HEALTHY OLIVE GARDEN ZUPPA TOSCANA (DAIRY FREE, VEGGIE-PACKED, OPTIONALLY VEGAN)

- In a large heavy-bottomed pot, heat 2 tablespoons of olive oil over medium high. Add sausage, breaking it apart into small pieces with a wooden spoon, and cook until brown, about 10 minutes. Transfer to a plate; don't wash out pot.
- If you're vegan, start here: add 1 tablespoon of additional olive oil to the pot. Add the potatoes, onion, cauliflower, and sea salt. Cook on medium-high until just brown, about 5-7 minutes.
- Add the coconut milk, vegetable broth, and thyme, scraping the brown bits off the bottom of the pan (these help make the soup delicious!). Bring to boil, then reduce heat to simmer. Simmer for 10 minutes, until the potatoes are easily pierced with a fork.
- Add the garlic (leaving it until this point makes it far more immune-boosting, which you can read about more in my cookbook), kale, and sausage (if using-if omitting, add those red pepper flakes now). Cook until the kale is bright green and wilted, about 3 minutes. Serve warm. Serves 4; can be kept in the fridge for 4-5 days.
HEALTHIER ZUPPA TOSCANA (OLIVE GARDEN CLONE)
An attempt to recreate a healthier version of an Olive Garden favorite. If you use sausage with fennel seed, you can omit the aniseed.

- In a large stock pot, cook the bacon until somewhat done.
- Add the onion and saute until almost caramelized (golden color).
- Add chicken stock and water, then bring to a light boil and add potatoes.
- Cook Italian sausage (with casings removed) separately in a skillet.
- When nearly done add garlic to the pan and cook until sausage is done and the consistency of ground beef.
- Add mixture to the stock.
- When the potatoes have softened, gently press some of them to the side of the pan to thicken the soup; leaving some whole.
- Add fat free half and half, spinach, salt, aniseed, and peppers.

- Add olive oil to a large pot over medium heat. Saute until softened. Add garlic, Italian seasoning, and red pepper flakes and saute another minute, taking care not to burn the garlic. Add the potatoes and vegetable stock. Bring to a simmer and cook until potatoes are tender, about 15 minutes.
- While the potatoes cook, brown the sausages, if using. Cut the sausages into bite sized pieces and saute in the remaining tablespoon of oil in a frying pan until browned, about 5 minutes. Set aside.
- Once the potatoes are tender, add the kale to the pot and stir in until wilted. It will look like a lot of kale at first but really cooks down. Stir in the coconut milk and whisk in the flour until there are no clumps. Add the sausages to the soup, or drain the chickpeas and add them. Simmer all the ingredients together just until they are all warmed through. Taste and adjust seasonings if desired. Serve right away and sprinkle with Parmesan or nutritional yeast.

- Add the olive oil to a large stockpot or dutch oven set over medium heat. When hot, add in the onion and cook for about 2 to 3 minutes, until it starts to soften. Add in the garlic and fennel seeds and cook for 30 seconds, until fragrant.
- Stir in the potatoes, broth, oregano, thyme, salt, pepper and red pepper flakes. Increase the heat and bring just barely to a boil.

- Heat soup pot over medium heat (I use my Dutch Oven), add the oil and sausages. Fry for 4-5 minutes until browned and fully cooked. Break in half with wooden spoon while cooking for smaller bites if you like. Transfer to bowl, set aside.
- To the same pot add onions. Saute for 5 minutes. Stir in garlic, thyme, fennel, and red pepper flakes. until fragrant 30 seconds or so.
- Add water, vegetable bouillon, potatoes and nutritional yeast, Bring to a boil over high heat. Cover, reduce to a good simmer for 8 minutes or until potatoes are just fork tender.
