1 Delissio Thin Crispy Crust Pizza (Hawaiian)
3 chicken thighs (boneless, skinless)
¼ cup teriyaki sauce (thick)
½ red pepper (thinly sliced)
½ green pepper (thinly sliced)
extra cheese if desired
2 green onions (sliced)

Steps:

  • Preheat grill to 375°F.
  • Brush chicken with teriyaki sauce and grill 3-4 minutes each side or until cooked through.
  • Slice chicken and top frozen pizza with sliced chicken, peppers and ½ of the green onion and cheese if using.
  • Place directly on the grill. Close lid and cook 8 minutes. Rotate 90° and cook an additional 4 minutes or until crust is golden and cheese is melted.
  • Remove from grill, cool 2-3 minutes. Top with remaining green onions and serve.

This has become a family favorite! The key to the delicious flavor is letting the chicken sit in the marinade overnight, and then letting the cooked chicken sit in the green onion-butter bath! Suggested sides would be steamed rice, green salad, and sliced fresh pineapple for a meal that will transport you to the islands!

1 ½ cups unsweetened pineapple juice
¾ cup low-sodium soy sauce
¾ cup brown sugar
3 cloves garlic, peeled and thinly sliced
1 (1/2 inch) piece fresh ginger, thinly sliced
4 pounds boneless, skinless chicken thighs, trimmed of fat
1 stick unsalted butter
3 green onions, including green tops, thinly sliced

Steps:

  • Whisk pineapple juice, soy sauce, brown sugar, garlic, and ginger together in a bowl until brown sugar has dissolved. Pour marinade into a resealable plastic bag. Add chicken thighs and coat with the marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator, 4 hours to overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Reduce heat to low on one burner of the preheated grill. Place oven-safe dish over the low burner; add butter and green onions to the dish and allow to slowly melt. Remove chicken from the marinade and shake off excess. Discard the remaining marinade. Grill chicken in batches over the medium burners, turning once, until juices run clear, about 10 minutes per batch.
  • When chicken is cooked, place each piece into the butter and onion "bath", turning a couple of times to ensure it is well coated. Continue to grill remaining chicken, adding each piece to the butter and onion "bath", pushing already-coated pieces to the side until all pieces have been coated.

2 boneless skinless chicken breasts
1/4 cup red onion, diced
1/4 cup chopped green pepper
1 -1 1/2 cup barbecue sauce
8 oz.can pineapple tidbits, drained
8 ounces shredded mozzarella cheese
1 ready made thin style pizza crust

Steps:

  • Warm up chicken with barbecue sauce then set aside.
  • Brush crust with olive oil then a light layer of barbecue sauce.
  • Top with 1/2 of the shredded cheese.
  • Next add the chicken, onions, peppers, and pineapple, and remaining shredded cheese.
  • Cook on a pizza pan in a 400* oven for about 10 minutes or until cheese is melted.

1 pound prepared pizza dough, at room temperature, halved
3 tablespoons extra-virgin olive oil
1 1/2 cups diced pineapple (from about 1/2 pineapple)
1 bunch scallions, cut into 1-to-2-inch pieces
1/4 pound deli-sliced ham
3/4 cup shredded white cheddar cheese (about 3 ounces)
3/4 cup shredded muenster cheese (about 3 ounces)

Steps:

  • Preheat a grill to medium. Shape each piece of pizza dough into a ball. Drizzle 1 tablespoon olive oil on each of 2 rimmed baking sheets, place 1 dough ball on each baking sheet and turn to coat in the oil. Place a metal cooling rack upside down on the grill perpendicular to the grill grates (or use a grill basket); brush the rack with the remaining 1 tablespoon olive oil. Working in batches, grill the pineapple, scallions and ham, turning as needed, until lightly charred, 5 to 8 minutes per batch; transfer to a plate as each batch is done. Cut the ham slices in half, if desired. Using tongs, remove the cooling rack from the grill. Pat and stretch or roll each dough ball into an approximately 8-by-12-inch oval. Carefully place each piece of dough directly on the grill and cook until marked and golden, about 5 minutes. Flip the crusts and top evenly with the cheese, ham, scallions and pineapple. Continue grilling until the cheese melts and the crust is cooked through, about 6 more minutes. (If the crust is browning too quickly, slide the pizzas to the outer edge of the grill.) Transfer the pizzas to a cutting board and cut into pieces.

½ pound skinless, boneless chicken breast halves
1 cup teriyaki marinade
1 cooking spray
1 (8 ounce) can pineapple tidbits, drained
¾ cup pizza sauce
1 (14 ounce) package refrigerated pizza crust
10 slices Canadian bacon, quartered
1 (8 ounce) package shredded mozzarella cheese
1 pinch dried oregano, or to taste

Steps:

  • Marinate chicken breasts in teriyaki marinade in the refrigerator for 1 hour.
  • Preheat the oven to 400 degrees F (200 degrees C). Lightly spray a 9x13-inch baking pan with cooking spray. Place marinated chicken on the prepared pan; discard excess marinade.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the oven and let cool slightly, about 10 minutes. Keep oven on.
  • Lay drained pineapple tidbits between paper towels to pick up excess juice.
  • Place pizza crust on a baking sheet and cover with sauce.
  • Dice cooled chicken into small pieces. Cover pizza sauce with Canadian bacon, then chicken pieces, then with pineapple. Sprinkle with mozzarella cheese and top with oregano.
  • Bake in the preheated oven until cheese is a light golden brown, 15 to 17 minutes. Remove from the oven and cut into triangles.

  • Preheat a grill to medium-high heat. Brush both sides of chicken lightly with 1 Tbsp of the olive oil and season both sides with salt and pepper. Grill until cooked through, rotating once halfway through cooking, and brushing with 3 Tbsp of the barbecue sauce during last 1 - 2 minutes of grilling. Remove from grill and set aside to cool 5 minutes.
  • Spread pizza dough out on a floured sheet of parchment paper over a pizza tray to a 12-inch round. In a mixing bowl whisk together remaining olive oil and garlic. Brush entire surface of dough with olive oil mixture and let rest 10 minutes.
  • Cut chicken into cubes. Brush dough with remaining barbecue sauce (1/2 cup + 1 Tbsp). Top with 1/3 of the mozzarella then top with chicken, pineapple, bacon and red onion. Sprinkle with remaining mozzarella and season with freshly ground black pepper.

  • To make pizza crust: Mix and combine water and yeast until looks like miso soup. Add mixture to flour, using a fork, stir mixture around until it becomes shaggy. Dump mixture out onto counter and knead until dough comes together and moist and slightly tacky. If dough is too wet and sticky, add 1 tablespoon of flour at a time. Transfer dough to a lightly oil mixing bowl. Cover loosely with a kitchen towel. Set dough aside for 15 minutes.
  • In the meantime grill pineapples until grill marks are nice and bown. Remove dough ball and place it between two pieces of lightly oiled parchment paper and roll it to 1/8inch thickness. Remove parchment paper from top. Mix and combine cheeses; set aside. Heat apricot jam to a thin spreading consistency. Spread apricot jam onto crust, layer with bbq sauce, all but 1/2 cup of cheese, grilled chicken, pineapples, red onions. Finally top with remaining 1/2 cup cheese. Use a pizza peel or the backside of baking sheet and transfer it to heated pizza stone.
  • Bake for 5 minutes and then carefully remove parchment from underneath the pizza with a pair tongs. Bake pizza for another 3 minutes. Remove pizza from oven and allow to cool slightly on a wire rack. *Serve with green onions and minced parsley.
