GARLIC SHRIMP & SPINACH ONE-PAN PASTA

Steps:
- Heat light olive oil in a large skillet over medium-high heat.
- Saute garlic until fragrant, about 1 minute, stirring often.
- Add shrimp and saute with the garlic until cooked through, about 2-3 minutes.
- Remove garlic and shrimp from pan with slotted spoon.
- Add penne, chicken broth, white wine, water, salt and pepper to the pan and bring to a boil.
- Reduce heat to medium and cook the pasta, stirring occasionally.
- When the liquid has reduced by about half, add the shrimp and garlic back to the pan and stir to combine with the pasta.
- Cook for another 2-3 minutes, until the liquid has thickened slightly.
- Add the spinach leaves and stir into the pasta.
- Remove from the heat and serve straight from the pan!
- Garnish with grated Parmesan, fresh chopped parsley, and lemon wedges, if desired.
SHRIMP AND SPINACH PASTA

- Heat the olive oil in a large pan over medium-high heat. Bring a pot of salted water to a boil.
- Cook the pasta according to package directions.
- While the pasta is cooking, add the shrimp to the pan and season with salt and pepper. Cook for 3-5 minutes or until shrimp is pink and opaque.
- Add the garlic to the pan and cook for 30 seconds.
- Add the chicken broth and spinach to the pan. Cook for 3-4 minutes or until spinach is wilted.
- Drain the pasta and add it to the pan with the shrimp. Add the butter, lemon juice, cherry tomatoes, and parsley, then toss to coat.
- Season with salt and pepper to taste, then serve.

- Thaw and pat dry shrimp, set aside to bring to room temperature.
- Boil water for pasta.
- Meanwhile, prepare garlic by slicing longways in slivers, leaving the garlic quite large. Sometimes, I only cut the garlic cloves in half and leave them in large pieces. Sometimes, I chop them finely. It depends on my mood!
- Finely chop onion.
- In a large skillet, add margarine/butter and Olive Oil and heat through on medium.
- Add onion and garlic.
- Add pasta to boiling water.
- Sautee garlic and onion until onions becomes transparent but do not burn the garlic! Add the onion first if you are afraid to burn the garlic. Burning it will cause it to taste bitter.
- Add shrimp, fresh ground pepper, and salt to taste.
- Once shrimp begin to curl up a little, add spinach. The spinach will be wilted in the pan when finished.
- By this time, your pasta should be ready for draining.
- Drain pasta and add to your shrimp and spinach mix still in the pan.
- Toss thoroughly and plate.
- Feel free to add chopped red or yellow pepper to this recipe. Baby scallops are also very tasty added to it as well.

GARLIC SPINACH SPAGHETTI

- Cook the pasta in salted boiling water according to the package instructions. Drain, reserving 2/3 cup of the pasta water, then set aside.
- In a large skillet, melt the butter over medium heat. Add the garlic and crushed red pepper flakes and cook, stirring occasionally, for 2 minutes.
- Add about one-fourth of the cooked pasta to the pan, followed by one-fourth of the spinach, one-fourth of the Parmesan, one-fourth of the lemon juice and one-fourth of the lemon zest, stirring all the time until the spinach has wilted, about 1 minute. Continue this process of adding the ingredients in quarters, with additions of pasta water as needed if the mixture becomes too dry, until the pasta, spinach, Parmesan, lemon juice and lemon zest have all been added.
- Sprinkle over more Parmesan and season with freshly cracked black pepper. Toss until everything is well coated. Taste and adjust the seasonings, as needed.

- Cook pasta in a large pot of boiling water with vegetable oil until al dente.
- Meanwhile, place the shrimp in boiling salted water for 3 to 5 minutes, just until they turn pink. Cooking time will depend on the size of the shrimp. Remove the tails, and place in a bowl of warm water.
- In a microwave safe bowl, mix butter or margarine and minced garlic. Microwave on high for 45 seconds, or until melted. Stir.
- Drain pasta, and transfer to a serving dish. Toss with garlic butter and shrimp. Sprinkle with grated Parmesan cheese. Serve warm.

- In a small bowl add shrimp, 2 cloves of minced garlic, lemon zest, 1/2 T of oil, salt and pepper. Mix all together, and set aside to marinate for 15 minutes.
- Bring a pot of water to a boil, add tomatoes. Boil for 2 minutes, then remove from water, run under cold water, until tomatoes are cooled, then peel the skin and chop. Set aside.
- In a skillet, heat 1 T oil, Add in Shrimp, cook only 3-5 minutes, until shrimp is pink. Remove and set aside.
- In the skillet, there will be residue from the shrimp. Heat back up, add the other 2 cloves of minced garlic, and pepper flakes, once there is an aromatic smell, add the tomatoes, Italian spice, and oregano. Turn the heat down to Med Low, and cook the tomatoes slowly for about 10-15 minutes. Once they have broken down a bit, add the spinach on top of the tomatoes, and cover with a lid. Let it cook for 5-10 minutes on Medium Low. Once the spinach has wilted, mix into the tomatoes, add the lemon juice,and a little salt. Serve over your pasta, and add shrimp. A sprinkle of parm is good to add on top.
