HEALTHIER ALFREDO SAUCE WITH SHRIMP AND BROCCOLI
Heavy cream and all but 1 tablespoon of butter are omitted from this dish, and cream cheese and Greek yogurt are used in their place. A slice of bacon is used to add some richness and a smoky aroma, but not a ton of fat. Serve with sauteed zucchini noodles, pasta, or rice.

Steps:
- Place bacon in a large frying pan and cook over medium-high heat, stirring occasionally, until mostly but not fully cooked, about 6 minutes. Reduce heat to medium, add broccoli, and saute until bright green and crisp-tender, 3 to 5 minutes. Pour broccoli and bacon into a bowl lined with a paper towel to absorb excess oil; discard paper towel and toss broccoli mixture with lemon juice.
- Heat olive oil and butter in a deep saucepan over medium heat until bubbling. Whisk in flour to create a roux; continue whisking until mixture turns golden brown, about 3 minutes. Slowly whisk in milk until smooth. Reduce heat to low, add cream cheese, and whisk until no lumps remain. Stir in chicken broth, increase heat to medium, and simmer until thick, 5 to 7 minutes.
- Add 3/4 cup Parmesan cheese and Italian cheese; stir until incorporated. Stir in Greek yogurt. Add shrimp and cook until bright pink on the outside and the meat is opaque, 3 to 4 minutes. Add garlic powder, Italian seasoning, salt, and pepper.
- Remove from heat and stir in broccoli-bacon mixture. Sprinkle with remaining Parmesan and garnish with parsley.

- Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute shrimp and garlic in butter until shrimp turn pink. Remove and set aside., In the same skillet, combine the cream cheese, milk and Parmesan cheese; cook and stir until cheeses are melted and mixture is smooth., Place 1 in. of water in a saucepan; add broccoli. Bring to a boil. Reduce heat; cover and simmer for 1-2 minutes or until tender. Drain. Stir the broccoli, shrimp, salt and pepper into cheese sauce; heat through. Drain fettuccine; top with shrimp mixture.

EASY SHRIMP ALFREDO WITH BROCCOLI
Steps:
- Bring a large pot of water to boil. Meanwhile, rinse shrimp with cold water and lay on paper towels to absorb excess water. Cook fettuccini according to package directions. While the pasta is cooking, microwave broccoli according to package directions until desired doneness, drain off any excess liquid.
- Pat the shrimp dry with paper towel. Pour Alfredo sauce into a saucepan and set over low heat, stir occasionally. Heat 2 tablespoons of olive oil in skillet, add shrimp, sprinkle with garlic powder and salt, saute for 2 minutes. Add broccoli florets and continue to cook until the shrimp are pink and cooked through. Sprinkle with parmesan cheese and remove from heat. Drain pasta and toss with remaining olive oil.
- Dividing all ingredients evenly, put a serving of pasta on each plate, top with sauce, then shrimp and broccoli, sprinkle with additional parmesan cheese, if desired.

Steps:
- Begin boiling the water for the pasta.
- Melt butter in a large (about 10") skillet until sizzling.
- Add pasta to the water.
- Add onion, shrimp, bell pepper, garlic, salt and pepper to the skillet.
- Cook over medium heat, stirring occasionally, until the shrimp turn pink (about 6-7 minutes).
- While the shrimp and pasta are cooking, put all ingredients for the alfredo sauce (except pepper) in a blender and puree until smooth.
- Pour contents of blender in a small saucepan over medium heat until it just starts to boil.
- Lower the alfredo sauce to low and stir frequently, adding pepper if desired.
- Strain the pasta if fully cooked and return to the saucepan.
- Add the shrimp mixture to the pasta, then pour the alfredo sauce on top. Mix well.
- If extra flavor is desired, feel free to add any of the cajun spices listed above.
