MIDDLE EASTERN-INSPIRED HERB AND GARLIC CHICKEN



Middle Eastern-Inspired Herb and Garlic Chicken image

This recipe was inspired by the Middle Eastern dried seasoning mix called za'atar, a combination of herbs (usually thyme, oregano and marjoram), sesame seeds and sumac, often spiked with salt. Here, fresh herbs are substituted for the dried, which, along with fresh parsley and mint and plenty of lemon and garlic, are used to marinated boneless chicken thighs. If you can't find sumac, just leave it out. It does add a nice tang and vibrant color, but the dish will work without it. Optimum marinating time here is 8 hours. But feel free to leave it for as little as 15 minutes or as long as 24 hours. If you would rather use white meat, substitute boneless skinless breasts but reduce the cooking time by a few minutes.

6 boneless skinless chicken thighs (about 1 3/4 pounds)
6 garlic cloves, grated on a Microplane or minced
Juice and zest of 2 lemons
3 tablespoons extra-virgin olive oil, more for serving
2 tablespoons minced fresh parsley, more for serving
2 tablespoons minced fresh mint
1 tablespoon minced fresh thyme
1 tablespoon minced fresh oregano or marjoram
1 1/2 teaspoons kosher salt, more as needed
1 tablespoon sesame seeds, more for garnish (optional)
3/4 teaspoon sumac, more for garnish (optional)
2/3 cup plain Greek yogurt, preferably whole milk yogurt
1/4 teaspoon ground black pepper

Steps:

  • Combine chicken with all but 1 teaspoon of the grated garlic (save that teaspoon for the yogurt sauce), the zest and juice of 1 lemon, oil, parsley, mint, thyme, oregano, 1 1/2 teaspoons salt, and the sesame seeds and sumac, if using. Cover and marinate for 15 to 30 minutes at room temperature; you can refrigerate it for up to 24 hours.
  • Heat grill or broiler. If grilling, cook chicken over high heat until charred in spots, 4 to 7 minutes. Flip pieces and continue grilling until just cooked through, another 4 to 7 minutes. If broiling, arrange a rack 3 to 4 inches from flame. Line a rimmed baking sheet with foil and spread chicken out in a single layer. Broil chicken, turning halfway through cooking, until well colored and charred in spots, 4 to 7 minutes per side. Be careful that it doesn't burn.
  • While chicken cooks, place yogurt in a small bowl. Stir in the reserved grated garlic and lemon zest and season to taste with salt. Serve the chicken drizzled with olive oil, remaining lemon juice to taste, black pepper, parsley and sesame seeds and sumac, if using, with the yogurt alongside for dipping.

These healthy garlic lemon chicken bites are the easiest weeknight meal you'll ever make! Tender chunks of chicken breast are tossed in a flavorful mixture of flour, Italian seasoning, salt, garlic powder, and lemon zest before being pan seared. The finishing touch is a squeeze of lemon, fresh garlic and light butter. After simmering for just a couple of minutes, these chicken bites are ready for serving alongside your favorite side dishes, like over creamy mashed potatoes and with a vegetable. Add this easy recipe to your rotation, made with lots of pantry staples and family-friendly, too.

2 lbs chicken breast (chopped into bite-sized chunks)
1/4 cup all-purpose flour
1 tbsp garlic powder
2 tsp Italian seasoning
1 tsp kosher salt
1 lemon (zested and juiced)
1/4 cup light butter (used: I Can't Believe It's Not Butter (Light))
3 cloves garlic (minced)

Steps:

