BACON-WRAPPED SPAM BITES

Steps:
- Preheat oven to 400°. Cut bacon strips crosswise in half. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm., Wrap a bacon piece around each Spam cube; secure with a toothpick. Place in a 15x10x1-in. ungreased baking pan. Bake for 10 minutes. In a bowl, combine mustard, syrup and garlic; drizzle over bacon-wrapped Spam. Bake until bacon is crisp, 5-10 minutes longer.

SPAM MUSUBI
Spam Musubi is a popular snack in Hawaii. It is a type of sushi that has marinated cooked spam in sushi. I got this recipe from a local Hawaiian friend when I was living there.

Steps:
- Soak uncooked rice for 4 hours; drain and rinse.
- In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Stir in rice vinegar, and set aside to cool.
- In a separate bowl, stir together soy sauce, oyster sauce, and sugar until sugar is completely dissolved. Slice luncheon meat lengthwise into 10 slices, or to desired thickness, and marinate in sauce for 5 minutes.
- In a large skillet, heat oil over medium high heat. Cook slices for 2 minutes per side, or until lightly browned. Cut nori sheets in half and lay on a flat work surface. Place a rice press in the center of the sheet, and press rice tightly inside. Top with a slice of luncheon meat, and remove press. Wrap nori around rice mold, sealing edges with a small amount of water. (Rice may also be formed by hand in the shape of the meat slices, 1 inch thick.) Musubi may be served warm or chilled.

HAWAIIAN SWISS AND SPAM PULL APART BREAD RECIPE BY TASTY
We've added a crispy Spam to twist to Hawaiian cheese bread. This recipe pairs soft, sweet Hawaiian bread with gooey Swiss cheese and crispy Spam cubes for the perfect snack for sharing.

- Preheat the oven to 350°F (180°C). Line a baking sheet with foil and grease with nonstick spray.
- Add the Spam to a medium nonstick skillet over medium-high heat. Cook for 4-5 minutes, without disturbing, until the Spam cubes are golden brown on the bottom. Cook for another 4-5 minutes, stirring occasionally, or until most of the Spam is golden brown. Transfer to a bowl and set aside.
- Melt the butter to the same skillet over medium heat. Add the red onion, garlic, chives, and salt and stir to combine, then remove the pan from the heat.
- Using a sharp knife, carefully cut the bread about halfway through into 1-inch (2.54 cm) slices, stopping ½ inch (1.24 cm) from the bottom of the loaf to keep intact. Turn the loaf 90° and repeat cutting in the opposite direction.
- Stuff the Swiss cheese and Spam between the bread slices. Transfer the loaf to the prepared baking sheet and pour the onion and garlic butter evenly over the top.
- Grease another sheet of foil with nonstick spray, then cover the loaf. Bake for 30 minutes, or until the cheese is melted. Remove the foil and bake for another 5 minutes, until the cheese is bubbling and golden brown on top.
- Remove the bread from the oven and transfer to a serving platter. Serve hot.

HAWAIIAN SPAM® BITES
When challenged to develop a recipe using Spam® as a main ingredient for a campout, this is what I came up with. Tasty bite-size pillows filled with Spam® and pineapple are served with sweet chili sauce for dipping. These are super easy to prepare, but do take a bit of time to fill and shape the pillows.

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Mix grated luncheon meat, pineapple, bread crumbs, milk, egg, red pepper flakes, salt, black pepper, and white pepper together in a bowl. Spoon about 1 teaspoon meat-pineapple mixture onto the center of each wonton wrapper. Brush the edges of wrapper with water and fold in half diagonally over filling, sealing the edges together. Arrange wontons on the prepared baking sheet; brush each with olive oil.
- Bake in the preheated oven until lightly browned, 10 to 15 minutes.

HAWAIIAN SHOYU MUSUBI
Presenting an all-time favorite Hawaiian snack: shoyu musubi. Yep, it involves slices of Spam -- seared to crispy perfection, caramelized until it's salty-sweet and wrapped up in sushi rice and nori. Although it's often served like Japanese nigiri (with a big slice of Spam blanketing rice), this recipe makes cute little sushi roll-style bites instead.

- Cut the Spam into 6 slices and pat the slices dry with paper towels. Wash and dry the Spam can, then line the inside with a sheet of plastic wrap.
- Whisk together the soy sauce and brown sugar in a small bowl.
- Heat the oil in a large skillet over medium-high heat. Add the Spam slices and cook, flipping once, until evenly brown and crispy, about 3 minutes per side. Reduce the heat to medium. Add the soy sauce mixture to the skillet, making sure to scrape in all of the sugar, and quickly flip the Spam slices to coat them. Turn off the heat, leaving the Spam in the skillet to continue absorbing the sauce as it cools.
- Add 3 tablespoons of rice to the Spam can, dipping the tablespoon measure in cold water as needed to prevent the rice from sticking. Use the back of the tablespoon to pack the rice into a level, compact layer. Top the rice with a generous pinch of furikake and a slice of Spam. Add 3 more tablespoons of rice and pack the rice into an even layer. Grasp the plastic wrap to lift the rice-Spam stack out of the can.
- Place a sheet of nori on a clean work surface rough-side up. Transfer the rice-Spam stack to the center of the nori--so its length is perpendicular to the length of the nori. Tightly fold one end of the nori up over the rice-Spam stack. Dab water across the second end of the nori, tightly fold it up over the first end and press to seal the seam. Flip the musubi over so the seam side faces down. Repeat with the remaining rice, furikake, Spam slices and nori, replacing the plastic wrap with a new sheet every time.
- Dampen a sharp knife with cold water and carefully slice each roll crosswise into 4 pieces.

- Budae Jjigae, or “Army Base Stew” I worked in South Korea for 2 years and ate many great dishes there (most of which are waaaay too spicy for a guy raised in Hawaii).
- The Spamwich. Because of it’s rectangular-size and because it’s so easy to slice, SPAM can easily be used for a sandwich. You can make whatever type of sandwich you want with SPAM, but I highly recommend that you cook your SPAM first.
