The best and most outrageous monster cookie recipe! Your favorite oatmeal chocolate chip monster cookies are made healthy and gluten free!

Number Of Ingredients 12

1/2 cup unsalted butter, room temperature or slightly softened and melted in the microwave
1/2 cup coconut sugar
1 egg
1 teaspoon vanilla extract
1 cup blanched almond flour
1 cup gluten free old fashioned rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1/3 cup chocolate chips
1/2 cup M&M candies
1/2 cup chopped pecans
flakey finishing salt (optional)

Steps:

  • Use an electric mixer or handheld whisk to cream together the softened butter, coconut sugar, egg, and vanilla in a large bowl.
  • Add the almond flour, oats, baking soda, and salt.
  • Mix again until combined.
  • Add the chocolate chips, chopped pecans and M&Ms to the bowl. Save a few M&Ms to press into the tops of the cookies.
  • Fold everything together and then place the cookie dough into the fridge to chill for 30 minutes.
  • Preheat oven to 350F.
  • Line a baking sheet with parchment paper and use a cookie scooper to scoop out 8 cookie dough balls onto your piece of parchment paper.
  • Press the reserved M&Ms into the tops of each cookie.
  • Bake for 10-12 minutes until the edges are golden brown.
  • Allow the cookies to cool on the baking sheet for 10 - 15 minutes before you try to transfer them to a cooling rack.
  • Sprinkle with flakey salt and enjoy!

Incredible healthy monster cookies packed with peanut butter flavor, chocolate chips, coconut, chocolate candy pieces and nuts. These flourless monster cookies are a wholesome take on a childhood classic you know and love! Easy to make and great for customizing.

Wet ingredients:
1 cup natural creamy or chunky peanut butter (only peanuts + salt)
2 tablespoon melted butter or ghee (melted coconut oil will also work)
2/3 cup packed brown sugar or coconut sugar (can also reduce to 1/2 cup with good results!)
2 eggs
1 teaspoon vanilla extract
Dry ingredients:
1 cup gluten free old fashioned rolled oats
1/2 teaspoon baking soda
Optional: ½ teaspoon cinnamon
For the mix ins:
¼ cup M&M's, plus ¼ cup more for topping cookies
¼ cup dark chocolate chips
¼ cup chopped pecans or walnuts
¼ cup unsweetened shredded coconut (not the big flakes)

Steps:

  • Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper.
  • In a large bowl mix together the wet ingredients until smooth: peanut butter, melted butter/ghee, brown sugar, eggs and vanilla extract.
  • Next stir in the oats, baking soda and cinnamon. Finally add in all of your mix-ins: M&Ms, dark chocolate chips, nuts and shredded coconut.
  • Use a large cookie scoop to scoop rounded balls of dough onto prepared baking sheet, leaving 2 inches of space between them to spread. Add a few M&Ms on top of each dough ball. If you like fat cookies, do not flatten the dough. If you like thinner cookies, use your hands to gently flatten the tops of the dough before baking.
  • Bake for 10-13 minutes until edges are barely golden brown. Allow cookies to sit on cookie sheet for 5-10 minutes before transferring to a wire rack to finish cooling. This is an important step. Enjoy!

  • In a separate, large mixing bowl, whisk together the melted butter, brown sugar, and vanilla until smooth. Add the eggs and whisk again until smooth. Add the peanunt butter and whisk until smooth and combined. Add the dry ingredients to the wet, mixing with a rubber spatula until combined. Fold in the chocolate chips, chocolate candies, and chopped peanuts and mix until incorporated.
  • Scoop the cookie dough into 1 1/2 tablespoon-sized dough balls, and place 2 inches apart on the prepared baking sheet. Sprinkle with flaky sea salt. Bake for 12-14 minutes, or until edges are slightly golden and tops are set. (It's best to slightly underbake these!). Let cool for a few minutes on the baking sheet, then transfer to a cooling rack to cool the rest of the way. Sprinkle with more flaky sea salt, if desired.

Remove cookies from cookie sheets, and cool on wire racks.
