I was inspired by another recipe that I changed to add more vegetables, ginger, and sesame oil. Add/remove veggies how you see fit.

1 (8 ounce) package linguine
⅓ cup low-sodium soy sauce
2 tablespoons rice vinegar
2 teaspoons cornstarch
1 teaspoon white sugar
½ teaspoon sesame oil
2 tablespoons canola oil
2 cups snap peas
1 small sweet onion, chopped
1 (12 ounce) pork tenderloin, cut into thin strips
1 (8 ounce) package sliced white mushrooms
1 red bell pepper, chopped
1 clove garlic, chopped
½ teaspoon chopped fresh ginger, or to taste
2 cloves garlic, chopped
3 green onions, sliced

Steps:

  • Bring a large pot of lightly salted water to a boil; cook the linguine at a boil until tender yet firm to the bite, 8 to 9 minutes; drain.
  • Whisk soy sauce, vinegar, cornstarch, sugar, and sesame oil together in a small bowl.
  • Heat canola oil in a large skillet over medium-high heat; cook and stir snap peas and onion in the hot oil until onion is softened, about 2 minutes. Add pork, mushrooms, red bell pepper, 1 clove garlic, and ginger; cook until pork is no longer pink, about 2 minutes.
  • Mix 2 cloves garlic into the pork mixture; cook for 1 minute. Pour soy sauce mixture over pork mixture; cook and stir until sauce thickens, about 1 minute. Remove skillet from heat. Add linguine to the mixture; toss to coat. Sprinkle with green onions.

1 tablespoon sesame seeds
1 tablespoon grated fresh ginger
4 cloves garlic, minced
1/3 cup reduced-sodium chicken broth
3 tablespoons reduced-sodium soy sauce
1 tablespoon rice vinegar
1 1/2 teaspoons cornstarch
1 teaspoon sugar
1/2 teaspoon Asian chili sauce (Sriracha sauce)
4 ounces dried Chinese egg noodles (lo mein noodles)
Nonstick cooking spray
1 cup sliced celery (2 stalks)
1 medium red sweet pepper, seeded and cut into thin bite-size strips
3 cups coarsely shredded bok choy or napa cabbage
1 (8-ounce) can sliced bamboo shoots, rinsed and drained
6 tablespoons thinly sliced green onions
2 teaspoons toasted sesame oil

Steps:

  • Trim fat from meat. Cut meat into thin bite-size strips. In a medium bowl combine meat, sesame seeds, ginger, and garlic; set aside. For sauce, in a small bowl combine broth, soy sauce, vinegar, cornstarch, sugar, and chili sauce; set aside. Cook noodles in boiling, lightly salted water according to package directions;* drain. Rinse with cold water; drain again. Coat a large skillet or wok with cooking spray; heat skillet over medium-high heat. Add celery and sweet pepper; cook and stir for 4 minutes. Add bok choy, bamboo shoots, and green onions; cook and stir for 2 minutes more. Remove vegetables from skillet. Add sesame oil to skillet; add meat mixture. Cook and stir for 2 to 3 minutes or until meat is slightly pink in center. Push from center of skillet. Stir sauce; add to center of skillet. Cook and stir until thickened and bubbly. Add cooked noodles and vegetables; stir all ingredients together to coat with sauce. Cook and stir about 2 minutes or until heated through.

2 cups fresh sugar snap pea pods
1 cup baby-cut carrots, cut lengthwise into 1/4-inch sticks
1/2 package (9-oz size) refrigerated linguine, cut into 2-inch pieces
1/3 cup Progresso™ chicken broth (from 32-oz carton)
1 tablespoon soy sauce
2 teaspoons cornstarch
1 teaspoon sugar
2 teaspoons finely chopped gingerroot
2 to 4 cloves garlic, finely chopped
2 teaspoons vegetable oil
1/2 cup thinly sliced red onion
Toasted sesame seed*, if desired

Steps:

  • Trim fat from pork. Cut pork with grain into 2x1-inch strips; cut strips across grain into 1/8-inch slices (pork is easier to cut if partially frozen, about 1 1/2 hours). Remove strings from pea pods.
  • In 3-quart saucepan, heat 2 quarts water to boiling. Add pea pods, carrots and linguine; heat to boiling. Boil 2 to 3 minutes or just until linguine is tender; drain.
  • In small bowl, mix broth, soy sauce, cornstarch, sugar, gingerroot and garlic.
  • In 12-inch nonstick skillet or wok, heat oil over medium-high heat. Add pork and onion; stir-fry about 2 minutes or until pork is no longer pink. Stir broth mixture; stir into pork mixture. Stir in pea pods, carrots and linguine. Cook 2 minutes, stirring occasionally. Sprinkle with sesame seed.

My family loves this hearty main dish. I get requests for it often. It's very quick and easy to prepare, great for when you're in a hurry. You can buy a couple of the ingredients already prepared in the produce section of the grocery store, if you like.

3 tablespoons olive oil
8 ounces spaghetti, cooked al dente and drained
1 lb pork tenderloin, sliced thinly into strips
1 medium onion, sliced in wedges
2 garlic cloves, minced
1/8 teaspoon crushed red pepper flakes (or more to taste)
2 cups shredded cabbage (see note below)
2 stalks bok choy, sliced (or celery ribs)
1 cup sliced carrot (see note below)
2 sweet bell peppers, thinly sliced (red-orange-or yellow)
1/3 cup soy sauce

Steps:

  • ***NOTE:I like to buy the coleslaw mix in the produce section.
  • Already shredded--a real time saver.
  • ***NOTE:If I'm in a hurry, I also buy the carrots already shredded in the produce section, and use instead of sliced.
  • Heat 2 tbsp olive oil in a large skillet or wok.
  • Sauté pork, onion, garlic and pepper flakes until meat is no longer pink.
  • Remove this mixture from pan and keep warm.
  • Add remaining tbsp of oil (or more as needed) to pan and sauté cabbage, bok choy or celery, carrots and peppers until crisp tender.
  • Add spaghetti to cooked veggies in the pan.
  • Stir in soy sauce and add pork mixture back to the pan.
  • Cook for 5 minutes or until heated through.
  • (At this step, I like to get the noodles nice and dark, by cooking a bit longer. You decide).

Add pepper flakes if desired; set aside., Stir-fry pork in oil in a large skillet or wok for 4-6 minutes or until browned. Remove with a slotted spoon; keep warm. Stir-fry onion for 2 minutes. Add broccoli mixture; stir-fry 4-5 minutes longer or until vegetables are crisp-tender., Stir cornstarch mixture and add to the pan. Stir in peas. Bring to a boil; cook and stir for 3-4 minutes or until thickened. Drain spaghetti. Add pork and spaghetti to the pan; heat through.

2 eggs

8 ounces whole wheat spaghetti
1 (16 ounce) package frozen stir fry vegetables

Steps:

  • Prepare pasta per package directions.
  • Heat wok or skillet on medium high heat. Add olive oil and garlic, cook for 1 minute. Add chicken and cook for 3 minutes stirring continuously.
  • Add 3 tbsp soy sauce, sesame oil, and vegetables and cook until veggies are tender.
  • Push mixture aside in pan and add eggs. let cook for 2 minutes and scramble eggs until done. Add to chicken and veggies.
  • Add cooked pasta, corn starch, and remaining soy sauce and stir fry for 4 minutes until fully heated and sauce thickens.
