This is my family recipe for Chicken Katsu - Japanese style fried chicken. Can also be used to make Tonkatsu, just use pork cutlets instead of chicken. Serve with white rice and tonkatsu sauce.

4 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
salt and pepper to taste
2 tablespoons all-purpose flour
1 egg, beaten
1 cup panko bread crumbs
1 cup oil for frying, or as needed

Steps:

  • Season the chicken breasts on both sides with salt and pepper. Place the flour, egg and panko crumbs into separate shallow dishes. Coat the chicken breasts in flour, shaking off any excess. Dip them into the egg, and then press into the panko crumbs until well coated on both sides.
  • Heat 1/4 inch of oil in a large skillet over medium-high heat. Place chicken in the hot oil, and cook 3 or 4 minutes per side, or until golden brown.

A recipe for delicious Japanese fried chicken and an accompanying Tonkatsu sauce. Serve with your choice of shredded cabbage, rice, or even mashed potatoes.

½ cup Worcestershire sauce
¼ cup ketchup
2 tablespoons soy sauce
pepper to taste
2 cups vegetable oil, for deep-fat frying
½ cup all-purpose flour
½ cup panko bread crumbs
salt and pepper to taste
1 egg, beaten
2 skinless, boneless chicken breast halves - pounded to 1/4 inch thickness
1 green onion, thinly sliced

Steps:

  • For the sauce, stir together the Worcestershire sauce, ketchup, and soy sauce, and a pinch of pepper to taste. Set aside.
  • Heat oil in deep-fryer to 350 degrees F (175 degrees C).
  • Place flour and panko bread crumbs onto separate plates and season with salt and pepper. Place the beaten egg in a medium bowl. Dip flattened chicken pieces first into flour, then egg, and lastly bread crumbs.
  • Fry breaded chicken breasts in preheated oil until golden brown and no longer pink in center, about 8 minutes. Transfer to a paper towel-lined plate to absorb excess oil. Slice chicken into thin strips and top with a drizzle of sauce and a sprinkling of sliced green onions. Serve remaining sauce on the side for dipping.

This is a real favorite in my family. This was edited on 12/2/2019 to cut amount of oil in half.

2 lb boneless, skinless chicken breasts
2 Tbsp garlic salt
1/2 c flour
2 eggs, beaten
2 c panko bread crumbs
2 c cooking oil
1/3 c ketchup
1/4 c soy sauce
1/4 c sugar
1 1/2 tsp worcestershire sauce

Steps:

  • 1. Flatten chicken pieces into 1/4 inch thick pieces.
  • 2. Season chicken generously with garlic salt, ( season to taste) and let stand 15 to 30 minutes.
  • 3. Set up three dredging pans. Place flour in the first, beaten eggs in the second and panko flakes in the third.
  • 4. Heat about 2 inches of oil in a skillet to 350 degrees.
  • 5. Dredge chicken in flour, dip in eggs and coat with panko in that order.
  • 6. Fry chicken in batches until golden brown on both sides; drain on paper towels.
  • 7. To make katsu sauce, combine catsup, soy sauce, sugar, Worcestershire sauce and red pepper in a small bowl and set aside.
  • 8. Cut into one inch slices and serve hot with katsu sauce.

A condiment dipping sauce for Katsu Chicken, Hawaiian style deep fried chicken that is breaded with Panko bread crumbs or Tonkatsu, Japanese deep fried pork cutlet. The term "Tonkatsu" comes from the word "katsu" meaning cutlet and "tonkatsu" meaning breaded and fried cutlet. The savory, delicious sauce has a thick consistency, and this dish is great when accompanied by rice and/or shredded cabbage.

4 teaspoons ground dry mustard
1 1/2 teaspoons garlic powder
1 1/4 teaspoons ground black pepper
1/4 teaspoon ground white pepper
3 tablespoons japanese Worcestershire sauce
1/8 cup diced pineapple (optional)

Steps:

  • In a bowl, stir together the ketchup, mustard powder, garlic powder, pepper, Worcestershire sauce and pineapple (optional). Cover and refrigerate for at least 1 hour to blend the flavors before serving.
  • Store leftovers in refrigerator.

2 large eggs
3/4 c cornstarch
1/4 tsp ground pepper
1/4 tsp garlic powder
1 c water
15 - 20, 4 lb chicken thighs, boneless & skinless
1 lb panko bread crumbs
KATSU SAUCE
1/2 c worcestershire sauce
1 c ketchup
1 c sugar
2 1/2 c water
1/3 tsp salt
1/4 tsp chicken bouillon
1/4 tsp ground pepper
1/4 tsp garlic powder
2-3 dash(es) tabasco sauce

Steps:

  • 1. To make sauce: Combine all ingredients and bring to a boil. Add cornstarch dissolved in water to thicken. Chill and serve. **I would always make the sauce first to chill for a few hours before the chicken was ready (the sauce thickens in the refrigerator)***
  • 2. Open the chicken thighs and flatten. In a bowl, combine eggs, cornstarch, pepper, garlic powder, and water. In a separate bowl pour in your panko bread crumbs. First dip the chicken in the egg batter to coat, then dip chicken in the panko bread crumbs. Fry in oil (maximum 325 degrees) until brown and crispy.
  • 3. Cut chicken into strips and serve with sauce. Serve with a few scoops of hot, sticky, white rice and a scoop of macaroni salad for a true plate lunch special like L&L Hawaiian Barbecue! Serves 7-10.

Steps:

  • Open the chicken thighs and flatten with a rolling pin.
  • Combine eggs, cornstarch, salt, white pepper, garlic powder, and water to make a batter.
  • Coat chicken in the egg batter, then the roll in panko crumbs.
  • Fry in oil (maximum 325 degrees) until brown and crispy.
  • To make sauce:
  • Combine all ingredients and bring to a boil.
  • Add cornstarch dissolved in water to thicken. Chill and serve.
  • Cut chicken into strips and serve with sauce.

  • Slice the chicken breasts into thirds lengthwise. Cover with plastic wrap and pound them to a uniform thickness of 1/2 inch. The cleanest way to do this is to place the chicken in a ziplock bag with the air squeezed out. I was able to get three slices into a quart sized bag. When I was done I just stored them in the bag in the fridge until ready to use.
  • Make the egg wash for the chicken by combining the beaten egg, cornstarch, water, salt, pepper, and granulated garlic in a long pan. I used a glass loaf pan. Cover and refrigerate until ready to use. Stir just before using to incorporate the cornstarch which may have settled to the bottom. Place all the chicken slices into the egg wash at once, or one at a time if you prefer. It was easiest just to soak them all at once.
  • Pour the panko bread crumbs into a shallow pan. One at a time, pull the chicken pieces out of the egg wash and pat into the bread crumbs, coating both sides.
  • Fry the chicken pieces in a large skillet, preheated with oil to medium high. Use just about a half in of oil up the side of the pan. Cook the chicken until it is lightly golden brown then flip over and cook the other side. Don't crowd them in the pan or they won't get crunchy. Don't walk away. These cook fast and burn easily.

To cook chicken: Place the canola oil into a heavy gauge 10 inch pot and heat to 325 degrees. Fry the chicken in batches until golden, approximately 5 minutes. Test the first piece for doneness.
