CIDER GRAVY (FOR PORK)



Cider Gravy (for Pork) image

While this recipe is for cider gravy, this is the basic recipe for making any gravy. It is so much nicer than ready-made! Simply change the stock depending on what joint you're cooking. If you want to add your accompanying vegetable cooking water to your gravy, replace some or all of the stock with the water. The gravy will have a less meaty flavour, but you'll have all the nutrients from the vegetables instead. For a less boozy gravy, use all the stock or replace the cider with unsweetened fresh apple juice.

2 tbsp plain flour
4 tbsp reserved roast pork cooking juices
300ml (1/2pt) pork or chicken stock
300ml (1/2pt) dry cider
Salt, to season

Steps:

  • Method 1. Blend the flour with the reserved cooking juices in a saucepan and gradually pour in the stock, blending until smooth. Stir in the cider. 2. Bring to the boil, stirring, and simmer for 3 minutes. Taste and season with salt before serving.

2 tablespoons vegetable oil, divided
4 (1-inch thick) pork chops
2 cloves garlic, halved, or more to taste
1 large onion, sliced
1 cup uncooked white rice
2 apples - peeled, cored and sliced
2 ½ cups chicken broth
½ cup hard cider
½ teaspoon ground cloves
1 bay leaf
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon oil in a large skillet over medium heat. Rub each pork chop on both sides with halved garlic. Add 2 pork chops to the skillet; cook until browned, 3 to 4 minutes per side. Transfer to a 4-quart casserole dish. Repeat with remaining 2 pork chops.
  • Heat remaining 1 tablespoon oil in the same skillet. Add onion; cook and stir until softened, about 5 minutes. Add to pork chops in the casserole dish. Spread rice and apples on top.
  • Combine chicken broth, hard cider, cloves, bay leaf, salt, and black pepper in a 1-quart saucepan; bring to a boil. Pour broth mixture over apples in the casserole dish. Cover with aluminum foil.
  • Bake in the preheated oven until an instant-read thermometer inserted into the pork chops reads 145 degrees F (63 degrees C), about 45 minutes.

2 tablespoons unsalted butter, plus 1 tablespoon cold
2 1/2 pound pork loin roast, trimmed and tied
Kosher salt and freshly cracked black pepper
1 onion, peeled and sliced
2 Granny Smith apples, cored and sliced
1 bottle, (12 ounces) hard cider, plus more as necessary

Steps:

  • Preheat oven to 375 degrees F.
  • Heat a large Dutch oven over medium heat. When the pan is hot, add 2 tablespoons of butter. Season the pork generously with salt and pepper, to taste, and sear on all sides in the hot pan until golden brown; set aside. Add the onions and apples and season again with salt and pepper. Cook until they begin to caramelize, then pour in the hard cider and scrape the brown bits off the bottom of the pan. Bring to a simmer and nestle the browned pork roast back into the pan. Cover with a lid and put in the oven to braise until the internal temperature reaches 145 degrees F on an instant-read thermometer, 25 to 30 minutes.
  • Remove the pork roast from the pot and transfer to a carving board; tent with foil to keep warm. Transfer the contents of the pot to a food processor or blender and puree, then return the puree to the pan. Bring to a boil, season with salt and pepper, to taste, then reduce the heat to low and add more cider if gravy is too thick. Add the remaining tablespoon of cold butter, whisking constantly as it melts. Remove from heat when the gravy is smooth and shiny and the butter is completely melted.
  • Slice pork loin roast and arrange on a serving platter. Serve with sauce and enjoy!

2 tablespoons packed light brown sugar
2 teaspoons whole black peppercorns
2 teaspoons whole coriander seeds
2 teaspoons mustard seeds

4 fresh thyme sprigs
One 12-ounce bottle or can chilled hard cider (1 1/2 cups)
4 bone-in, center-cut pork chops, about 1 inch thick
1 tablespoon extra-virgin olive oil
2 tablespoons unsalted butter
1 clove garlic, finely chopped
1 teaspoon chopped fresh rosemary, plus more sprigs for garnish
1 teaspoon chopped fresh thyme, plus more sprigs for garnish
2 tablespoons all-purpose flour
1/2 cup hard cider
1 cup low-sodium chicken broth
1/4 cup heavy cream
1 teaspoon cider vinegar
2 tablespoons chopped flat-leaf parsley

Steps:

