1 pound (450g) ground beef
1/2 cup panko bread crumbs
1/2 cup sweet onion (, minced)
1 egg (, beaten)
1 teaspoon Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
vegetable oil (, for frying)
1 1/2 cup beef broth
2 tablespoons all-purpose flour
2 tablespoons butter
2 dashes Worcestershire sauce
salt and pepper (, to taste)
2 cups cooked white rice (, hot or warm)
4 eggs (, cooked sunny side up)

Steps:

  • The patties. Combine all the ingredients together and make 4 patties. Heat the oil in a skillet an fry the patties until desired doneness. I did like 4 minutes per side. Transfer to a plate.
  • The gravy. Use the same skillet you used for cooking the patties. Scrape up the browned bits of the meat. Melt the butter. Whisk in the flour and continue whisking until you get a light-brown paste. Slowly pour in the broth, whisking continually until the flour is combined with the broth. Bring to a boil, reduce to simmer, add the Worcestershire sauce and cook for 5 minutes more. Season to taste.
  • The assembly. Serve the patties over the cooked rice and top each patty with the fried egg. Pour the gravy over the top and enjoy!

I ate this at a sports bar/cafe on the big island of Hawaii. This is a local dish served many ways, but this version is my favorite. They usually make it with SPAM®. Also you can make this using leftover rice, pre-cooked burgers, and jarred sauce.

1 pound ground beef chuck
1 cup sliced onion
½ cup water
1 cup sliced mushrooms
1 (12 ounce) jar brown gravy (such as Heinz®)
4 eggs
4 cups cooked rice

Steps:

  • Prepare a large skillet with cooking spray and heat over medium heat.
  • Divide ground chuck into 4 equal portions; form into patties.
  • Fry patties in skillet until beginning to firm and are hot and slightly pink in the center, about 6 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Remove patties to a plate, retaining drippings in the skillet.
  • Stir onion and water into the reserved drippings. Reduce heat to low and cook until the onions are slightly softened, about 5 minutes. Stir mushrooms into the onion mixture; cook until mushrooms are cooked through, about 5 minutes more.
  • Pour gravy over the onion and mushroom mixture; stir. Cook until the gravy is hot, about 5 minutes. Gently lie patties into the gravy; simmer until reheated through.
  • While the patties simmer in gravy, prepare a separate skillet with cooking spray and heat over medium heat. Fry eggs in the hot skillet until the white is opaque but the yolk remains runny, 2 to 3 minutes.
  • Divide rice between 4 plates. Top each rice portion with a beef patty and top the patties each with an egg. Pour gravy equally over each portion.

Try this traditional Hawaiian 30-minute meal loaded with hamburger patties, rice, delicious mushroom gravy, and a fried egg.

1/2 peeled small diced sweet onion
2 finely minced cloves of garlic
2 pounds 80/20 ground beef
2 tablespoons soy sauce
2 teaspoons Worcestershire sauce
2 tablespoons oil
8 ounces sliced cremini mushrooms
3 tablespoons all-purpose flour
2 cups beef stock
5 eggs
5 cups cooked jasmine rice
¼ cups sliced green onions
sea salt and fresh cracked pepper to taste

Steps:

  • Add the onion, garlic, beef, 1 tablespoon of soy sauce, and Worcestershire sauce to a large bowl and mix until completely combined. Form into 5 patties and season on both sides with salt and pepper and set on a plate.
  • Add the oil to a very large frying pan over medium heat and once it begins to lightly smoke add the hamburger patties in and cook for 3-4 minutes per side or until well browned on each side. See doneness note.
  • Set the hamburger aside and drain off ½ of the oil used to cook the ground beef into a small frying pan and set the small pan aside.
  • In the large frying pan over medium heat add in the mushrooms and cook for 3 to 4 minutes or until lightly browned.
  • Add in the flour and stir it in until it is completely combined,
  • Pour in the beef stock, remaining 1 tablespoon of soy sauce, and cook for 3-4 more minutes over medium heat until it becomes thick like gravy.
  • Add back in the cooked meat patties and simmer over low heat.
  • Fry the eggs 1 at a time in the small frying pan in the rendered meat fat over medium heat for 30 seconds for a sunny-side-up egg.
  • Serve the beef patties and mushroom sauce over top of the cooked jasmine rice and top off with the fried egg and garnish with sliced green onions.

