HAWAIIAN PINEAPPLE FRIED RICE
Hawaiian pineapple fried rice with juicy pineapple chunks, spam, red bell peppers, carrots & peas. Stir fried with day old rice with a sweet & savory sauce!

- This recipe will cook fast so prepare the vegetables ahead of time. If you're using canned pineapple, be sure to drain out the liquid. Then, mix the sauce ingredients in a small bowl and set it aside.
- Heat a large nonstick pan over medium high heat and a teaspoon of the oil. Add the beaten eggs and scramble them. Then remove them from the pan and set it aside.
- Add another teaspoon of the cooking oil to the pan and add your choice of protein (spam, chicken, shrimp, tofu). When the protein is fully cooked, remove it from the heat and set it aside.
- Add the rest of the cooking oil to the pan and add the red bell peppers, onions, and carrots. Stir fry them together for 2 to 3 minutes.
- Next, add the cold pre-cooked rice and the sauce. Make sure to break apart any clumps of rice by pressing down with the flat side of your spatula or spoon. It's important to coat each grain of rice with the oil and sauce. Add in a teaspoon more oil if you find your rice is sticking together.
- Once your rice is fully separated and coated with the sauce, add the eggs, protein, and pineapple back into the pan. Toss everything together for 1 minute.
- Lastly add the frozen peas and toss it together until the peas turn bright green.
- Sprinkle scallions and sesame seeds on top. Optional: serve it in pineapple bowls.

- In a small bowl, whisk eggs. Heat a large nonstick skillet coated with cooking spray over medium heat. Add eggs. Cook and stir until set; remove from the skillet and keep warm., In the same skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in the rice, pineapple, shrimp, cashews, peas and green onions; heat through. Combine the soy sauce, hoisin sauce, sugar, sesame oil and pepper; stir into rice mixture. Stir in eggs.

MAKE SHEET PAN HAWAIIAN SHRIMP IN 20 MINUTES
This incredibly easy seafood dinner uses fresh pineapple and a teriyaki-style sauce for the classic sweet-and-tangy profile of Hawaiian shrimp. The pineapple also concentrates as it bakes and helps keep the rice mixture from becoming too dry. Rather than spreading the rice to the far edges of the sheet pan, keep it closer to the center and layer the vegetables and shrimp on top. This way their juices seep right into the rice, and the teriyaki drizzle coats every bite.

- Preheat oven to 450°F. Place a rimmed baking sheet in oven (do not remove pan while oven preheats).
- Place rice and oil in a bowl. Using your fingers, break apart rice and coat with oil. Carefully remove pan from oven; spread rice mixture in an even layer in center of pan. Bake in preheated oven for 5 minutes; stir. Top rice with pineapple and bell pepper; bake at 450°F for 5 minutes. Arrange shrimp over rice mixture; bake at 450°F until shrimp are done, about 6 minutes.
- Place soy sauce, sugar, and vinegar in a microwave-safe bowl. Microwave at high 45 seconds. Whisk until sugar dissolves. Drizzle over pan. Add black pepper; toss. Sprinkle with cilantro.

SPICY SHRIMP AND PINEAPPLE FRIED RICE

- For the shrimp: In a large bowl, combine the shrimp with the soy sauce, Ginger-Garlic Paste, sambal and cornstarch. Mix well to coat the shrimp. Cover and refrigerate for 15 minutes.
- For the egg crepes: In a bowl, whisk together the eggs, soy sauce and 1/4 teaspoon water. Set a medium nonstick skillet over medium-low heat and coat it lightly with peanut oil. Pour in half the egg mixture and swirl the pan so the egg coats the bottom. Cook over low heat until firm, then carefully turn with a spatula and finish cooking on the other side, about 45 seconds per side. Transfer the egg crepe to a plate to cool. Repeat with remaining egg mixture. When the crepes are cool enough to handle, stack, roll and slice them into thin julienne strips. Set aside until ready to use.
- For the fried rice: Set a large wok or large nonstick skillet over high heat and swirl in 1 tablespoon of the peanut oil. Add the marinated shrimp and stir fry until slightly pink, about 2 minutes. Transfer the shrimp to a plate and set aside. Reduce the heat to medium and add the remaining 2 tablespoons peanut oil. Add the onions, celery and Ginger-Garlic Paste and stir fry until softened and fragrant, about 3 minutes. Add the sesame oil and the rice and stir fry until hot and a little crispy, about 2 minutes, breaking up the rice with a wooden spoon as you go. Fold in the peas, edamame, pineapple and bean sprouts and continue to stir fry until the vegetables heated through, about 2 minutes more. Stir in the soy sauce and sambal. Fold in the cooked shrimp and the sliced egg crepe. Transfer to a serving platter and garnish with chopped scallions.
- Pulse the garlic and ginger in a food processor. With the processor running, stream in the canola oil and process to a paste. (You'll need 3 tablespoons of the paste for the above recipe. Refrigerate remaining paste for up to a week.)

- Mix soy sauce, curry powder and sugar. In a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry shrimp until they turn pink, 2-3 minutes. - Combine chicken, soy sauce, brown sugar, salt, Shaoxing rice wine, and 1 teaspoon cornstarch in a bowl. Mix and set aside to marinate for 15 minutes.
- Place shrimp in a separate bowl and season with salt, black pepper, and 1 teaspoon sesame oil. Stir in remaining 1 teaspoon cornstarch and set aside for 15 minutes.
- Remove 1/4 of the pineapple lengthways, leaving the green leaves intact for presentation, if you like; scoop out the pineapple flesh using a spoon. Chop pineapple flesh into small pieces and set aside. Place hollow pineapple on a baking tray.
- Preheat the oven to 350 degrees F (180 degrees C).

Everyone in Hawaii has their own version of fried rice. This is my own version of fried rice that the locals ate in Hawaii.

- Bring the rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is tender, and the liquid has been absorbed, 20 to 25 minutes. Let the rice cool completely.
- Heat 2 teaspoons of oil in a skillet over medium heat, and brown the luncheon meat and sausage. Set aside, and pour the beaten eggs into the hot skillet. Scramble the eggs, and set aside.
- Heat 2 tablespoons of oil in a large nonstick skillet over medium heat, and stir in the rice. Toss the rice with the hot oil until heated through and beginning to brown, about 2 minutes. Add the garlic powder, toss the rice for 1 more minute to develop the garlic taste, and stir in the luncheon meat, sausage, scrambled eggs, pineapple, and oyster sauce. Cook and stir until the oyster sauce coats the rice and other ingredients, 2 to 3 minutes, stir in the green onions, and serve.

- Cook the rice by following the directions and measurements on the box, but cut back just slightly on the water. For fried rice, the rice should be less moist and a little more firm. You should make this ahead of time so the rice has some time to cool as the rice is much easier to work with when cool or just a little warm. After the rice is cooled, used a fork and fluff the rice to break up any clumps. Dice the onion (we added onion to the original recipe. We would have used it if we’d had it!), scallions and pineapple and set aside.
- Beat the eggs. Next, scramble the eggs in a pan and break them up into chunks with your spatula and set it aside.
- At the condo, I did not have a large pan or wok so I did two batches. Heat the pan to high, add teaspoon of oil and toss in the scallion/onion and shrimp. Stir-fry for about 30 seconds. If you decide to add edamame or any other vegetables, add them in together with the shrimp.
- Add your rice to the mixture and give it a good stir and mix to let rice heat up. At this point, add salt, pepper, and soy sauce to taste. Continue to stir-fry for another couple of minutes.
