HAZELNUT BROWN BUTTER SAUCE
A sauce to accompany pasta or could be served over a nut crusted fish I suppose. I will be putting over butternut ravioli for an upcoming italian themed party. Came from a website entitled "Check it".

Steps:
- In a small saucepan, brown the butter over medium heat until it is nutty-smelling and golden-brown.
- Add the wine and hazelnuts and let reduce slightly.
- Serve over pasta or other dish of your choice.

ROASTED BUTTERNUT SQUASH RAVIOLI WITH SAGE, HAZELNUT AND BROWN BUTTER SAUCE
Steps:
- Preheat oven to 450 degrees F.
- Place squash on a baking sheet and roast until soft 30 to 40 minutes. Scoop out flesh and run though a food mill. Place the puree into a medium saucepan and cook over low heat until almost dry. Add the remaining ingredients and season with salt and pepper to taste. Lay a sheet of pasta dough on a lightly floured work surface and distribute a heaping teaspoon-sized portion of the filling at least 2 inches apart. Use your fingertip or a brush to moisten the edges of the pasta sheet with the egg wash. Carefully place a second sheet of the pasta dough on top of the first and press with your fingertips to separate the rows of filling. Repeat with the remaining dough. With a ravioli cutter or pastry wheel, cut along straight lines on the vertical and horizontal to form each ravioli square. Press the edges closed with your fingertips to seal well. Bring a large pot of salted water to a boil. Carefully drop in the ravioli and cook for about 5 minutes. Drain, plate and spoon butter sauce over and garnish with finely chopped chives.
- Melt butter in a medium saute pan over medium heat and cook until the foam subsides and the butter begins to brown, 3 to 4 minutes. Remove from the heat, stir in the hazelnuts and sage and season with salt and pepper to taste.
HAZELNUT BROWN BUTTER
Yield makes about 1/2 cup

- In a skillet over medium-high heat, toast the hazelnuts until deep brown in color, about 3 to 5 minutes. Remove from the skillet, finely chop, and return to the skillet. Add the anise seeds and allow them to toast for a few seconds, constantly shaking the pan to avoid burning. Add the butter and sage, and stir constantly. Season with the salt and pepper and continue to stir until the butter has a nutty brown color. Transfer the butter to a container, remove the sage leaves, and refrigerate. Once the butter has cooled, stir again to ensure that all the ingredients are evenly mixed. Use immediately or store in the refrigerator for 2 to 4 weeks.

- Preheat the oven to 375°F.
- Spread the hazelnuts on a baking sheet, and toast 8 to 10 minutes, until they're golden brown and smell nutty. When the nuts have cooled, chop them coarsely.
- Dissolve the sugar in the Frangelico in a small bowl.
- Cook the butter in a medium saucepan over medium heat about 5 minutes, shaking the pan occasionally, until the butter browns and smells nutty. Once the butter has browned, remove the pan from the heat and wait a minute or two. Add the nuts, salt, and the Frangelico mixture, making sure to scrape all the Frangelico and sugar into the pan. (Be careful, the butter might foam up a little, and it's very hot.)
