SLOW COOKER HAWAIIAN PULLED PORK
Take your taste buds to the tropics with this easy recipe for sweet and tangy Hawaiian pulled pork made in your slow cooker.

- Trim a majority of the fat from the pork shoulder and place it in the slow cooker.
- In a medium bowl, whisk together the soy sauce, chicken stock, pineapple juice, ketchup, brown sugar, garlic and ginger. Pour the mixture into the slow cooker, cover it and set it to LOW for 8 hours or HIGH for 5 hours.
- Once the pork shoulder is cooked through and reaches an internal temperature of at least 145°F, transfer it to a cutting board and pour half of the liquid from the slow cooker into a medium saucepan (discard the rest of the liquid).
- In a small bowl, whisk together the cornstarch with 3 tablespoons water.
- Once the sauce has come to a boil, whisk in the cornstarch mixture and continue boiling it until it is thick enough to coat the back of a spoon and is the consistency of syrup.
- Using two forks, shred the pork shoulder then transfer it to a large bowl. Add the pineapple then pour in the sauce and toss to combine.

HAWAIIAN PULLED PORK NACHOS

- Preheat oven to 400 degrees.
- Spread tortilla chips over a large cookie sheet. Top with pulled pork, jalapeno slices and cheese. Bake for about 10 minutes, keeping an eye on it and removing once the cheese is melted.
- Top with diced tomatoes, pineapple, mango and green onions. Drizzle sour cream over nachos and serve immediately.

- Set the Instant Pot in the sauté setting and add 1 tablespoon of avocado oil. Add the pork. sauté for 4 minutes or until golden brown on the outside. This may be done in batches.
- Add the chicken stock, the pineapple juice, soy sauce, ketchup, tomato paste, brown sugar, garlic, ginger and paprika.
- Close the lid and the vent and set on high pressure. Cook for 30 minutes. Let steam naturally release and open the lid.
- Remove the pork and place in a baking dish. With the help of 2 forks shred the pork.
- Set the Instant Pot on sauté and cook, stirring until the sauce has reduced and thickened. For thicker sauce dissolve the cornstarch in water to form a slurry. Add to the sauce and continue to stir.
- Add the pineapple chunks into the remaining sauce.
- Add sauce to the shredded pork 1/4 cup at a time until you get the consistency desired. Top with pineapple or serve on the side.
- Serve with the remaining sauce.

- Bring oil to 350 degrees F in a deep-fryer.
- Deep-fry the green plantains until crispy and bright yellow, about 3 minutes. Transfer to paper towels to absorb extra oil.
- Preheat the oven to 350 degrees F.
- Arrange the plantain chips on a large baking sheet. Top the plantain chips with the Pinto Beans, Pulled Pork and Red Chile Sauce. Add the cheese and bake until cheese melts, about 3 minutes. Garnish with chopped culantro and sriracha mayo. Serve.
- Pour 8 cups water in a saucepan and add the dry beans, salt, 1/2 cup onions, 1/2 cup bell peppers and 1 tablespoon sofrito. Bring to boil and cook over high heat, adding water as needed, until beans are soft, about 45 minutes.
- Add the oil to a separate saucepan, followed by the bacon, and then the pumpkin, tomato sauce, remaining 1/2 cup onions, 1/2 cup peppers and tablespoon sofrito. Bring to a boil and cook until all vegetables are cooked, about 5 minutes. Add the mixture to the beans and continue boiling for an additional 5 minutes.
- Preheat the oven to 250 degrees F.
- Mix garlic, salt, pepper and garlic salt in a bowl, then add oil. Rub all over the pork butt. Place the pork in a deep pan and cover with a pan lid or foil. Roast until tender, 5 to 6 hours. (If still not tender after 6 hours, add 1/2 cup water to the pan, then cover the pan and roast an additional 30 minutes.) Shred the meat with tongs.
- Mix the chile puree, garlic, oregano, some salt and 2 cups water in a saucepan and bring to boil. Reduce until sauce thickens, about 7 minutes.

- Place pork shoulder in slow cooker. Pour sauce over pork (no need to add water), cover, and cook on low for 7-8 hours. Remove pork to a medium bowl and shred using two forks. Return pulled pork to slow cooker and continue to cook on low for another 30 minutes to allow pork to soak up sauce.
- Heat tortillas a bit so they are warm and pliable. You can do this in the oven wrapped in foil or in microwave (wrapped in a damp paper towel), or here’s my favorite method: heat a cast iron skillet or other heavy-bottom nonstick skillet over medium-high heat. Cook tortilla on each side for about 30 seconds until tortillas puff and char a bit.
- Top each tortilla with pulled pork, pineapple habanero salsa, tangy cabbage slaw, and a sprinkle of cilantro and queso fresco. Eat immediately.
- Combine coleslaw mix, scallions, apple cider vinegar, olive oil, and sugar in a medium mixing bowl. Season with Kosher salt and freshly ground pepper and allow to sit for at least 20-30 minutes for flavors to meld.

- Place pork into the bottom of a large crock pot (I used a 6-quart) then season generously with garlic salt on all sides. Add can of chopped pineapple including the juices, 1/2 cup BBQ sauce, and sliced onion. Mix slightly then cover and cook on low for 7-9 hours, or until meat shreds easily. Shred then mix 2 cups pork with remaining 1/2 cup BBQ sauce (there will be extra pork - it freezes well!) Discard cooking liquid.
- Meanwhile, preheat oven to 400 degrees then stack tortillas and cut them into quarters with a sharp knife. Place wedges onto two baking sheets leaving at least 1/4" between each wedge. Spray tops with nonstick spray or mist with extra virgin oil then season with salt. Bake, rotating pans halfway through, for 8-10 minutes or until golden brown around the edges. Chips will crisp as they cool. (Can be made ahead of time - cool completely then store in an airtight container.)
- Layer half the chips into the bottom of a 12" oven-proof skillet then top with half the pork, cheese, pineapple, and chopped red onion. Repeat layers one more time then bake for 7-10 minutes, or until cheese is melted. Alternatively you could use a baking sheet instead of a skillet.
- While nachos are baking, combine avocados, garlic, lime juice, and salt in a bowl. Smash with a potato smasher or fork until desired consistency is reached. Fold in cilantro and pineapple tidbits. Serve Pineapple Guacamole with nachos, along with extra BBQ sauce for dipping.
