Steps:
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a casserole dish with cooking spray.
- Melt margarine in a saucepan over medium heat. Cook and stir onion and garlic in hot margarine until softened, about 5 minutes.
- Stir flour, mustard, and pepper into onions and cook for 30 seconds. Gradually pour in milk, stirring constantly until sauce thickens. Remove from heat and stir grated Cheddar cheese into the sauce until cheese is completely melted.
- Mix macaroni, cottage cheese, and Cheddar cheese sauce together in a bowl; pour into prepared casserole dish and top with bread crumbs and Parmesan cheese.
- Bake in the preheated oven until cheese is melted and sauce is bubbling, 20 minutes.

HEALTHIER HOMEMADE MAC AND CHEESE
To make this rich mac and cheese recipe healthier we use whole wheat bread crumbs, low-fat milk and cheese, whole wheat noodles, and reduced the amount of butter. Serve with a salad for a healthy meatless dinner.

- Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
- Melt 2 tablespoons butter in a saucepan over medium heat. Stir in flour to make a roux. Slowly add milk to roux, stirring constantly. Stir in Cheddar and Parmesan cheeses and cook over low heat until cheese is melted and sauce is thick, about 3 minutes. Place macaroni in large baking dish and pour sauce over macaroni. Stir well.
- Melt 2 tablespoons butter in a skillet over medium heat. Add breadcrumbs and stir until butter is absorbed, 2 to 3 minutes. Spread over macaroni to cover. Sprinkle with paprika.
- Bake in preheated oven until cheese sauce is hot and breadcrumbs are browned, about 30 minutes.

- Heat a large pot of salted water to a boil, drop in pasta. Cook pasta to just shy of al dente.
- Heat sauce pot with butter over medium heat, whisk in flour and cook for 1 minute, whisk in stock then milk, allow the sauce to thicken, and season with salt, pepper and nutmeg. Stir in cheeses in a figure eight motion. Stir in Dijon and ham and remove the sauce from heat. Drain pasta and combine with sauce.

- Preheat oven to 350 degrees F.
- Boil pasta in boiling salted water until very al dente?about 3 minutes less than the box instructions (it will finish in the oven).
- Render pancetta in a large oven-safe pan or French braiser over medium heat until still chewy and not quite crispy, about 20 minutes (it will finish crisping in the oven). Remove pancetta and drain all but 1 tablespoon rendered fat. Add butter, melt and then add flour to make roux. Whisk until smooth, then cook until blonde in color, 2 to 3 minutes. Add garlic, Dijon and hot sauce. Whisking vigorously, slowly add milk. Bring to simmer, whisking constantly, then cook, whisking occasionally, about 5 minutes.
- Add fontina, Gruyere, Havarti and blue cheese and season with salt and pepper. Mix in pasta until fully coated. Cover entire top with pancetta and bake until bubbly and gooey, 10 to 15 minutes. Sprinkle with chives and serve immediately.
- Unbaked Gourmet Mac & Cheese can be made ahead of time and stored in the fridge. Bring to room temperature before baking, and add on another 10 minutes in the oven.
CRAFTIER THAN KRAFT MACARONI AND CHEESE
This doctored up version of boxed mac and cheese is quick and easy, but good enough to pass off as home-made. RECIPE CORRECTION SUBMITTED TO CORRECT TYPO ON THE MILK. :)

- Boil salted water and cook the macaroni.
- In a microwaveble bowl, add cream cheese and milk.
- Microwave the cream cheese and milk for about 20 or 30 seconds then stir well so that the cream cheese is melted.
- Drain macaroni and put it back in the pot.
- Add the powder cheese from the box, melted cream cheese/milk combination, butter, Velveeta and cheddar cheese.
- Add seasoning salt, parsley and garlic powder (if you choose to use it).
- Cook over medium heat until all cheese is melted (add small amounts of milk as needed to keep the consitency you like).
- Sprinkle with paprika and serve -- OR top with more shredded Cheddar and bake at 350 degrees for about 5-7 minutes, then sprinkle with paprika before serving.

- Drain and place back into boiling pot.
- Leave burner on low-med.
- Do not rinse.
- Add olive oil and salt to noodles and stir to cover noodles.
- Add carrots and broccoli and stir.

- Serve.