2 tbsp unsalted butter
1/2 medium sized sweet onion (optional
3/4 cup sliced mushroom (optional)
green onions (for garnishing)
cooked rice
1 1/2 lb ground beef
1 tbsp Worcestershire sauce
1 1/2 tsp seasoning salt
1 tsp garlic powder
1/2 tsp black pepper
1 1/2 cup beef stock
4 tsp shoyu (soy sauce)
1 tsp Worcestershire sauce
2 tsp ketchup
5 tsp cornstarch

Steps:

  • Mix together the ground beef, Worcestershire sauce, seasoning salt, garlic powder, and black pepper in a large bowl.
  • Start forming it into patties by grabbing a handful of meat and rolling it into a ball. Then press down to flatten it out. Smooth the edges so there isn't any cracks or jagged edges. Patties should come out to at least one inch thick. Try to keep the patties large since it will shrink when fried.
  • Heat a pan over medium heat. Fry each side of the patties for about 3-5 minutes or until well done.
  • Set each finished patty on a plate lined with paper towel to catch any extra grease.
  • Mix together the beef stock, shoyu, Worcestershire sauce, ketchup, and cornstarch. Whisk it until the cornstarch has come off of the bottom.
  • Using the same pan, melt one tablespoon of the butter to caramelize the onions for about a minute then fry the mushrooms for another minute or two. (It is optional to add the mushrooms and onions. If not, just skip to the next step.)
  • Melt the rest of the butter and add in the gravy mix to the pan. Keep stirring the gravy until it begins to thicken and simmer.
  • Melt a slice of butter and crack an egg on a frying pan.
  • Cook a sunny side up egg. (You can switch it up to your preference) Set aside
  • Scoop a generous serving of hot white rice on a plate. Layer it with one hamburger patty then drizzle on the gravy. Top it with the egg and garnish with green onions.
  • Serve it hot and enjoy!

Kosher salt and freshly ground pepper

6 ounces cremini mushrooms, sliced

1 cup low-sodium beef broth
1 tablespoon minced peeled fresh ginger
4 large eggs
4 Hawaiian hamburger buns, toasted

Steps:

  • Gently mix the ground beef, 1 tablespoon teriyaki sauce, 3/4 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Form into four 4 1/2-inch patties. Melt 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add the patties and cook until browned, about 3 minutes per side for medium. Transfer to a platter.
  • Add the mushrooms to the skillet and cook until browned, about 3 minutes. Sprinkle in the flour and stir until lightly toasted, about 1 minute. Whisk in the beef broth, ginger and remaining 2 teaspoons teriyaki sauce. Simmer over medium-high heat until reduced to a thick gravy, 3 to 5 minutes.
  • Meanwhile, heat the remaining 1 tablespoon butter in another large nonstick skillet over medium-high heat. Crack the eggs into the skillet, reduce the heat to medium and partially cover. Cook until the whites are set but the yolks are still runny, about 3 minutes. Season with salt and pepper.
  • Serve the burgers on the buns; top with the mushroom gravy and fried eggs; drizzle with Sriracha. Serve with pasta salad and pickles.

2 cups long grain rice
3 1/2 cups low-sodium chicken broth
1 pound ground beef (80/20 blend)
1/4 cup diced Maui onion
Kosher salt and freshly cracked black pepper
Canola oil
1 tablespoon unsalted butter
1/4 cup roughly chopped cremini mushrooms
1/4 cup diced Maui onion
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1 tablespoon cornstarch
Canola oil
4 large eggs
2 to 3 tablespoons chopped fresh flat-leaf parsley, for garnish, optional
1/4 cup seeded and diced Roma tomato, for garnish, optional

Steps:

  • For the rice: Wash the rice under cold running water until the water runs clear. In a medium saucepot over high heat, bring the chicken broth to boil. Add the rice, cover and reduce the heat to low for about 15 minutes. Remove from the heat and let stand for 5 minutes. (Alternatively, add both the rinsed rice and the chicken broth to a rice cooker and turn the machine on - it will keep the rice warm until ready to serve.) Fluff with a fork and cover. Keep warm until ready for use.
  • For the burgers: Mix the ground beef, onions and some salt and pepper in a large mixing bowl. Form 4 medium patties and set aside.
  • Set a large cast-iron pan over high heat. Add a drizzle of canola oil and set the patties in the pan. Cover pan with a lid (or a second pan) to seal in the moisture and ensure juicy patties. Cook until well browned on first side, 3 to 4 minutes. Then remove the lid, flip over, replace the lid and continue cooking to desired doneness, about 3 minutes for medium-rare. Remove the burgers and keep warm.
  • For the gravy: Add the butter to the pan with the drippings. Saute the mushrooms and onions until golden brown, about 5 minutes. Add the beef broth and Worcestershire sauce, bring to a boil and reduce down for 2 to 3 minutes.
  • In a separate bowl, mix the cornstarch with 1 tablespoons water to make a smooth paste. Slowly add into the gravy, stirring constantly until thickened. Season with salt and pepper. Cover and keep warm until ready for use.
  • For the eggs: Add some canola oil to a nonstick saute pan over medium heat. Crack in the eggs and cook sunny-side up, 3 to 4 minutes. Remove and keep warm. (You can flip the eggs over-easy if you want them cooked a little more.)
  • To serve: Place the cooked rice on a plate, place the burgers on top, then the eggs and finally the gravy. Garnish with parsley and tomato if desired.

