SAIMIN (HAWAIIAN NOODLES)
Inspired by Japanese ramen, Chinese mian, and Filipino pancit, saimin was developed during Hawaii's plantation era. Japanese pot stickers, called gyoza, as well as Chinese wonton, may be substituted for or added to the dish's noodles for special occasions.

Steps:
- Cook fresh noodles in a large pot of boiling water for 3 minutes. Cook dried noodles in a large pot of boiling water per package directions. Drain noodles and divide among four soup bowls. Gyoza can be divided 3 to a bowl.
- While noodles cook, heat dashi over medium heat until hot but not boiling. Pour dashi over noodles/gyoza in soup bowls.
- Garnish soup with fish cake, pork, spinach, and onions, dividing ingredients evenly among bowls. Serve with additional toppings, if desired.

HAWAIIAN SAIMIN SOUP
An inexpensive noodle and broth soup, saimin is the favorite local fast food of the Hawaiian islands (also considered the national dish of Hawaii). It is considered the supreme comfort food of the Islands, eaten at any time of day. You can find this soup at snack bars, coffee shops, and even on the McDonald's menu (in Hawaii only). Saimin is basically the same thing as ramen, a Japanese noodle soup. In Hawaii, you will get the real thing, fresh, thin white noodles in a clear broth with green onions, kamaboko (fish cakes), and sometimes ham or char siu (pork). Some people add chicken, eggs, shrimp, and whatever else is desired. The Saimin is eaten very hot with chopsticks or spoons, and the broth is then drunk from the bowl. Do not be afraid to slurp, as there is simply no quiet way to eat Saimin. The prep time really varies, depending on what toppings you choose. Enjoy!

- In a large pot over medium-high heat, add water and salt; bring to a boil. Add soba noodles and boil 4 to 6 minutes until al dente. Remove from heat, drain, and rinse under warm, running water.
- In a large pot over medium-high heat, add chicken broth and ginger; bring just to a boil. Reduce heat to low. Add soy sauce and your favorite toppings; simmer for 5 minutes longer or until toppings are cooked. Remove from heat.
- Place cooked soba noodles in a large soup bowl; spoon broth mixture (with toppings) over the top and serve.
SPAM MUSUBI
Spam Musubi is a popular snack in Hawaii. It is a type of sushi that has marinated cooked spam in sushi. I got this recipe from a local Hawaiian friend when I was living there.

- Soak uncooked rice for 4 hours; drain and rinse.
- In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Stir in rice vinegar, and set aside to cool.
- In a separate bowl, stir together soy sauce, oyster sauce, and sugar until sugar is completely dissolved. Slice luncheon meat lengthwise into 10 slices, or to desired thickness, and marinate in sauce for 5 minutes.
- In a large skillet, heat oil over medium high heat. Cook slices for 2 minutes per side, or until lightly browned. Cut nori sheets in half and lay on a flat work surface. Place a rice press in the center of the sheet, and press rice tightly inside. Top with a slice of luncheon meat, and remove press. Wrap nori around rice mold, sealing edges with a small amount of water. (Rice may also be formed by hand in the shape of the meat slices, 1 inch thick.) Musubi may be served warm or chilled.

HAWAIIAN SPAM® BITES
When challenged to develop a recipe using Spam® as a main ingredient for a campout, this is what I came up with. Tasty bite-size pillows filled with Spam® and pineapple are served with sweet chili sauce for dipping. These are super easy to prepare, but do take a bit of time to fill and shape the pillows.

- Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
- Mix grated luncheon meat, pineapple, bread crumbs, milk, egg, red pepper flakes, salt, black pepper, and white pepper together in a bowl. Spoon about 1 teaspoon meat-pineapple mixture onto the center of each wonton wrapper. Brush the edges of wrapper with water and fold in half diagonally over filling, sealing the edges together. Arrange wontons on the prepared baking sheet; brush each with olive oil.
- Bake in the preheated oven until lightly browned, 10 to 15 minutes.

- Spam Musubi. One does not mention Spam recipes without mentioning the king of them all: the Spam musubi! Spam musubis make a great snack and can be found at almost all convenience stores in Hawaii.
- Spam Fried Rice. My favorite Spam recipe is fried rice. I love my fried rice recipe, which is based on Chinese-style fried rice and all my friends compliment it whenever I cook it for them.
- The Hot Hawaiian Breakfast: Spam, eggs, and rice. Spam, eggs, and rice is what I like to call “The Hot Hawaiian Breakfast.” This recipe is just a local interpretation of the sausage, egg, and hash brown breakfast that is popular on the mainland.
- Budae Jjigae, or “Army Base Stew” I worked in South Korea for 2 years and ate many great dishes there (most of which are waaaay too spicy for a guy raised in Hawaii).
- The Spamwich. Because of it’s rectangular-size and because it’s so easy to slice, SPAM can easily be used for a sandwich. You can make whatever type of sandwich you want with SPAM, but I highly recommend that you cook your SPAM first.
