HAWAIIAN LAU LAU

Categories     Hawaii Recipes

Time 4h

Number Of Ingredients 7

12 luau leaves
1 pound ti leaves
1 pound pork butt, cubed into 1/2-inch pieces
1/2 pound black cod, cubed into 1/2-inch pieces
1/2 pound purple Okinawan sweet potato, peeled and cubed (optional)
1/2 pound carrots, cubed (optional)
Hawaiian sea salt

Steps:

  • First, prep the two types of leaves. LUAU LEAVES: take the luau leaves and wash them thoroughly one by one. Chop off the bottom stem that extends past the bottom of the leaf. Chop that stem into 1/2-inch pieces and set aside. TI LEAVES: wash the ti leaves and pat dry. Remove the main/thickest vein that runs through the center of the ti leaf. Removing this vein allows the ti leave to be more pliable/easy to fold as you will be using it to wrap the fillings. Set aside.
  • At a clean workstation, stack 3-5 luau leaves on the counter. Arrange them so that the biggest leaf is on the bottom and the smallest leaf is on top.
  • In the center of the leaf, put in a few chunks of the pork butt and butterfish. Add 2-3 pieces each cubed carrots and purple Okinawan sweet potato, if using. Add several of the chopped luau leaf stems. Sprinkle over Hawaiian sea salt.
  • Use the luau leaves to fold and wrap all the fillings in a tight bundle.
  • Next, wrap the ti leaves around the luau leaf bundle. Use the ti leaf ends to tie a topknot. If the ends are too short, use a string to tie/secure the bundle.
  • Put the wrapped lau lau in a steamer. Steam for three to four hours till nice and tender. Remove the ti leaf (you can't eat the ti leaf), and serve! Ideally with rice and/or poi, chili pepper water and all your favorite Hawaiian side dishes like lomi lomi salmon and chicken long rice. Don't forget the kulolo for dessert ^_^

  • Grilled Pineapple Meatball Skewers. These delicious skewers take less than 20 minutes to prepare and cook. They’re so simple to make that even your kids can help if they enjoy cooking.
  • Fruit Kabobs. When I make finger foods for a party, I always try to find the ones that look the prettiest and take the least amount of effort to make.
  • Pineapple Upside Down Cupcakes. Making these tiny, beautiful cupcakes is so easy! Put a bit of brown sugar, some crushed pineapples, melted butter, and a cherry in a muffin tin.
  • Hawaiian Hot Dogs with Grilled Pineapple and Teriyaki Mayo. Even hot dogs taste better when they’re Hawaiian-style hot dogs. I’m not sure whose idea it was to pile pineapples, teriyaki mayo, peppers, and onions on top of hot dogs, but that person is a genius.
  • Aloha Burgers. It’s unbelievable how effortless it is to turn some foods from “regular” foods into “Hawaiian” recipes. Sometimes, it’s as simple as adding some teriyaki sauce and a slice of pineapple.
  • Spam Musubi. These tasty treats combine two unlikely things: Japanese rice balls (musubi) and Spam. Somehow, though, it works. The presentation is really what sells me on these.
  • Grilled Ham and Pineapple Kabobs. The secret to this recipe, too, is in the marinade. First, marinate your ham slices overnight in the ginger, brown sugar, fruit juice, and soy sauce mixture.
  • Hawaiian Salsa. I love colorful salsa! The more colors I can work into a salsa recipe, the happier with that recipe I’ll ultimately be. This one is one of my favorites, and I always serve it in the pineapple bowl as described.
  • Pineapple Cream Popsicles. Anything with the phrase “two-ingredient” in the title is something that I’m going to enjoy. These two-ingredient pineapple cream popsicles are no exception.
  • Bacon-Wrapped Pineapple Bites. If the thought of bacon-wrapped pineapple bites doesn’t make your mouth water a little, then I’m not sure what to think about you.
