HAWAIIAN RICE WITH CRUSHED PINEAPPLE
Hawaiian Rice with Crushed Pineapple and lime makes a delicious Hawaiian Side Dish that is lightly sweet

Steps:
- Add 1 cup rice to a saucepan.
- Drain crushed pineapple in a 2 cup measuring cup.
- Fill remaining cup with water until you have 2 cups. Add to saucepan.
- Add crushed pineapple and butter. Heat on medium high until boiling.
- Once boiling, reduce heat to simmer and cover. Cook for 15-20 minutes or until rice is cooked.
- Remove from heat. Stir well. Add lime juice, zest and mix well. (optional sugar is added here as well)
- Serve topped with chopped cilantro.

- Spray a 13 by 9-inch baking pan with nonstick cooking spray.
- Melt butter in a large pot over medium heat. Quickly stir in the marshmallows and cook until completely melted. Remove from heat.
- Stir in cereal, and dried fruit and seeds if using, until well coated and combined. Spray a rubber spatula or wooden spoon with nonstick cooking spray and press mixture evenly into pan. Cool and cut into 2 by 2-inch squares or use cookie cutters to cut into playful shapes. Pack in an airtight container.
CRISPY HAWAIIAN FRIED RICE

- Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
- Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
- Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

- Preheat oven to 225 degrees F (110 degrees C).
- Melt the butter and sugar together in a small sauce pan over low heat. Remove from heat, then stir in the corn oil and corn syrup. Place the cereal on a large baking sheet. Pour the butter mixture over the cereal, then sprinkle the furikake while tossing the cereal to coat.
- Bake in the preheated oven until the cereal is dry, stirring every 15 minutes to keep cereal from browning too quickly. Allow to cool, then store in an airtight container.

Steps:
- Cook the egg with a little salt and pepper, set aside.
- Heat oils, add onions & carrots.
- Stir fry until onions become translucent (about 2 minutes).
- Add the rice and continue to cook until the rice starts turning a light gold color.
- Slice the cooked egg into strips, add with the cooked chicken stirring while cooking to warm it up.
- Remove from element, add soy sauce, pepper and pineapple, return to element turning up to high heat, stir fry vigorously for thirty more seconds. (Pineapple gets flavorless if stir fried too much).
- Note: Always use cold cooked rice for stir fry & break apart with wetted fingers any clumps.

- 1. Pour syrup from the can into a sauce pan. Bring to a boil for approximately five minutes.
- 2. Lower heat and stir in brown sugar untill it disolves completely. Add ginger and soy and allow to sit on very low heat to keep warm.
- 3. On a grill place pinapple rings and cook for about four minutes on one side and one minute on the other side. ( you can broil them in the oven, but you should baste the rings with the sauce before broiling to help pinapple turn golden brown) place pinapple rings on top of rice, pour sauce over rice.
- I highly recommend adding grilled scallops or shrimp to this dish. enjoy.
