1 package (20 ounces) refrigerated shredded hash brown potatoes
1/4 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
4 tablespoons olive oil, divided
1/2 cup pepper jack cheese
1/2 cup crumbled cooked bacon
1/2 cup sour cream
2 green onions, thinly sliced

Steps:

  • In a large bowl, toss potatoes with onion, salt and pepper. In a small cast-iron or other heavy skillet, heat 2 teaspoons oil over medium heat. Add 1 cup potato mixture, pressing down to flatten with spatula. Cook, without stirring, until bottom is golden brown, 4-5 minutes. Drizzle with 1 teaspoon oil; flip. Cook until bottom is golden brown, 4-5 minutes, sprinkling with 2 tablespoons cheese and 2 tablespoons bacon during the last minute of cooking. , Fold hash browns in half; slide onto plate and keep warm. Repeat with remaining ingredients. Top with sour cream and green onions.

Seriously Good Stuffed Bell Peppers image

Recipe for stuffed bell peppers that are incredibly moist, melt-in-your-mouth tender and finger-licking delicious.

4 bell peppers ((very large; see notes))
1 1/2 lbs ground pork
3/4 lb ground beef
1 1/4 lbs yellow onion (finely chopped)
3 cups white rice (cooked)
1 carrot (medium, diced)
2 celery ribs (diced)
3 cloves garlic (minced)
3 tsp kosher salt (plus more to taste)
1 tsp black pepper (plus more to taste)
4 Tbsp sweet paprika
3 Tbsp olive oil

Steps:

  • Heat the oil in a large skillet and saute the onions over medium-high heat, frequently stirring, until they become translucent and begin to brown.
  • Add the minced garlic, diced celery and carrot and cook for another minute or so.
  • Add the minced meat, salt and pepper and sweet paprika. Stir fry for 15 minutes, breaking up clumps.
  • Once the meat stuffing is done cooking, move from the heat and let it cool down. Mix in cooked rice. Taste for salt and pepper and adjust to taste.
  • While the stuffing is cooling down, rinse the peppers, cut off the tops with stems, and remove seeds and membranes.
  • Fill each pepper generously with the stuffing mixture.
  • Transfer peppers to a slow cooker greased with some olive oil. Cover and cook on high for 2-3 hours or low for 4-6 hours, or until the peppers are tender to your liking.
  • To serve, very gently remove the peppers with a large slotted spoon and place on serving plates. Serve drizzled with pan juices. You can top the peppers with yogurt or sour cream and chopped parsley. Creamy mashed potatoes will make a great side dish if desired.

4 medium bell peppers
1/4 cup olive oil
1/2 cup chopped onion
1 cup thinly sliced mushroom
1 zucchini, diced
1/2 teaspoon dried oregano
salt & freshly ground black pepper
2 tomatoes, seeded and chopped
1 cup rice, cooked al dente and cooled
1/2 cup water
1/2 chicken or 1/2 vegetable bouillon cube
4 slices bacon, cooked until crisp and chopped
1 tablespoon fresh basil, shredded
4 ounces mozzarella cheese, diced
2 tablespoons grated parmesan cheese

Steps:

  • TO PREPARE THE PEPPERS:.
  • Pre heat oven to 350°F.
  • Cut the tops off the peppers and clean out the seeds and membranes. If the peppers won't stand up, cut a little piece off the bottom to level them. Place the peppers on a baking sheet and drizzle with the oil.
  • Bake for 25 minutes, or until they start to soften. Remove from the oven and allow to cool.
  • TO MAKE THE FILLING:.
  • Pour the oil from the peppers into a frying pan and add the onions, mushrooms, zucchini and oregano. Season the vegetables with salt and pepper to taste, and saute over high heat until they start to soften.
  • Add the tomatoes, rice, water and bouillon cube to the vegetables in the frying pan, and simmer for about 5 minutes. Adjust the seasoning. Fold in the bacon, basil and mozzarella cheese.
  • TO STUFF THE PEPPERS:.
  • Divide the filling among the peppers. Sprinkle the Parmesan on top of the peppers.
  • Bake in the middle of the oven for 15 minutes, or until the cheese has melted and the filling is hot.

1 tablespoon salt, plue 1 teaspoon, divided
½ cup all-purpose flour
1 cup shredded parmesan cheese
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon black pepper
1 medium white onion, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cloves garlic, minced
1 lb ground sausage
2 teaspoons paprika
½ teaspoon cayenne pepper
½ teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon salt
1 tablespoon olive oil
5 oz fresh spinach
6 large eggs
8 strips bacon, cooked, chopped

3 qt oil, for frying

Steps:

