraping up browned bits with a wooden spoon. Return onions to skillet; toss.

2 teaspoons olive oil
1 1/2 teaspoons garlic-pepper blend

1 (1-lb.) boneless beef sirloin steak
2 tablespoons butter, softened
4 hoagie buns, split
3 tablespoons steak sauce
1 medium tomato, thinly sliced

Steps:

  • Heat gas or charcoal grill. Cut 18-inch square sheet of heavy-duty foil. Brush onion wedges with oil. In small bowl, combine 1 teaspoon of the garlic-pepper blend and the dry mustard; mix well. Sprinkle both sides of steak with mustard mixture.
  • When grill is heated, place steak on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Place onion wedges on sheet of foil next to steak. Cook 8 to 12 minutes or until steak is of desired doneness and onion is crisp-tender, turning steak once and stirring onion occasionally.
  • Meanwhile, in small bowl, combine butter and remaining 1/2 teaspoon garlic-pepper blend; blend well. Spread on cut sides of buns. To toast buns, place cut sides down on grill during last 1 to 2 minutes of cooking time.
  • To serve, spread cut sides of each bun with about 1 teaspoon steak sauce. Cut steak crosswise into thin slices. Layer steak slices, onion wedges and tomato slices on bottom halves of buns. Cover with top halves of buns.

4 hanger steaks (each about 1 inch thick and 6 ounces)
1 teaspoon coarse salt
Pinch of freshly ground pepper
4 medium beefsteak tomatoes, cut into 1/2-inch-thick slices
2 tablespoons vegetable oil
2 teaspoons unsalted butter
2 large onions, cut into 1/4-inch-thick rings
1 long baguette (about 22 inches) cut crosswise into 4 pieces and split horizontally
3 tablespoons hot mustard

Steps:

  • Preheat a grill to medium-high (if using a charcoal grill, coals are ready when you can hold your hand 5 inches above grill for just 3 to 4 seconds). Alternatively, heat a grill pan over medium-high heat until hot.
  • Season steaks with the salt and pepper. Grill, turning once, 7 minutes total for medium-rare. Transfer steaks to a cutting board, and let rest 5 minutes.
  • Meanwhile, grill tomato slices, turning once, until soft, about 4 minutes total.
  • Heat oil and butter in a large skillet over medium-high heat until hot but not smoking. Add onions; cook, stirring occasionally, until golden, about 8 minutes.
  • Cut steaks against the grain into 1/4-inch-thick slices. Spread each of the 4 baguette bottoms with 2 1/4 teaspoons hot mustard. Top with steak slices, tomatoes, onions, and the 4 baguette tops. Wrap sandwiches in waxed paper; refrigerate until ready to serve.

1 cup bourbon
2 tablespoons maraschino cherry juice
Freshly ground black pepper
2 tablespoons unsalted butter
2 pounds hanger steak

Bourbon Creamed Spinach, recipe follows
4 pretzel rolls, buttered and griddled
1 small red onion, sliced and soaked in ice water for 15 minutes
1 small red onion, sliced and soaked in ice water for 15 minutes
Two 10-ounce boxes frozen spinach, thawed
3 tablespoons unsalted butter
2 cloves garlic, minced
1 small yellow onion, finely chopped, about 1 cup

1/4 cup bourbon
1 1/2 cups heavy cream
2 cups grated smoked gouda cheese

Steps:

  • For the glaze: Add the orange peel, bourbon, cherry juice and some black pepper to a small saucepan. Simmer until reduced to 1/4 cup, about 10 minutes. Your pot may flambe from the bourbon, don't worry- just wait until the alcohol burns off. Once reduced, turn off the heat and whisk in the butter.
  • Sprinkle the steak liberally with salt and pepper. Heat a cast-iron pan over medium-high heat. Add a light coat of oil and place the steak in the pan. Cook the steak almost to desired doneness, depending on thickness, 3 to 5 minutes per side. Turn off the heat and glaze the steak on all sides in the pan while flipping. Remove the steak from the pan to rest.
  • For the sandwich build: Pile some Bourbon Creamed Spinach on the bottom piece of the pretzel roll. Thinly slice the steak against the grain and place on top of the spinach. Top with some red onions and finish with the top of the roll. Repeat for the remaining sandwiches.
  • Strain the thawed spinach in a colander and squeeze liquid out with a towel. Melt the butter in a large straight-sided skillet over medium heat. Add the garlic and onions, season with salt and pepper and cook until onions are softened, about 5 minutes. Turn off the heat and add the bourbon. Stir to combine, turn heat back on to medium and simmer 1 minute. Add the cream, and cook until the cream is reduced by half, about 5 minutes. Stir in the cheese and cook until melted, and then mix in the spinach to combine. Cover and cook over low heat until the spinach is tender, 8 to 10 minutes, and then season with salt and pepper.

This is a simple recipe that makes everyone hungry. It's a good feeling to make your own onion rings and watch as people crunch down on them as they cut into this tasty steak. I serve the meat with a little vinegar so the onion rings get a salt and vinegar vibe when you eat the two parts of the dish together. This is not the type of dish that can be made in advance and held, so get everything ready and cook the meat and onion rings when you are ready to eat!