People in Hawaii enjoy it for breakfast, lunch, dinner or any time in between. This version is adapted from "Aloha Kitchen: Recipes From Hawai'i," by Alana Kysar, a cookbook of Hawaiian classics.

1 pound ground beef, at least 15 to 20 percent fat
1 medium Maui or yellow onion, peeled (1/4 of the onion chopped; 3/4 sliced)
2 garlic cloves, peeled and finely grated
3 teaspoons Worcestershire sauce
1 teaspoon kosher salt, plus more as needed
1/2 teaspoon black pepper, plus more as needed
2 1/2 tablespoons neutral oil
8 ounces cremini mushrooms, cleaned and sliced (optional)
2 cups beef broth
2 teaspoons soy sauce
2 tablespoons cornstarch
4 cups steamed white rice
4 large eggs, fried, sunny side up or over easy
2 chopped scallions, for garnish

Steps:

  • In a large bowl, combine the beef, chopped onion, garlic, 1 1/2 teaspoons Worcestershire sauce, 1 teaspoon salt and 1/2 teaspoon pepper. Mix with your hands or a wooden spoon until just combined, being careful not to overmix. Form into four patties about 1/2-inch thick. Place the patties on a plate, cover with plastic wrap and transfer to the refrigerator for 20 minutes.
  • Meanwhile, heat 1 tablespoon oil in a large 12-inch skillet over medium. When the oil is hot and shimmering, add the sliced onion and sauté, stirring occasionally, until almost translucent, 5 to 7 minutes. Reduce the heat to low and continue cooking, stirring often, until soft and caramelized, about 10 minutes. Transfer to a bowl and set aside.
  • Add 1 tablespoon oil to the skillet and heat over medium. When the oil is hot, swirl the pan around to evenly coat it, then gently place the patties in the pan, spacing them out evenly. Cook until browned, about 4 minutes per side. Using a spatula, transfer patties to a clean plate to rest.
  • Add the remaining 1/2 tablespoon oil to the pan and heat over medium until hot. Add the mushrooms (if using) and sauté until tender, about 10 minutes. Season the mushrooms with salt and pepper, then add the caramelized onions, beef broth, soy sauce and the remaining 1 1/2 teaspoons Worcestershire sauce and bring to a simmer. Reduce the heat to medium-low.
  • Place the cornstarch in a small bowl. Add 2 tablespoons of the broth from the skillet and whisk until smooth. Stir the cornstarch slurry into the skillet and simmer until the sauce has thickened, 5 to 7 minutes.
  • Place 1 cup steamed rice on each plate and top each serving with one patty, then the gravy, a fried egg and chopped scallions.

Lived on Oahu for a few years, visited Lileha Bakery and fell in love with the Loco Moco, Spam Musubi, and Haupia pie. After making the very excellent beef patti Recipe #37413 by the papergoddess (Muchas Gracias Senora), I decided to make it into the Loco Moco.

2 cups rice
1 lb ground beef
0.5 (1 1/4 ounce) packet dry onion soup mix
1/2 cup dry breadcrumbs
1 egg
1 teaspoon Worcestershire sauce
1/8 teaspoon pepper
cooking spray
0.5 (1 1/4 ounce) packet dry onion soup mix
1 1/2 cups water
1/2 cup water (mixed with)
2 tablespoons flour
4 eggs
cooking spray
1/8 teaspoon pepper

Steps:

  • Start rice -Make Rice as per package directions.
  • Mix patty ingredients together until it holds together into 4 patties (don't mix too much).
  • Spray pan and fry patties until brown on both sides.
  • Add the remaining 1/2 packet of onion soup mix, and 1 1/2 cup water.
  • Bring to a boil and turn down the heat to a boil and simmer 20 minutes.
  • Remove the patties from the pan.
  • At this time if you think you will want more gravy you might consider adding an additional half packet of onion mix and an additional 2 cups of water.
  • Add the 2 tablespoons flour and 1/2c water. Whisk and boil until thickened to a gravy. If doubling the gravy than double the flour mixture as well.
  • Spray a shallow frying pan and fry each egg separately sunnyside up cooking with covered for 2 minutes.
  • Assemble the loco moco bottom layer of rice, then the patty, then the egg, finally top with gravy.
