CURRIED PUMPKIN, CARROT AND CHICKPEA SOUP



Curried Pumpkin, Carrot and Chickpea Soup image

Number Of Ingredients 13

1 clove garlic, minced
about 1/3 cup chopped onion
about 2 teaspoons minced fresh ginger (or 1/4 tsp powdered ginger)
4 carrots, scraped and diced
1 tbsp Olive Oil
2 tbsp Curry Powder
2 tsp Cumin
3 cups water + 1 more cup
1 cup pureed pumpkin
1 1/2 cup or so of chickpeas, either home cooked or from a can (drained and rinsed)
2 tsp fresh lemon juice
1/8 to 1/4 tsp cayenne powder, depending on how hot you like it
2 1/4 tsp salt (add 2 tsp if you use canned salted chickpeas).

Steps:

  • Roughly mash the chickpeas with a kitchen mallet or the bottom of a glass.
  • Heat a soup pot. Add olive oil and stir in garlic, onion, ginger and carrots. Saute for 5-6 minutes. Stir in curry powder and cumin to coat vegetables. Stir around for about a minute. Add 3 cups of water. Stir and lower heat to simmer and cook for about 1/2 hour or until the carrots are soft.
  • Remove from heat and puree with an immersion blender or transfer to a regular blender. Add pumpkin and chickpeas and extra cup of water if needed. Heat up on low-med heat. Add lemon juice, cayenne and salt to taste.
  • Serve with a dollop of Greek yogurt or sour cream.
  • Leftovers keep for a few days in the fridge or can be frozen without the yogurt or sour cream.

1 tablespoon extra virgin olive oil, 1 turn of the pan
2 tablespoons butter
1 medium onion, chopped
1 1/2 pounds packaged baby carrots, from produce section
6 cups chicken stock, available on soup aisle
1 tablespoon mild curry paste or 1 1/2 tablespoons curry powder
1/4 to 1/2 teaspoon ground cayenne pepper
Coarse salt
1 cup sour cream
Plastic condiment bottle or medium plastic food storage bag
6 blades fresh chives, cut into 1-inch pieces

Steps:

  • Preheat medium pot over medium high heat. Add olive oil, butter, onions and carrots and saute 5 minutes. Add 4 cups chicken stock, curry and cayenne, and about 1 teaspoon salt to the pot. Bring to a boil, cover and cook until carrots are very tender, about 15 minutes. Place pot on a trivet next to food processor. Process soup in 2 or 3 small batches until soup is smooth and carrots are fully pureed. Transfer processed soup into a large bowl as you work to make room for more soup in the food processor. Return completed soup to the soup pot and place back over low heat. If the soup is too thick, add remaining stock, up to 2 cups, to achieve desired consistency. Adjust seasonings. Place sour cream in a plastic condiment squeeze bottle or into a medium food storage bag. Cut a very small hole in the corner of the bag with scissors. Ladle soup into bowls and squirt a swirl of sour cream around the bowl from the center out to the rim. Drag a toothpick from the center of the bowls out to the edges, forming a spider web design on soup. Pile a few pieces of cut chives at the center of each bowl to resemble green spiders in their webs! Cool!

1 onion, diced

1 2-inch piece fresh ginger, minced
2 heaping teaspoons curry
1 Hokkaido pumpkin about 2 lbs, peeled and chopped into 1 inch pieces (approximately 2 pounds)
5 to 6 small potatoes, diced
5 to 6 carrots, peeled and chopped into 1 inch pieces
1 container vegetable stock
Salt and pepper to taste
1 can coconut milk

Steps:

  • Heat large soup pot at medium-high heat. Add coconut oil and onion, sautée until translucent. Add garlic, ginger and curry cook for 2 minutes. Add pumpkin, potatoes, carrots and cook for 3 to 5 minutes. Add vegetable stock. Bring to a boil. Cover and simmer 20 to 25 minutes, until vegetables are soft and tender. Turn off heat and purée with an immersion blender. Season with salt and pepper throughout adding ingredients. Add coconut milk and stir. Reheat before serving and enjoy!

Coarse salt and ground pepper
2 cans (14 1/2 ounces each) reduced-sodium chicken broth (about 3 1/2 cups)
2 pounds carrots, peeled and cut into 1-inch chunks
1 to 2 tablespoons fresh lemon juice
2 tablespoons coarsely chopped fresh cilantro, for garnish (optional)

Steps:

  • Heat butter in a Dutch oven or large (4- to 5-quart) saucepan over medium heat. Add onion, curry powder, 2 teaspoons salt, and 1/4 teaspoon pepper. Cook, stirring occasionally, until onion is soft, about 5 minutes.

Two 15-ounce cans pumpkin puree
3 cups vegetable stock
1 cup coconut milk
1 tablespoon brown sugar
1/2 teaspoon ground cinnamon
1 cup roasted pumpkin seeds
1/4 cup chopped fresh cilantro
1/4 cup chopped fresh parsley
1 tablespoon olive oil
Pinch of turmeric
Pinch of kosher salt

Steps:

  • Heat the olive oil in a large, heavy-bottomed pot over a medium heat. When the oil is hot, add the onion, garlic and ginger and stir. Add the curry powder, salt and pepper and cook, stirring, until the vegetables begin to soften, 2 to 3 minutes.
  • Add the pumpkin puree, vegetable stock, coconut milk, brown sugar and cinnamon. Stirring, bring to a simmer and cook for 5 minutes, allowing all the flavors to come together.
  • Meanwhile, mix the pumpkin seeds, cilantro, parsley, olive oil, turmeric and salt together in a small bowl.

2 onions, sliced
2 leeks, trimmed, cleaned, and thinly sliced
1 carrot, peeled and sliced
1 Granny Smith apple, peeled, cored, and sliced
1 tablespoon mild curry powder
1/4 cinnamon stick, 2 cloves, and 3 allspice berries, tied in cheesecloth to make a sachet
1 pound butternut squash, peeled, seeded, and sliced
1 pound peeled pie pumpkin, sliced
1 sweet potato, peeled and sliced
6 cups water, preferably spring water
1 cup heavy cream
Snipped chives for garnish

Steps:

  • Melt the butter in a large saucepan over medium heat.
  • Add the onions, leeks, carrot, and apple and sauté over medium-low heat until the onions are translucent, about 15 minutes. Add the curry, spice sachet, and the remaining vegetables. Pour in the water and bring to a gentle simmer, for about 45 minutes, until the vegetables are very soft.
  • Remove the spice sachet and puree the vegetable mixture in a food mill. To give the soup a silky-smooth texture, pass through a fine-mesh strainer. Transfer the soup to a saucepan. Add the cream and taste and adjust the seasoning. Heat gently just until warmed through.
  • Ladle the soup into bowls and garnish with the chives.