  • For the brine: combine the salt, brown sugar, peppercorns, coriander, mustard seeds, allspice berries, bay leaves, thyme and 1 1/2 cups water in a small saucepan. Bring to a simmer over medium heat and stir to dissolve the sugar and salt, about 1 minute. Remove from the heat and pour in the cold cider. Let the brine cool to room temperature.
  • Put the pork chops in a large resealable plastic bag and pour in the brine. Press out excess air and seal tightly. Put the bag in a shallow container so it can lay flat and refrigerate for 30 minutes and up to 4 hours.
  • Drain the chops, rinse and pat dry. Discard the brine.
  • Heat a large skillet over medium heat and add the olive oil. When the oil is hot, add the chops (work in batches if necessary; do not crowd the pan) and cook, turning occasionally, until they are golden brown and cooked through, 13 to 14 minutes. (If the chops are browning too quickly or the pan drippings start to burn, lower the heat.) Remove to a plate.
  • For the sauce: Discard all but 1 tablespoon fat from the pan. Add 1 tablespoon of the butter and place over medium heat. Add the garlic, rosemary and thyme and cook until sizzling, about 30 seconds. Sprinkle in the flour and stir to make a paste. Whisk in the cider and bring to a simmer.
  • Simmer until very thick, about 1 minute. Add the stock, bring to a simmer and cook until slightly thickened, 2 to 3 minutes. Whisk in the cream and simmer to bring the sauce together, about 1 minute. Stir in the remaining 1 tablespoon butter, vinegar and parsley. Season to taste with salt. Add the chops to the pan and simmer, turning occasionally, until just heated through, 1 to 2 minutes. Serve garnished with fresh thyme and rosemary sprigs.

Since I don't really prefer cider as a beverage of choice, I thought it perfect that I could use it as an ingredient in a pork chop recipe I found in my Williams-Sonoma "Steak and Chop" book. Although I dont like to drink hard cider, I certainly enjoyed it in this pan sauce. I just used regular pork chops without the bone and thought they turned out fine. I'd defintely have this again, so I'm going to have to invite those friends over soon.....

1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dry mustard
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
1/4 teaspoon cayenne pepper
8 bone-in pork rib chops, about 1 inch thick, trimmed of excess fat or 8 pork loin
1 tablespoon olive oil
1 cup hard alcoholic cider or 1 cup apple juice
1/4 cup Dijon mustard or 1/4 cup creole mustard
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
1 -2 dash Tabasco sauce or 1 -2 dash other hot pepper sauce
1/4 cup heavy cream

Steps:

  • To make the spice rub, in a small bowl, mix together the paprika, garlic powder, onion powder, dry mustard, salt, black pepper, and cayenne.
  • Slash the edges of the chops in 2 or 3 places to prevent curling.
  • Sprinkle rub all over the chops and let stand at room temperature for at least 15 minutes or up to 1 hour.
  • Coat the bottom of a large, heavy frying pan with the olive oil and heat over medium-high heat. Add the chops, in batches if necessary to avoid crowding, and cook until lightly browned, about 3 minutes on each side.
  • Reduce the heat to medium and cook for 5-7 minutes longer, turning once or twice. Test the meat for doneness by inserting an instant-read thermometer away from the bone or by cutting into the meat close to the bone.
  • Remove from heat just before the meat is done, when the internal temperature is 145 degrees F (63 C). Pork loin is done when the internal temperature is 150F/65C, but it will continue to cook while resting).
  • Transfer to a platter and let rest, tented loosely with aluminum foil, while you prepare the pan sauce.
  • To make the pan sauce, add the cider to the same pan and deglaze by scraping up any browned bits from the bottom.
  • Bring to a boil and cook, stirring often, until reduced by half, about 5 minutes.
  • Reduce the heat to medium and whisk in the Dijon mustard, Worcestershire sauce, tomato paste, and Tabasco.
  • Cook for 2-3 minutes longer, whisking often.
  • Remove from the heat and whisk in the cream. Taste and adjust the seasoning.
  • Transfer the chops to individual plates. Spoon some of the sauce over the chops and serve. Pass additional sauce at the table.

1 boned and rolled hand and spring of pork , skin scored (about 4kg)
2 tbsp olive oil
sea salt
3 leeks , roughly chopped
2 carrots , roughly chopped
1 turnip , peeled and roughly chopped
2 bay leaves
3 sprigs thyme
1 sprig sage
500ml cider
500ml hot chicken stock
25g butter
25g flour

Steps:

  • Heat the oven to 220C/ 200C fan/ gas 7. Score the skin of the pork and rub with olive oil and sea salt. Put the pork, leeks, carrots, turnip and herbs in large high-sided roasting pan and pour in the cider and stock. Roast for 30 minutes, then take the roasting tray out of the oven and cover tightly with foil. Return to the oven and turn the heat to 150C/ 130C fan/ gas 2.
  • After 4 hours, remove the foil, turn the oven back up again to 220C/ 200C fan/ gas 7 and roast for another 30 minutes.
  • Take the pork out of the oven, remove the meat, cover and set aside to rest. Drain the cooking liquid, pouring off any excess fat. Either serve or discard the cooking vegetables.
  • To make the gravy, melt the butter in a small saucepan and stir in the flour, cook for 2 minutes then whisk in the cooking liquid. Simmer for a few minutes. Serve alongside the meat. Delicious with braised red cabbage and roast potatoes.

