1 cup rolled oats
¾ cup creamy peanut butter
½ cup brown sugar
1 cup whole wheat flour (or all purpose flour)
1 teaspoon baking soda
¼ teaspoon salt
½ cup milk
1 teaspoon vanilla
⅓ cup chocolate chips

Steps:

  • Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
  • Mix the rolled oats, peanut butter, and brown sugar in a mixer on high until combined.
  • Add the milk and vanilla and mix until combined.
  • Combine the flour, baking soda, and salt in a small bowl and add to the mixture.
  • Fold in the chocolate chips.
  • Press mixture into the lined pan and bake for 18-20 minutes.

These peanut butter oatmeal bars are the best trick! They're no bake, easy and healthy; and the flavor is out of this world.

Number Of Ingredients 6

1 cup creamy peanut butter (no sugar added, or sunflower butter for nut free)
1/2 cup honey (or 1/2 cup agave syrup* for vegan)
4 cups Old Fashioned rolled oats
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
1 to 2 ounces dark chocolate (1/8 to 1/4 cup chocolate chips)

Steps:

  • Mix together the peanut butter, honey, oats, salt and cinnamon in a bowl. (If the mixture seems dry and not sticky, add a bit more peanut butter and/ or honey; different peanut butter brands perform differently.)
  • Add a sheet of parchment paper to a 9 x 9 pan. Place the ingredients in the pan and press it into an even layer. Use a small glass to roll over the top to get it smooth.
  • Freeze the bars for 10 minutes. Remove the pan from the freezer and use the parchment to lift it out of the pan. Cut into 20 rectangles (4 x 5 rows) or 40 small rectangles.
  • In the microwave with short intervals or over a double boiler, melt the chocolate, stirring until it comes together into a glossy chocolate. If using the microwave, use short bursts of 10 seconds or so and stir after each: be careful not to overheat the chocolate or get any water in the chocolate, which will cause it to seize up. When melted, drizzle over the bars and allow to cool. You can eat right away, or refrigerate for about 1 hour for a more solid texture. Store refrigerated for up to 2 weeks (or frozen for several months, placing wax paper between the layers).

Steps:

  • In a small saucepan, combine peanut butter and honey. Cook and stir over medium-low heat until melted and blended. Remove from heat; stir in oats. Spread into a greased 9-in. square pan; press lightly. Cool to room temperature; cover and chill for 1 hour.

These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

1 cup butter or 1 cup margarine, softened
1 cup brown sugar, well packed
1 cup white sugar
1 tablespoon vanilla (can use 1 tablespoon maple syrup or 2 teaspoons maple extract)
2 large eggs
1 1/4 cups peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
2 cups oatmeal (I use half quick cooking and regular oats)
2 cups semi-sweet chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
  • Add in the peanut butter and beat until combined.
  • Add in eggs and beat until combined.
  • In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
  • Mix in chocolate chips.
  • Transfer and spread into prepared baking dish.
  • Bake for 22-25 minutes or until JUST set (do not overbake).
  • Cool then cut into squares.

1 cup butter, cut up (2 sticks)
4 cups old fashioned oats, uncooked
1 cup packed brown sugar
1/2 cup light corn syrup
1 cup semi-sweet chocolate chips or 1 cup milk chocolate chips
3/4 cup creamy peanut butter

Steps:

  • Preheat oven to 350°; grease 15 1/2" by 10 1/2" jelly-roll pan.
  • In microwave-safe large bowl heat butter in microwave oven on High until butter melts, stirring once.
  • Stir in oats, sugar, and corn syrup until well combined.
  • With fingers, press oat mixture evenly into prepared pan.
  • Bake 20 to 23 minutes or until edges are set and center is slightly jiggly; cool completely on wire rack.
  • In a 1-quart sauce pan , heat chocolate chips and peanut butter over low heat until chocolate is melts and mixture is smooth, stirring frequently.
  • Spread chocolate mixture evenly over oat crust.
  • Cover loosely with plastic wrap and refrigerate 1 hour or until chocolate is firm.
  • Cut lengthwise into 4 strips, then cut each strip crosswise into 10 bars--40 bars.
  • If bars are difficult to remove from pan; place pan on a very hot damp towel for a few minutes to warm slightly.
  • Store bars in covered container, with wax paper between layers, in refrigerator up to 1 month or in freezer up to 3 months.

1 1/2 cups quick-cooking oats
1/4 cup packed light brown sugar
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup milk
1 large egg, lightly beaten
1 large mashed banana
1/4 cup creamy peanut butter

Steps:

  • Mix together the quick cooking oats, light brown sugar, baking powder, kosher salt and ground cinnamon.
  • Add in the vanilla extract, milk and egg. Mix the ingredients together.
  • Then add in the mashed banana and peanut butter. Combine all of the ingredients.
  • Pour the mixture into a lightly greased 8 by 8 inch metal baking pan. Bake at 350 F degrees for 20 minutes.
  • Cut into squares and enjoy!

1 cup quick oats
1 cup unsweetened shredded coconut
½ cup crushed pretzels
dash of salt
½ cup Honey
½ cup natural peanut butter
½ cup sugar free chocolate chips (melted)
1 Tablespoon coconut oil (melted)

Steps:

  • In a large bowl, combine oats, coconut, crushed pretzels and salt.
  • In another bowl, combine honey and peanut butter (if you find it hard to mix them together, feel free to warm them in the microwave for 10-12 seconds) and pour over dry ingredients. Gently mix together until completely combined.
  • Line an 8 x 8 inch baking dish with parchment paper. Pour mixture into pan and press firmly with a piece of folded over parchment paper to avoid sticking to your hands (or spray your hands with nonstick cooking spray and push mixture into place).
  • Place pan in freezer for about 30 minutes or until bars are firm.
  • Mix melted chocolate chips and coconut oil together in the microwave or on the stove top.
  • Remove bars from the freezer. Spread melted chocolate over the bars and cut into 12 pieces.

ICING:
1/2 cup confectioners' sugar

Steps:

  • In a large bowl, cream the butter, sugars and peanut butter until light and fluffy. Beat in egg and vanilla. Combine the flour, oats, baking soda and salt; gradually beat into creamed mixture and mix well. Spread into a greased 13x9-in. baking pan.