  • Add the potatoes to a large pot. Cover the potatoes with cold water and season with 1 tablespoon of salt. Bring to a boil over high heat and cook until the potatoes are fork tender, about 20 minutes.
  • Make the sausage filling: Add the onion to a large skillet over medium heat and cook until translucent, about 3 minutes.
  • Add the peppers and cook until slightly tender, about 6 minutes.
  • Add the garlic and sausage. Cook until the sausage is browned, about 4 minutes.
  • Season with the paprika, cayenne, pepper, thyme, and salt and cook for another 5 minutes until seasoning is evenly distributed. Remove the pan from the heat.
  • Make the egg filling: Heat the olive oil in a large skillet over medium heat, then sauté the spinach until fully wilted, about 5 minutes.
  • Add the eggs and scramble until cooked, about 3 minutes.
  • Add the bacon, pepper, and salt and mix to incorporate. Remove the pan from the heat.
  • Transfer the potatoes to a colander and run under cold water to cool. Pat dry.
  • Using the large holes on a cheese grater, shred the potatoes into a large bowl.
  • Add the flour, Parmesan, onion powder, garlic powder, pepper, and salt. Mix together thoroughly.
  • Transfer half of the hash brown mixture to a greased 13" x 18" (33 cm x 45 cm) baking sheet and spread evenly with a spatula.
  • On the left side of the tray, spoon the egg filling into 4 evenly spaced piles. On the right side of the tray, spoon the sausage filling into 4 evenly spaced piles. Top each pile of egg filling with a tablespoon of shredded cheddar cheese.
  • Top the piles of filling with the remaining hash brown mixture and use a spatula to carefully press down the hash browns, sealing the filling inside. Use the tip of the spatula to delineate between each pocket of filling.
  • Freeze for at least 2 hours.
  • In a large pot, heat oil until it reaches 380˚F (195˚C).
  • Remove the hash browns from the freezer and use a sharp knife to cut and separate each pocket.
  • Fry the hash brown pockets in batches for 5-7 minutes, or until browned on both sides. Drain the pockets on a wire rack set over a baking sheet lined with paper towels.
  • Enjoy!

8 yellow bell peppers (or a mixture, about 4 pounds) or 8 orange bell peppers (or a mixture, about 4 pounds)
2 tablespoons canola oil or 2 tablespoons olive oil, divided
1 medium yellow onion, chopped
4 garlic cloves, peeled and minced
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon chili powder
1 tablespoon ground cumin
16 ounces Italian turkey sausage (removed from casing) or 16 ounces lean ground turkey
16 ounces chunky salsa
2 cups Baby Spinach (rinsed and chopped or use 10 ounces frozen spinach that is thawed and squeezed to remove moisture)
1 cup quinoa (cooked)
1 cup brown rice (cooked)
1 cup low-fat cheddar cheese
2 large avocados, peeled and pit removed and sliced
1/2 cup low-fat Greek yogurt
1/4 cup fresh basil leaf, finely chopped

Steps:

  • Preheat oven to 375.
  • Cut the peppers in half lengthwise, slicing from the stem to the bottoms, leaving the stems intact.
  • Remove the white pithy ribs near stern and down length of inside.
  • Place the peppers in a shallow 13x9 inch baking dish.
  • Drizzle the peppers with 1 tablespoon of the oil.
  • Cover the dish with foil, and bake the peppers 15 to 20 minutes, until they start to soften.
  • Meanwhile, heat the remaining tablespoon of the oil in a large skillet over medium-high heat.
  • Add the onion, garlic, salt, black pepper, chili powder, and cumin and cook until all vegetables are softened, about 3 minutes.
  • Add the sausage to the skillet.
  • Cook, breaking it up with a slotted spoon or potato masher, until lightly browned, about 5 minutes.
  • Add the salsa and the spinach, and cook, stirring occasionally, about 5 minutes.
  • Remove the skillet from the heat and stir in the cooked brown rice and quinoa.
  • Carefully fill the pepper halves with the turkey mixture.
  • Cover the dish with foil, and bake until the filling is hot and the peppers are tender, 20 to 25 minutes.
  • Remove foil, and sprinkle the cheese over the top of the peppers.
  • Return to oven and bake, uncovered, until cheese is melted, about 7 to 10 minutes.
  • Top the peppers with a heaping tablespoon of the yogurt.
  • Place slices of the avocado on top of each pepper.
  • Sprinkle with the basil.
  • Serve immediately.

8 medium yellow, green or sweet red peppers
1-1/2 pounds lean ground beef (90% lean)
1 medium onion, minced
1/2 cup finely chopped cabbage

1 can (28 ounces) diced tomatoes, undrained
1/2 cup uncooked long-grain rice
1 tablespoon brown sugar

Steps:

  • Cut the tops off peppers and reserve. Cook peppers in boiling water until crisp-tender, about 2-3 minutes. Remove from water and rinse with cold water; set aside. Remove stems from pepper tops and chop enough of the tops to measure 1/3 cup. (Save remaining peppers for another use.), In a large skillet, brown ground beef over medium heat; drain if necessary. Add the onion, cabbage, carrot, zucchini and reserved chopped peppers; saute until tender. Add garlic; cook 1 minute longer., Stir in the tomatoes, rice, brown sugar, basil and pepper.