3 fresh thyme sprigs
3 fresh flat-leaf parsley sprigs
1/2 teaspoon whole black peppercorns
3 pounds pork shoulder
Coarse salt and freshly ground pepper
Olive oil
1 small leek, white and pale-green parts, finely chopped and washed well (1/2 cup)
3 garlic cloves, peeled and minced
1 small parsnip, peeled and cut into 1/2-inch dice (1/2 cup)
1/2 small celery root, peeled and cut into 1/2-inch dice (1/2 cup)
4 cups hard cider
1/2 cup homemade or store-bought low-sodium chicken stock, plus more as needed
3 medium leeks, white and pale-green parts, halved lengthwise and washed well
3 medium parsnips, peeled and halved lengthwise
1 1/2 small celery roots, peeled and cut into 1-inch wedges
1 tablespoon unsalted butter, room temperature
1 tablespoon all-purpose flour
1/4 cup heavy cream (optional)
2 teaspoons grainy mustard, plus more for serving

Steps:

  • Make Sachet d'Epices:Wrap the thyme, parsley, and peppercorns in a small piece of cheesecloth and tie with twine to form a sachet.
  • Brown Pork:Heat the oven to 400 degrees. Use paper towels to pat pork dry, then season generously with salt and pepper. Heat a large Dutch oven or other pot with a tight-fitting lid over high heat for 2 minutes, then add enough oil to barely coat bottom of pot and heat until shimmering. Cook the pork until well browned on all sides, turning with tongs once each side is seared (remember not to move the meat too soon or it will not brown properly and will stick to the pot; wait until it releases easily). This will take a total of 12 to 15 minutes; reduce the heat if the bottom of the pot is getting too dark (you want browned, not burned, bits for flavoring the sauce). If, after removing the pork, you see burned bits, wipe out the pot and add more oil before proceeding. (Or deglaze pot with a little water, bringing it to a boil and scraping up the burned bits; pour off liquid and bits.)
  • Cook Aromatics:Reduce heat to medium and add leek, garlic, parsnip, and celery root. Season with salt and pepper. Stir frequently and cook until leek is translucent, about 2 minutes.
  • Braise Pork:Return pork to pot, and pour in 1 cup cider. Bring to a boil, and deglaze pot, scraping up browned bits from bottom. Add remaining 3 cups cider and the stock along with the herb sachet. (The liquid should come about halfway up the sides of the pork; add more stock if it doesn't.) Bring to a boil on top of the stove. Cover, and put in the oven. Reduce oven temperature to 325 degrees. Cook until the pork is very tender (it should offer little resistance when pierced with a knife), 2 to 2 1/2 hours, turning over with tongs about halfway through so the meat cooks evenly.
  • Finish Braising with Garnish Vegetables:Transfer the meat to a plate and strain the braising liquid through a fine sieve, pressing on the solids to extractas much liquid as possible (discard solids). Return the liquid and the pork to the pot and add the garnish vegetables, nestling them into the liquid; the liquid should almost reach top of vegetables. Bring to a boil on the stove, and then return to oven and cook until vegetables are tender, about 30 minutes. Lift out the vegetables and arrange them on a serving platter. Transfer pork to another plate. Cover both and keep warm near the stove.
  • Make a Beurre Manie:Rub the softened butter together with the flour until completely incorporated. Pour off and measure the cooking liquid remaining in the pot; you should have about 2 cups. Return it to the pot and boil until reduced to 1 cup, about 6 minutes. Whisk in the beurre manie and continue whisking until the liquid comes to a boil, then lower heat and simmer for 1 minute (to remove the raw starchy taste). Turn off the heat and stir in the cream (if using) and mustard.
  • Serve:Use a fork to shred the meat into large chunks. Transfer to platter with vegetables. Serve with sauce and more mustard on the side.

Steps:

  • Preheat oven to 450°F.
  • Pat pork chops dry and sprinkle both sides with sea salt and pepper. Heat 1 1/2 tablespoons butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then brown chops in 3 batches, turning once, 6 minutes per batch, and transfer with tongs to a large shallow baking pan (1 inch deep).
  • Add shallots and remaining tablespoon butter to skillet and cook over moderate heat, turning occasionally, until golden brown and tender, 6 to 8 minutes. Add cider and boil, stirring and scraping up brown bits, until reduced to about 3/4 cup, about 3 minutes.
  • Spoon shallots and sauce around chops and roast in lower third of oven until thermometer inserted horizontally into center of 1 chop (do not touch bone) registers 150°F, 7 to 9 minutes.
  • Let chops stand, loosely covered with foil, 5 minutes (temperature will rise to 155°F while standing). Serve chops with shallots and sauce.