  • Cut the chicken breast into bite-sized chunks.
  • Zest the lemon.
  • Add the flour, garlic powder, Italian seasoning, kosher salt, and lemon zest to a bowl.
  • Stir to combine the ingredients.
  • Toss the chicken chunks in the flour mixture to coat the chicken evenly.
  • Preheat the skillet over medium high heat.
  • Add olive oil spray to the pan.
  • Working in 2 batches, add half of the chicken to the skillet and cook for a few minutes per side.
  • Cook the chicken until the outside is golden brown, and the inside is cooked through (temperature should be 165F internally). Add more olive oil spray on top of the chicken, and again as needed.
  • Total cook time for the chicken should be about 5-7 minutes, depending on the thickness of the chicken pieces.
  • Remove the first batch of cooked chicken from the skillet, and repeat the cooking process with the remaining chicken.
  • Mince the garlic, and juice the lemon.
  • Remove the second batch of cooked chicken from the skillet.
  • Wipe the skillet clean with a wet towel if there are burnt bits in the pan.
  • Lower the heat under the skillet to medium low.
  • Add the cooked chicken chunks back to the pan, and add the minced garlic, juice of the lemon, and the light butter.
  • Toss the chicken with the garlic, lemon and butter in the skillet.
  • Cook the sauce and the chicken for another couple of minutes or until the flavors combine.
  • Serve immediately.

3 1/2 pound whole chicken, preferably organic
Kosher salt
Freshly ground black pepper
3 to 4 garlic cloves, lightly smashed
1 lemon
1 bay leaf
5 sprigs fresh thyme
Olive oil
1 slice sourdough, cut 3/4-inch thick (day old bread is perfect!)
Maldon salt
1 cup creme fraiche
1 lemon, zested and juiced
1 tablespoon shallots, grated on a fine zester
1 teaspoon Aleppo pepper

Steps:

  • The day before you plan to cook the chicken, season it well inside and out with salt and pepper. Stuff the cavity of the chicken with the garlic, 1 of the lemons, the bay leaf and thyme. Refrigerate.
  • (The bird can be trussed with butcher twine if you are so inclined, but it is not necessary.)
  • On the day/night you plan to cook the bird, take the chicken out of the refrigerator 30 minutes before you plan to roast it. Preheat the oven to 425 to 450 degrees.
  • In a pan large enough to accommodate the chicken, oil the pan lightly with olive oil, place the piece of sourdough in the center of the pan and then put the chicken on top of the bread.
  • Drizzle the bird with olive oil or brush with butter (we use olive oil at the Grill).
  • Place the pan in the oven and roast for 40 to 50 minutes, basting it every 12 to 15 minutes with the fat and drippings that render from the bird.
  • White the chicken roasts, assemble the glaze by combining all of the ingredients and whisking them together.
  • When the chicken is almost done (the juices are running pink and/or the legs are beginning to wiggle a bit when you give them a shake), take a pastry brush and slather on a bit of the creme fraiche glaze. The glaze will begin to caramelize. Brush on another layer and let this last glazing caramelize.
  • At this point the chicken should be cooked through and nicely golden brown. The sourdough underneath the chicken will be nicely browned and crisped on the side in contact with the pan, and moist and juicy on the side in contact with the chicken. Let the chicken rest for 10 minutes before cutting it into serving pieces. Cut the sourdough into 2 to 4 pieces and serve with the chicken.
  • Garnish with lemon wedges and sprinkle it with Maldon salt.
  • (Alternatively, you can roast the chicken almost entirely through. Let it rest, split it in half and then glaze it with the creme fraiche under the broiler, brushing with the creme fraiche until you achieve golden brown, crackling skin.

  • Place the breaded chicken onto a baking sheet and season with salt and pepper.
  • Bake 20 minutes until golden brown and cooked through.
  • Mix together soy sauce, honey, garlic, hoisin sauce, sriracha and grated ginger in a saucepan and bring to boil, remove from heat.
  • Toss chicken bites in the sauce until thoroughly coated.
  • Serve immediately with chopped spring onion and sesame seeds.

Steps:

  • In a shallow dish or bowl, mix together the egg and juice of 1/2 lemon. In another shallow dish or bowl mix together the flour, garlic powder and paprika. Dip chicken breasts in egg mixture, then flour mixture.
  • Heat butter or margarine in a large skillet over medium heat. Add chicken breasts and cook until golden on each side.
  • In a medium bowl, mix together broth and juice of 1 lemon, and pour mixture over chicken in skillet. Reduce heat to medium low and let simmer for about 8 minutes. Place on serving platter, and garnish with fresh lemon slices and parsley sprigs.