One 12-ounce beer, preferably a pale lager
One 2-ounce "shot" of vodka
1 cup sparkling water
1 teaspoon baking soda
1/2 teaspoon hot paprika
1 1/2 to 2 1/4 cups all-purpose flour, plus a little extra if needed
4 cups canola oil
4 medium red onions, peeled, cut into 2-inch rounds and pulled apart into individual rings
Kosher salt
2 tablespoons canola oil
One 2-pound piece hanger steak, trimmed of sinew and cut lengthwise into 2 pieces

1 tablespoon balsamic vinegar

Steps:

  • Prepare the batter: Pour the beer into a medium bowl and stir in the vodka and sparkling water. Slowly whisk in the baking soda, paprika and 1 1/2 cups of the flour. The batter should be fairly thick but also easy to stir. If it's a little loose, whisk in the remaining 3/4 cup flour, 1/4 cup at a time. If it's too thick, add a splash of water. Do not overmix. Set aside in a warm place for at least 15 minutes.
  • Get ready to fry: Pour the oil into a heavy-bottomed pot. Heat the oil slowly to 375 degrees F. Use a thermometer to monitor the temperature. Line a baking sheet with a kitchen towel to drain the onion rings once they are cooked.
  • Cook the steak: Heat a large cast-iron skillet over high heat. Add the oil. When it begins to smoke lightly, season the steak with salt and use a pair of metal tongs to gingerly place the steak in the hot oil. Cook, 4 to 5 minutes, on each side.
  • Doneness: If using a meat thermometer, rare registers between 125 and 130 degrees F. For medium rare, 130 to 135 degrees F; and between 135 and 140 degrees F for medium. If you like your steak a little more cooked, leave it in the pan a few minutes longer on each side. Let it rest on a flat surface and cover with foil to keep warm while you make the onion rings.
  • Fry the onion rings: Test the batter and the temperature of the oil at the same time by dipping an onion round into the batter, gently shaking off the excess batter and carefully plunging it into the oil. Fry until crispy, 1 to 2 minutes, and remove it from the oil carefully with a slotted spoon. Fry the onion rounds in small batches, draining them on the kitchen towel-lined baking sheet. Salt immediately.
  • Serve: Slice the steak into 1/2-inch-thick pieces, season with salt and drizzle with the balsamic vinegar. Arrange on a serving platter with all the cooking juices and serve with the onion rings in a bowl on the side.

1 1/2 tablespoons Worcestershire sauce, or to taste
1 teaspoon Dijon-style mustard
1 pound grilled steak, cut into 1/8-inch thick slices
1 long loaf of Italian-style bread, halved horizontally and each half buttered lightly, cut into 4 pieces, and toasted

Steps:

  • In a skillet cook the onions in the butter and the oil over moderate heat, stirring occasionally, until they are crisp and golden and transfer them with a slotted spoon to paper towels to drain. In the fat remaining in the skillet cook the mushrooms and the garlic over moderately low heat, stirring occasionally, until the mushrooms begin to turn brown and transfer the mixture to a plate. Add the broth to the skillet and deglaze the skillet, scraping up the brown bits. Add the cream, the ketchup, the Worcestershire sauce, and the mustard and stir in the mushroom mixture and the steak slices. Divide the steak mixture among the bottom bread pieces, sprinkle it with some of the onions, and top the onions with the remaining bread pieces.

1 teaspoon oil (I use flavoured "Chili Oil")
1 large sweet onion, thinly sliced (Walla Walla type)
2 garlic cloves, smashed
1/8 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce
2 tablespoons oyster sauce
2 tablespoons balsamic vinegar
12 -16 ounces sirloin tip steaks or 12 -16 ounces flank steaks
1/4 cup beef stock or 1/4 cup red wine
4 slices of your favourite thick toasted bread

Steps:

  • Slice onion into very thin slices, separate rings; set aside.
  • Slice steak, across the grain, into very thin slices, place in a zip lock bag, add cayenne pepper, Worcestershire sauce, oyster sauce and balsamic vinegar to zip lock bag.
  • Squeeze out air and massage bag to distribute sauces and vinegar through steak; set aside.
  • Meanwhile, in a large nonstick fry pan, heat oil over medium heat; cook onion, and garlic, stirring occasionally, until medium to dark brown caramelized; 10 to 15 minutes.
  • Add steak strips with sauces, saute' til medium rare.
  • Add beef stock or wine and deglaze pan.
  • Simmer 5 minutes.
  • Meanwhile, toast bread slices dark brown.
  • Place 2 slices of toast on warm plate and cover with half the onion and meat mixture.
  • Repeat on second plate.

1 pound hanger steak
2 cloves garlic, minced
2 tablespoons rosemary, thyme, and sage, minced
8 ounces applewood smoked shoulder bacon, sliced thin
Frisée, washed and patted dry
Red onion jam (see recipe below)
8 thick slices rustic country bread
Sea salt
Fresh crack black pepper
1 pinch controne hot pepper flake
Extra virgin olive oil
2 red onions, sliced thin
1/2 cup red wine vinegar
1/4 cup sherry vinegar
1/2 teaspoon yellow mustard seed
1/4 teaspoon fennel seed
1/4 cup honey
Sea salt
Fresh cracked black pepper
Extra virgin olive oil

Steps:

  • Season hanger steak with salt, pepper, chili flake, herbs, and olive oil. Set aside, uncovered 1 hour up to 12 hours. Heat a grill on high heat. Sear steak on all sides, achieving a good crust. Cook steak to rare/medium rare. Remove from grill and let rest at least 15 minutes. Meanwhile, brush one side of the sliced bread with olive oil and season with salt and pepper. Grill bread, oil side down until nice and toasty. Remove and let rest grilled side up. In a small saucepan, drizzle olive oil. Add red onions and cook until well caramelized. Add the remainder of ingredients and bring to a boil. Turn down heat and allow to slowly simmer until all liquid has reduced. Will keep for several weeks in the fridge. Thinly slice steak, against the grain. To build sandwich: spread red onion jam on grilled side of bread. Arrange thin slices of shoulder bacon topped with frisée, and drizzle with with olive oil and season with salt and pepper. Arrange hanger steak on top and top sandwich with grilled bread. Enjoy with a dark English-style beer like a stout or porter.