1 cup chicken broth (low sodium)
2 teaspoons cider vinegar
1 cinnamon stick
4 tablespoons unsalted butter, cut into 4 pieces

1 tart apple, such as Granny Smith, cored, peeled and diced small
1/4 cup calvados (or apple-flavored brandy)
1 teaspoon fresh thyme leave, minced

Steps:

  • Combine cider, broth, vinegar, and cinnamon stick in a medium saucepan. Simmer over medium-high heat until liquid is reduced to 1 cup, 10 to 12 minutes. Remove cinnamon stick and discard. Set sauce aside until pork is cooked.
  • Pour off any fat from the skillet in which the pork was cooked. Add 1 tablespoon butter and heat over medium heat until melted and foaming subsides. Add shallot and apple and cook, stirring occasionally, until softened and beginning to brown, 1 to 2 minutes. Remove skillet from heat and add Calvados.
  • Return skillet to heat and cook about 1 minute, scraping bottom with a wooden spoon to loosen browned bits. Add reduced cider mixture, any juices from resting meat, and thyme; increase heat to medium-high and simmer until thickened and reduced to 1 1/4 cups, 3 to 4 minutes.
  • Off heat, whisk in remaining 3 tablespoons butter and adjust seasonings with salt and pepper. Pour sauce over pork and serve immediately.

Steps:

  • Mix together all of the spices and seasoning
  • Rub it onto the pork shoulder, make sure you get really stuck in there and all over the pork.
  • Place the pork shoulder into a slow cooker and gently pour over the cider.
  • Put the lid on and cook on low for 8-12 hours.
  • Move the pork into a large bowl and shred using two forks.
  • We used toasted brioche buns and coleslaw, but you could add some bbq sauce or whatever you feel like.

1 (5- to 6-pound) boneless pork shoulder
3 garlic cloves, each cut lengthwise into 3 or 4 slivers, plus 1 head of garlic, unpeeled, cut in half crosswise
Kosher salt and freshly ground black pepper
2 tablespoons expeller-pressed vegetable oil
1 yellow onion, quartered
1 carrot, thickly sliced
1 tart apple, cut into big chunks
1 cup apple cider, preferably unpasteurized
2 cups hard apple cider

Steps:

  • Rinse the pork and pat it dry. Using a thin, sharp boning knife, make ten to twelve deep, narrow slits in the pork and insert a sliver of garlic into each. Season the meat generously all over with salt and pepper, and then use kitchen twine to tie the shoulder into a compact, uniform shape. If it isn't already, allow it to come to room temperature.
  • Heat a large, heavy Dutch oven over medium-high heat. Add the oil and sear the pork on all sides, taking your time, turning it frequently and adjusting the heat as necessary to avoid scorching. Done properly, this will take about 20 minutes.
  • Meanwhile, preheat the oven to 300°F.
  • Transfer the pork to a large plate. Pour off all but 1 tablespoon of the fat in the pan, and add the onion, carrot, and apple. Season with salt and pepper, and sauté over medium heat until they are golden brown and soft, 3 to 4 minutes. Add both ciders and the halved head of garlic, and bring to a simmer. Return the pork to the pan. Put a piece of parchment or aluminum foil over the meat, folding it down around it so that it makes a snug tent. Cover the pot with a tight-fitting lid, and place it in the middle of the oven. Cook until the pork is very tender, about 3 hours, turning it once or twice to keep all sides moist.
  • Transfer the meat to a platter to rest before slicing. Strain the broth, discarding the apple and vegetables. Skim the fat from the pan juices and return the juices to the pan. Over medium heat, reduce to about 2 cups. Adjust the seasoning, and serve with the pork.

1/4 teaspoon salt
1/2 teaspoon pepper, divided
1 tablespoon olive oil
3/4 cup apple cider or juice
1/4 cup maple syrup
2 tablespoons cider vinegar

Steps:

  • Preheat oven to 425°. Cut tenderloin in half to fit skillet; sprinkle with salt and 1/4 teaspoon pepper. In a large skillet, heat oil over medium-high heat; brown pork on all sides. Transfer to a 15x10x1-in. pan. Roast until a thermometer reads 145°, 12-15 minutes., Meanwhile, in same skillet, bring cider, syrup, vinegar and remaining pepper to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until mixture is reduced to a glaze consistency, about 5 minutes., Remove pork from oven; let stand 5 minutes before slicing. Serve with glaze.
