Whether you're vegetarian or not, this black bean burger recipe will hit every spot. Made with black beans, oats, onion, and carrots, and spiced up with cumin, coriander, and cayenne, this burger is so good you'll wonder whether you ever want to go back to the carnivore version. Cook the patties on a pan covered in cooking spray, or use a slightly more generous pour of cooking oil for a crispier finish.

2 cans black beans, rinsed and drained
1 onion, minced
3 cloves garlic, minced
2 carrots, shredded
½ cup quick-cook oats
1 tablespoon soy sauce
1 tablespoon olive oil
1 teaspoon cumin
½ teaspoon coriander
½ teaspoon chili powder
¼ teaspoon cayenne pepper
salt, to taste
pepper, to taste
4 buns, we did not use vegan buns, but you can

Steps:

  • Heat one tablespoon of olive oil in a pan. Combine onions, garlic, salt, and pepper and cook until onions are translucent.
  • Add carrots, cumin, coriander, chili powder, and cayenne pepper until carrots are tender. Remove pan from heat.
  • In a bowl, mash the beans and then add the contents of the pan along with the soy sauce and quick oats.
  • Mix and form four patties. Place in freezer for 30 minutes to set.
  • Cook patties on a pan coated in cooking spray over medium heat, flipping halfway.
  • Use patties to create your dream veggie burger.
  • Enjoy!

1 cup canned tomato (200 g)
1 1/2 cups cooked kidney beans (360 g) or 1 1/2 cups pinto beans (360 g)
2 cups breadcrumbs, plus extra as needed (240 g)
1 tablespoon tahini
1 teaspoon ground cumin
2 tablespoons nutritional yeast
salt & freshly ground black pepper
4 hamburger buns
lettuce leaf, to garnish
tomatoes, slices to garnish
sliced onion, to garnish
dill pickle, to garnish

Steps:

  • Preheat the oven to 375ºF/190ºC/Gas Mark 5.
  • Using a food processor or high-speed blender, process all ingredients to a smooth purée. Divide the mixture into 4 equal portions and form each into a patty. If the mixture is too wet, add more breadcrumbs. Transfer the patties to a baking sheet and bake for 35 minutes, until well cooked.
  • Split the burger buns. Make a bed of salad leaves and tomato slices on the bottom half of each bun, then place a burger on top. Top the burger with your favorite sauces and cover with the top of the bun.

½ cup walnuts
½ cup rolled oats
1 tablespoon flax seeds
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1 pinch ground cinnamon
2 (15 ounce) cans black beans, rinsed and drained
½ cup mashed cooked sweet potato
1 egg, beaten
¼ cup minced onion
1 Fresno chile pepper, seeded and minced
1 small crimini mushroom, minced
3 cloves garlic, minced
½ teaspoon soy sauce
½ cup vegetable oil

Steps:

  • Process walnuts in a food processor until you have a coarse powder; add oats, flax seeds, cumin, paprika, salt, and ground cinnamon and process again until the oats are ground into a coarse powder. Put black beans and sweet potato into the processor bowl; process until smooth and transfer to a mixing bowl.
  • Stir egg, onion, Fresno chile, crimini mushroom, garlic, and soy sauce into the black bean mixture until smoothly integrated; shape into 6 patties.
  • Heat vegetable oil in a skillet over medium-high heat until shimmering. Fry patties in oil until a deep-brown crust forms, about 5 minutes per side.

This is based on a recipe from Mark Bittman's cookbook, "How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food". You can choose whatever beans you prefer. When made with chickpeas, they're golden brown and lovely; with black beans, much darker; with red, somewhere in between. Lentils give you a slightly grainy texture. If you start with beans you've cooked yourself-especially well-seasoned ones-the results will be even better. Like almost all veggie burger mixtures, these will hold together a little better if you refrigerate them first (ideally you'd refrigerate both before and after shaping, but that's only if you have the time). If you use the soy flakes rather than rolled oats, it will be higher in protein..

2 cups well-cooked beans (can be white, black, or red beans or chickpeas or lentils) or 14 ounces beans, drained (can be white, black, or red beans or chickpeas or lentils)
1 medium onion, quartered
1/2 cup soy flakes (preferably not instant) or 1/2 cup rolled oats (preferably not instant)
1 tablespoon mixed spice, of your choice (for example 1 tbs chili powder or a mix of cumin, smoked paprika, and chili flakes)
1 teaspoon minced garlic
salt & freshly ground black pepper
1 egg
bean-cooking liquid (or other liquid wine, cream, milk, water, ketchup, etc.) or stock (or other liquid wine, cream, milk, water, ketchup, etc.)
grapeseed oil or corn oil, any neutral oil, as needed

Steps:

  • Combine the beans, onion, oats, spices, salt, pepper, and egg in a food processor and pulse until chunky but not puréed, adding a little liquid if necessary (this is unlikely but not impossible) to produce a moist but not wet mixture. Let the mixture rest for a few minutes if time allows.
  • With wet hands, shape into whatever size patties you want and again let rest for a few minutes if time allows. (You can make the burger mixture or even shape the burgers up to a day or so in advance. Just cover tightly and refrigerate, then bring everything back to room temperature before cooking.) Film the bottom of a large nonstick or well-seasoned cast-iron skillet with oil and turn the heat to medium. A minute later, add the patties. Cook until nicely browned on one side, about 5 minutes; turn carefully and cook on the other side until firm and browned.
  • Serve on buns with the usual burger fixings. Or cool and refrigerate or freeze for later use.
