The stout-based batter on these onion rings makes them much more flavorful. Throw in a little spice, some tangy mustard, a touch of honey for sweetness, and the package is complete.

4 to 6 cups canola oil, for frying
2 large onions
2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon baking powder
1/2 tablespoon pimentón or hot paprika
1 (14.9-ounce) can of Guinness
2 tablespoons Dijon mustard
1 teaspoon honey
Kosher salt

Steps:

  • Fill pot with oil 1 1/2 inches deep. Heat oil over medium-high to 375°F. Prepare a baking sheet lined with paper towels and a wire rack for finished onion rings to drain. While oil is heating, trim ends from onions, peel, and cut crosswise into 1/2 inch thick rings. Gently separate rings, discarding innermost rings and broken pieces.
  • In a large bowl, whisk flour, cornstarch, baking powder, and pimenton. In a small bowl, whisk together beer, mustard, and honey. Add wet ingredients to dry, stirring well to combine. Dip onion rings into batter a few at time, turning to coat thoroughly. Shake off excess batter and carefully lower into hot oil. Cook until dark golden brown on each side, 2-4 minutes, turning halfway through. Remove with a wire strainer to prepared wire rack, sprinkle lightly with salt while hot.
  • Continue to fry onion rings, pausing in between batches to allow oil to return to 375°F. Serve immediately. Allow oil to cool completely before straining and storing.

2 cups all-purpose flour
2 1/4 teaspoons granulated garlic
1 1/2 teaspoons cayenne pepper
Kosher salt and freshly ground black pepper
1 cup buttermilk
1 cup milk
1/4 cup stout beer, such as Guinness
2 jumbo yellow onions, cut into 1/4-inch rings
Vegetable oil, for deep-frying

Steps:

  • Whisk together the flour, granulated garlic, cayenne and 1 tablespoon each salt and black pepper in a large bowl until well blended. In a separate large bowl, whisk together the buttermilk, milk and beer.
  • Dunk the onion rings in the beer mixture and then toss in the flour mixture to coat evenly. Shake off the excess flour and lay the rings on a baking sheet. Let sit for 30 minutes.
  • Meanwhile, fill a heavy pot with 3 inches of vegetable oil and heat to 350 degrees F. Sift the flour mixture to remove any clumps.
  • Dunk the onions a second time in the buttermilk and toss in the flour. Shake off any excess flour before dropping the rings into the hot oil. Fry until golden, 1 to 2 minutes per side. Drain on paper towels. Serve with your favorite dipping sauce.

5 fluid ounces Guinness stout

Steps:

  • Sift the flour and garlic powder into a bowl.
  • Beat to a smooth batter with unbeaten egg, butter and Guinness.
  • Dredge the onion rings in the batter to coat them and place them, a few at a time, in a frying basket and fry in hot oil or fat (350°F/180°C) for about a minute or two until the batter is golden brown.

2 large sweet onions, sliced into 1/2-inch-thick rounds (such as Vidalia)
3 cups beer (two 12-ounce bottles, preferably an ale or lager like Bass or Sam Adams)
2 teaspoons malt vinegar (cider vinegar can be substituted)
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 quarts peanut oil or 2 quarts vegetable oil
3/4 cup unbleached all-purpose flour
3/4 cup cornstarch
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Place the onion rounds, 2 cups of beer, the vinegar, 1/2 teaspoon salt, and 1/2 teaspoon pepper in a large zip-lock plastic bag; refrigerate 30 minutes or up to 2 hours (do NOT soak the onions longer than 2 hours or they will turn mushy).
  • Heat the oil in a Dutch oven over medium-high heat to 350 degrees. (Use an instant-read thermometer that registers high heat, or clip a candy/deep-fat thermometer onto the side of the pot.) While the oil is heating, combine the flour, cornstarch, baking soda, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Slowly whisk in 3/4 cup beer until just combined (some lumps will remain). Whisk in the remaining 1/4 cup of beer as needed, 1 tablespoon at a time, until the batter falls from the whisk in a steady stream and leaves a trail across the surface of the batter.
  • Adjust an oven rack to the middle position and preheat the oven to 200 degrees. Remove the onions from the refrigerator and pour off the liquid. Pat the onion rounds dry with paper towels and separate them into rings. Transfer one-third of the rings to the batter. One at a time, carefully transfer the battered rings to the oil. Fry until the rings are golden brown and crisp, about 5 minutes, flipping halfway through frying. Drain the rings on a paper towel-lined baking sheet, season with salt and pepper to taste, and transfer to the warm oven. Return the oil to 350 degrees and repeat twice more with the remaining rings and batter.
  • Serve and enjoy!
