Our version of Harry Potter's Pumpkin Juice is the perfect drink for fall. It has a smooth pumpkin flavor with a little bit of spice and is super tasty!

- Combine all ingredients in a large pitcher and stir well.
- Pour over ice in individual glasses, and top with cinnamon sticks and a straw. (Apple slices optional)
- Stir again before each serving to prevent settling.

HARRY POTTER'S PUMPKIN JUICE (COPYCAT RECIPE)
Steps:
- Peel and deseed the pumpkin, then cut it into 1 inch cubes.
- Quarter lemons and place in press along with the spices.
- Grind everything else on top and press.
- Peel and deseed the pumpkin, then cut it into 1 inch cubes.
- Peel the lemons.
- Juice all produce together.
- Whisk the spices into the juice. Don't forget to reduce the measurements as noted in the ingredients list!

COPYCAT PUMPKIN JUICE
This is a recipe inspired by the beverage featured in the Harry Potter books and movies. While it will not taste like the pumpkin juice from Universal Studios, this is not the intention, and I think it's better. It is very simple and fast to make, with only 3 ingredients. I make it all throughout the fall every year, and I hope you will enjoy it as much as I do. Add sugar or sweetener of your choice, if you prefer.

- Soak the apricots in the water for at least 4 hours or overnight in the fridge. Add the apple juice, cinnamon stick, allspice, ginger and vanilla bean to a saucepan. Bring almost to boil, then turn heat to low and simmer for 10 minutes. Take off heat and let it cool a bit. Add the apricots and the soaking water to a blender and blend until smooth. Add the pumpkin puree and nutmeg and blend again. Strain the apple juice mixture into the blender to make sure only the liquid comes through. Blend until smooth. Put a fine mesh strainer over a pitcher and strain the pulp so that only the thick juice is in the pitcher. Save the pulp and make pumpkin juice slow cooker oats the next day!!

- Cut the pumpkin into large chunks. Place them into a baking tray. Pour some water onto the tray - so the entire bottom is covered. Roast in the oven for 30-40 minutes in 350°F (180°C) until soft (check with fork).
